BUFFETS

COLD ITEMS:
Offer 2 items

Caprese platter: Cherry tomatoes, fresh mozzarella, fresh basil, virgin olive oil, fresh ground
pepper, decoratively arranged on a platter. (Possible add ons: prosciutto, peaches,
watermelon, olives, pine nuts, grilled shrimp, grilled octopus, balsamic reduction, pesto)

Caesar salad: Romaine, house made croutons, fresh grated parmigiano, Caesar
dressing,(possible add ons: Grilled chicken, cherry tomatoes, grilled shrimps, bacon)

Mixed Green salad: Mixed field greens, (any cheese, nut ,fruit combo) Goat cheese, blue
cheese, feta, parmigiano, almonds, walnuts, pecans, pistachio, blackberries, pears,
strawberries, raisins, dried apricot, watermelon. Dressing options: balsamic vinaigrette, lemon
herb vinaigrette, blue cheese, Asian, Caesar)

Greek salad: Mixed greens, peppers, red onions, cherry tomatoes, cucumbers, feta, Kalamata
olives, and lemon herb vinaigrette (add ins: mint, and watermelon)

Garden salad: Mixed greens, peppers, red onions, cherry tomatoes, cucumbers, roasted corn,
and choice of dressing. (NO CHEESE)

Potato salad: always use scallions, grilled corn, celery, red onions. Mixture of sweet potato/and
or regular potatoes. Use dressing of choice: Cajun Mayo, Tartar sauce, or plain mayo.

Cole slaw: Red cabbage, white cabbage, carrots, and slaw dressing. (Possible add ins: peppers,
mangoes, orange, roasted corn, crumble blue cheese, cilantro)

Fruit salad: Diced up watermelon, pineapple, blackberries, strawberries, lychees, fresh mint.
(Any other fruit available is fine)

Fruit Platter: Decorative display of sliced fruits: Melons, pineapples, berries, kiwi, mango etc

Cheese platter: Mixture of soft and hard cheese: Brie, goat, mozzarella, parmigiano, gouda,
swiss, cheddar, boursin, (Garnish with crackers, preserves, nuts, grapes)
HOT ITEMS:

Stations:
Grill station : Shrimp kebabs, chicken breast, ribs

Paella station: Paella pan on the grill. Lobster, shrimp, clams, mussels, chorizo, saffron rice

Pasta station: Pasta, with mushroom sauce, or tomato sauce


Desserts:

Mini pastries: ordered from Le sucriere,

Mini shot glass panna cottas (chocolate or white chocolate)

Mini shot glass with chocolate ganache

Mini shot glass with carrot cake

Mini shot glass brownies

Client supplied birthday or wedding cake

Donut station: Donut wall , with variety of toppings/sauces.
