Cucumber Lime Mint Agua Fresca
Agua Fresca’s are refreshing fruit drinks, especially on a' scorchingly hot summer day, sold all over Mexico.
They are cooling, sweet and are great alongside spicy food.
Ingredients:
 1 pound of cucumbers (about 2 good sized cucumbers), ends trimmed, but peel still on, coarsely chopped
 1/2 cup lime juice from fresh limes (from about 1 pound of limes, or 5 to 10 limes, depending on how juicy
they are)
 1/4 cup packed (spearmint) mint leaves (about a large handful), woody stems removed
 ½ cup sugar
 Approximately 1\4 cup of water

Method:
1. Put all the ingredients in a blender and add enough water to fill 3/4 of the blender. Hold the lid on the
blender and puree until smooth.
2. Place a fine mesh sieve over a bowl and pour the puree through it, pressing against the sieve with a rubber
spatula or the back of a spoon to extract as much liquid out as possible.
3. Fill a large pitcher halfway with ice cubes and pour the juice into the pitcher. Serve with sprigs of mint and
slices of lime.

You'll need:
 1 cup butter
 1 ½ cups white sugar
 1 ½ cups brown sugar
 4 eggs
 4 teaspoons vanilla extract
 4 ½ cups all-purpose flour
 2 teaspoons baking soda
 1 teaspoon salt
 5 cups semisweet chocolate chips
 2 cups flaked coconut
 2 cups chopped almonds

Directions:
First, preheat the oven to 190·C, then grease cookie sheets.
Second, in a large bowl, cream together the butter, white sugar and brown sugar until smooth.
Third, beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, baking soda and salt, stir into
the creamed mixture until well blended. Then, stir in the chocolate chips, coconut and almonds. Drop by
rounded spoonful’s onto the prepared cookie sheets.
Finally, place in the preheated oven for 8 to 10 minutes. Allow the cookies to cool on a baking sheet for 5
minutes before removing' to a wire rack to cool completely.
