Learning Outcomes

Demonstrate knowledge of human nutritional needs and the role of nutrition in improving

individual health and the societal economic impact of food choices.

I feel the majority of us through at least one period of our life have fell victim to improper

eating habits. Rather it be due to the convenience of a drive-thru or cost of healthy foods versus

energy-rich, nutrient-poor foods we have all felt the impact on our health by making poor dietary

choices.

Some of us are fortunate enough to be able to correct these behaviors before they

manifest into life altering consequences. However, I have learned this semester that education

level and incomes significantly contribute to food choices and behaviors that ultimately lead to

diet-related diseases.

Relate technological advancements in medicine and food production to the advancement

of the science of human nutrition.

I feel that because of the advancement in food production through technology such as

Genetically Modified Organisms. There has become more of a need for the technological

advancements in medicine resulting in advancements of the science of human nutrition.

Explain the impact that the food industry has on human food choices and the subsequent

relationship to health and disease at the individual, societal, and environmental level.

In the documentary “Supersize Me” that I choose for this assignment. It did an amazing

job of bringing to light the impact the food industry has on society and their ability to have

viable healthy choices available. Unfortunately, it also brought attention to the poor choices we

as a society have been trending towards and the consequences it is having upon our health

individually, and as a society.

Provide examples of past and present nutrient and diet trends in modern society and the

positive and/or negative implications on human health and the earth’s resources.

I feel we have all been guilty of letting current diet trends influence our eating habits.

Whether it be something as simple as “Gluten Free” or “Keto Friendly” diets. There always

seems to be a revolving door of new research on the topic. However, through this course I have

learned that healthy balanced diets are a trend that should never go out of style.

Provide examples of positive and negative interactions of humankind with

microorganisms regarding sickness, health and food production.

An example of a negative interaction might be issues that we consistently see with

produce and foodborne illness relating to how the produce is grown, handled and processed. Or

on the other side the positive effects of advanced medicine like vaccinations which are developed

from those negative microorganisms but resulting in a positive outcome.

Address diet and nutrient issues and concerns for weight control, disease prevention,

physical activity, food availability, and biotechnology.

Make connections between what you studied in this nutrition course with what you’ve

learned in other courses at SLCC or before. Make specific references to your work in this class

and in the other courses. How did what you learn in the other courses enhance what you learned

in nutrition, and vice versa?

I took a SW 2650 Social Welfare Policy a few semesters back and I recognized allot of

the dietary concerns that were discussed in that class as they were in this course as well. Our

society has quite the distance between the haves and the haves not. And I have learned that we

have allot of work as a society to help remedy all epidemics caused as a result of lack of proper

health and nutrition.

Reflect on how you thought about nutrition before you took this course and how you

think about it now that the course is over. Have any of your assumptions or understandings

changed? Why? What assignments/activities/readings were influential in this process? How will

you approach (course topic) differently in the future?

I feel as if this course has done a great job of refreshing many of the good eating habits

that I have learned in the past. Throughout my past, I have tried trendy diets such as the Keto or

South Beach Diets. Yet, this class has reinforced the importance of a healthy balanced diets and

the role in which nutrition plays in our lives.
