Jaune or brillant aux reflets verts. Le nez exprime des arômes fermentaires agrumiques (citron,
citron vert) fondu dans une dimension minérale et fraîche. En se réchauffant, les arômes
typiques de sauvignon (bourgeon de cassis) apparaissent. En bouche, l’attaque est fraîche
évoluant vers une plus grande «chaleur». L’ensemble est bien équilibré entre fraîcheur et fruité.
Arômes fruités et floraux mêlés, frais et vivace, ce vin reflète la générosité d’un terroir
d’exception.

The color is golden yellow with green reflections. The nose expresses fermented and citrus
aromas (lemon and lime) blended into a fresh and mineral dimension. At tasting, the typical
Sauvignon aromas (blackcurrant bud) go to the fore. Fruity aromas with embroiled flowers,
fresh and lively; this wine reflects the generosity of an exceptional vineyard.

Vinification et élevage 8 mois en fûts de chênes sur lies fines, avec batonnage régulier.
Jaune moyennement brillant tirant sur l’or. Le nez est riche, explosif, concentré, rappelant les
fruits exotiques (ananas, goyave), la pâte de fruits, les fruits cuits. L’attaque en bouche est
ronde sur un développement un peu tannique. Un vin qui présente beaucoup de puissance,
une belle réunion d’arômes et de matière.

Vinification and aging for 8 months in oak barrels with frequent stirring of the lees.
The color is yellow, fairly bright and close to gold. The nose is rich, explosive, concentrated,
bringing back to mind exotic fruits (pineapple and guava), fruit pastry and cooked fruits. The
taste is round. A truly intense wine and a beautiful blend of aroma and character. Medium-
to full-bodied, this Chardonnay has ripe fruit flavors, crisp acid in the mouth and a rich,
lingering finish.

Très belle robe rose intense, pastel, limpide, aux nuances de pétales de rose. Œil vif et attirant. Le nez se
développe immédiatement sur des arômes fermentaires de pivoine, de fruits rouges (fraise, cassis) tirant sur
la grenadine et le bonbon Anglais. L’olfaction est plaisante, agréable. L’attaque, grasse, riche et ronde se
poursuit avec un bel équilibre entre le caractère alcooleux du vin et son niveau de «tanicité» agréable.
L’ensemble est harmonieux. Un vin rosé digne de ce qui est attendu pour l’été, l’apéritif en extérieur et les
mets de viandes rosées (tagine).
Explosion d’arômes de fruits rouges (fraise – framboise). Une forte personnalité apportée par l’assemblage
original des cépages. Un vin savoureux, croquant, rafraîchissant.

A very beautiful robe of intense pink. The color is clear, pastel with rose-petal nuances. The wine is
attractive. Its nose immediately develops into fermented aromas of (peony), red fruits (strawberry and
blackcurrant) and draws closer to grenadine and English sugar candy. The smell is pleasant and agreeable.
The taste rich and round turning into a nice balance between the alcoholic character of that wine and its
agreeable level of acidity. A worthy summer rose wine that could be paired with an outdoor aperitif and
pinkish meat dishes (tagine).
Its strong personality - outcome of a blend of grape variety- renders it palatable, exquisite and refreshing.

Robe rouge cardinal, aux nuances violines. Nez riche variétal tirant sur des arômes de
conifères (pin, eucalyptus), le goudron, le brûlé, l’encre (atramentaire), les épices. Très
beau vin de caractère, intense, complexe, aux fruits bien mûris, charnu aux tanins
tendres et soyeux, il offre un immense plaisir gustatif. La bouche apparaît
immédiatement tannique puis laisse se développer des arômes fruités (cassis), floraux
(bleuets) et épicés (réglisse, pâtes d’amande) révélant sa complexité et son éblouissant
potentiel aromatique..

Cardinal red with dark purple nuances. The nose is rich, close to conifer aromas
(eucalyptus and pine), burnt scents, ink (atramentaire) and spices. A fine wine that
possesses an intense and complex character. Its fruits are well-ripened and pulpy with
tender and silky tannins. It offers an intense tasting experience. The taste is tannic then
develops into fruity aromas (blackcurrant) and later into flowery (blueberry) and spicy
aromas (licorice and almond paste). They all unveil the complexity and immense
aromatic potential of this wine.

