Renal Diet
1. Create three handouts for a dialysis patient, one handout for each nutrient listed
below (P, K+, Na+). For each nutrient, provide at least 30 foods and include
foods from five groups (animal protein, fruits, vegetables, dairy, and bread/
grains) when possible. But sure to include foods in each range (low, med, high)
of nutrients. Include a serving size and how mgs/serving for each food. Explain
what the nutrient does in the body and why it needs to be controlled in dialysis.
Add color and pictures. Make it attractive and reader friendly.

2. Write a sample diet that would provide 2,600 kcals (within 25), a minimum of 105
grams of protein (50% HBV), 2,000 mg Na+ (cannot exceed), 2,500 mg K+ (cannot
exceed), 1,300 mg P (cannot exceed), and 1,500 ml fluid (fluid is anything liquid at
room temperature). Type up a separate menu showing the nutrient content for each
food item.

3. Analyze your sample diet on ESHA to be sure you’ve met the restrictions. Turn in the
ESHAspreadsheet with your assignment. If a nutrient is not in ESHA (represented by a
dash in the spreadsheet), then look it up in the Food Values book or on the internet and
add it to the separate spreadsheet. The spreadsheet should show the nutrient
composition for the above nutrients (in #2) for each food.
