CHAPTER 1

INTRODUCTION

Bachelor of Technical Teacher Education is a four-year


college course recommended for those who wish to prepare for a
career on their selected major. This course has six major fields
such as (1) Drafting Technology, (2) Food Technology, (3)
Electrical Technology, (4) Electronics Technology, (5)
Automotive Technology and (6) Garment and Fashion Designing.
This course leads to expertise on technological education as
well as other job opportunities especially in industry. BTTE
Major in Food Service Management consists of CHED Mandated
general subjects and also a partner of TESDA Program, while the
focus of the study is to expose the students in a real world
situation especially on food service setting which can improve
their knowledge and skills. The curriculum also includes basic
and advanced baking, quantity cookery, meal management,
bartending, and catering and restaurant management.

Professors believe that the theories learned inside the


classroom combined with on-the Job Training will prove that the
students are the active members of this institution and this
will let them become a globally competitive individual
especially in Food Service Industry.

The Food Service Management as one of the premier major


field of specialization under the Bachelor of Technical Teacher
Education Program includes the application of food science to
the selection, preservation, processing, packaging,
distribution, the use of safe food.
It hones student’s holistic development and understanding
in teaching and learning principles and theories needed in
teaching technical – vocational courses.

It is the teaching and learning on how the educational


process relate to larger historical, social, cultural, and
political processes.

The importance of Food Service Management is to help the


day to day operations of restaurants and related establishments
that serve food and beverages. The service workers help the
establishment as the source of reservation and numbers of
guests.

Food service workers are also increasingly expected to know


about and be able to serve and assist customers in terms of
reservations, events, meeting especially when they are asking
for help.

The trainees should provide clear information and quality


service to those customers both diners and walk-in customers.

Food Service Management students who wish to have a career


in restaurants, food service facilities or food distribution
services needs to undergo On-the Job Training. The trainees are
assigned to Uno Seafood Wharf Palace located at Binondo, Manila.
The food service workers duties and responsibilities are
greeting the guest, assisting the diners and wall-in customers
to their table, serving food and beverages, cleaning and
Sanitizing, table set-up, taking orders, delivering the
order and bill settlement.

For students, an OJT Program provides opportunities to


immerse their specific job applying knowledge and skills learned
as a Food Service Management by performing actual work in the
real setting. The ultimate goal of this training is to expose
students and to have an opportunity to experience working in the
real industry. In addition, it enables the students to enhance
communication skills, personality and behavior when it comes to
facing the real practice.

Through the interaction with other stakeholders, the


trainees aim to boost their confidence, communication skills
quality customer service. Through this training, they will be
prepared for their career.

UNO SEAFOOD WHARF PALACE MISSION

Our mission is to provide good and delightful food with quality


service to our guests and to ensure the satisfaction and
experience once they dine at UNO Seafood Wharf Palace.

PRODUCT SERVICES DESCRIPTION

Uno Seafood Wharf Palace Started last September 23, 2008. A


Chinese Seafood restaurant that is owned and operated by a group
of Filipinos Chinese Entrepreneurs. Uno Seafood Wharf palace
accepts Walk- in and big parties such as Baptismal, Birthday,
Conference and Caterings outside the restaurant. Uno Seafood

Wharf Palace is located at 270 Escolta Street, Calvo Building,


Binondo Manila, Philippines.

Uno Seafood Wharf Palace, being a Chinese Restaurant,


features the traditional royal color schemes (Gold and red) for
the table setting. Also, there are plenty
of rooms/ areas available for private
celebrations such as birthdays and others.
UNO Seafood Wharf Palace two floors with a
capacity of 22 tables (12/ table) on the
first floor and 27 tables on the second
floor.

DINING AREA

In Uno Seafood Wharf palace, you


will find tanks of fresh and live
fishes, and sometimes it is very
amusing just to watch them swim.