Rouge rubis profond, épais. Un beau nez complexe, boisé, marqué par la vanille, les
épices, la réglisse. Beaucoup de finesse. La bouche est suave, bien équilibrée entre
l’alcool et les tanins. Le caractère boisé très présent au nez s’estompe. L’ensemble est
particulièrement bien structuré. Beaucoup de longueur. Une matière noble. L’élevage se
fait en fûts de chêne d’un an. Le vin y séjourne pendant quelques mois où les arômes du
bois s’associent à ceux du vin pour créer le bouquet final.

A profound and thick ruby red wine. Has a fine, complex nose, vanilla flavor, along with
a touch of spices and licorice. Its supple melted tannins and its subtle vanilla bouquet
give it a balanced and lengthy aftertaste. The whole is well-structured and very long. This
wine possesses a noble character. Les Emirs is aged in one-year-old oak barrel for 12
months during which the aromas of the oak blend with those of the wine to create the
final bouquet.

Robe rouge rubis intense, profond. Le nez de garrigue, de conifères, d’épices, de romarin,
de gingembre, de menthol (eucalyptus) confirme le très beau potentiel aromatique du vin.
La bouche est souple (tanins bien fondus), boisée et puissante. La finale est dense et
longue. Un vin assurément de grande personnalité, nécessitant une longue garde pour se
faire. L’élevage comporte un long vieillissement de 18 mois dans des fûts de chêne
français, suivi d’un stockage d’une année en bouteilles avant sa mise sur le marché.

An intense and profound deep ruby-red robe. A nose of scrubland, conifers, spices,
rosemary, ginger and menthol (eucalyptus), confirm the very beautiful aromatic potential
of this wine. The palate is delighted to taste the harmony and generosity of this rich wine
whose tannins are round and whose bouquet is endowed with a remarkable length. The
taste is smooth (well-melted round tannins), with rich remarkable aftertaste. It is surely a
refined wine of great personality that needs a lot of time to form itself. Chateau St Thomas
is aged 18 months in French oak barrels. It is then bottled and stocked for a one-year period
before being released.

A l’œil, une couleur rouge évoluée. Le nez de type «rancio» s’affiche sur un registre d’épices et
de fruits concentrés: le gingembre, le pruneau, la noix, l’écorce de citron… Elevage de quelques
mois en fûts de chêne. Le vin acquiert le complément d’arômes nécessaire à son anoblissement:
cacao, café, notes de torréfaction viennent compléter les arômes de fruits macérés à l’alcool
formant un bouquet riche et subtil. D’une exceptionnelle longueur en bouche, ce vin exprime une
extraordinaire suavité. Evidement c’est le compagnon idéal des chocolats et des desserts. A
réserver pour les occasions de fête.

Délice (A Natural Sweet Wine) 2005 – Grape variety: Grenache

A wine of an evolved red color. The nose is of a “rancio” type, distinguishing itself by a variety of
spices and concentrated fruits: ginger, prune, nuts and lemon peel…This wine undergoes an aging
period of a few months in oak barrels. It then acquires the aromas necessary for its ennoblement.
Cocoa, coffee and touches of roasting, complement the alcohol-soaked fruit aromas and form a
rich and subtle bouquet. This sweet wine has a very pleasant and long aftertaste. It is the ideal
chocolate and dessert companion. This wine should be kept for special occasions.

Cépage: Muscat de Hambourg
Très belle couleur rouge évoluée, d’une limpidité cristalline. Le nez, d’un beau «rancio» est
riche, opulent. Les arômes rappellent le pruneau, l’amande, le litchi, l’eau de rose. Un nez
très «exotique» et gourmand. La bouche est onctueuse, soyeuse avec un équilibre
alcool/sucre bien réparti. Le «vin» présente un grand intérêt, d’une part pour son style, sa
catégorie et aussi par sa grande personnalité. Un goût succulent, un parfum d’antan, d’encens
et de pétales de roses évoquant les nuits étoilées du Liban d’autrefois. Ce vin de liqueur
accompagnera à merveille desserts, chocolats et fruits confits. Excellent également comme
apéritif. A boire frais.

Miel du Clos (Wine liquor) 2005 – Grape Variety: Muscat de Hambourg

A beautiful wine with an evolved red color and crystalline clarity. The nose is a rich, opulent
and beautiful “rancio”. The aromas bring back to mind prunes, almonds, litchi and rose-water.
A very exotic and greedy nose. The taste is unctuous and silky with a perfect sugar/alcohol
balance. This wine is outstanding because of its style, category and great personality. It has a
delicious taste and the scent of those sweet long-forgotten times. A scent of incense and rose
petals, calls up the starry nights of ancient Lebanon. This wine liquor will perfectly pair
desserts, chocolates and candied fruits. It is also excellent as an aperitif. Better served cold.
