BEYOND SUSHI CATERING | LIVE STATION SAMPLE MENU

SUSHI STATION
We will prepare a variety of fresh, colorful vegan sushi for your guests. Our chefs roll the sushi live and keep
the food flowing throughout the event. The sushi will be presented on a beautiful customized cascading
steel display that will be sure to ‘wow’ your guests.

Our vegan sushi rolls are filled with seasonal fruits and vegetables, wrapped with four-grain and black
forbidden rice and topped with tofu, fruit, & vegetable based purées. All sushi is 100% vegan, kosher and
gluten free.

SUSHI SELECTIONS:

CHIC PEA Black rice, roasted eggplant, artichoke and English cucumber topped with saffron chickpea pureé and
parsley. Sauce: Tahini

SUNNY SIDE Black rice, braised fennel, sundried tomato and avocado, topped with butternut squash. Sauce: Almond
pesto

LA FIESTA Black rice, avocado, chayote and pickled jalapeño topped with black bean purée and kaffir lime chips.
Sauce: Tomato guajillo

SPICY MANG Black rice, avocado, mango and English cucumber topped with spicy veggies. Sauce: Toasted cayenne
GREEN MACHINE Four-grain rice, English cucumber and asparagus topped with charred edamame. Sauce: Almond
pesto

SWEET TREE Four-grain rice, avocado, roasted sweet potato and alfalfa sprouts. Sauce: Toasted cayenne
MIGHTY MUSHROOM Four-grain rice, enoki mushrooms, baked tofu, braised shiitake and micro arugula. Sauce:
Shiitake truffle

PICKLE ME Four-grain rice, gobo, carrots, pickled daikon and avocado. Sauce: Carrot ginger

Black rice, seaweed salad with chili flakes and sesame seeds

Black rice, charred corn with harissa and cilantro

DUMPLING STATION
We will prepare our full selection of vegan dumplings for your guests. Our chefs will steam and plate the
dumplings on site and keep the food flowing throughout the event.

Our dumplings are filled with unique, flavorful blends of vegetables and topped with signature sauces and
garnishes. All dumplings are 100% vegan and kosher certified.

DUMPLING SELECTIONS:

THE BADGE Charred cabbage, roasted onions, garlic, bell peppers, sesame, and carrots topped with chili toasted
panko and cilantro. Served with ponzu sauce.

FUN-GUY Braised porcini, shiitake, and portabella mushrooms, spinach, and baked tofu topped with chili toasted
panko and micro arugula. Served with spicy bean and shiitake truffle sauces.

SMOKEY TOM Sun-dried tomatoes, spinach, roasted onions, smoked butternut squash topped with lemon toasted
panko, sumac, and parsley. Served with tahini sauce.

STATION ADD-ONS
Our sides, noodle salads, and desserts are also available for our sushi and dumpling stations. These items
make fantastic additions to your meal and give your guests more variety on the table.

SIDE SELECTIONS:
EDAMAME Served in the pod, sprinkled with pink Himalayan sea salt
SEAWEED Topped with chili flakes and sesame seeds
KIMCHI House-made spicy kimchi
CARROT Served with sesame oil, hot pepper paste, and cilantro
BLACK BEANS AND CORN Served with harissa, tahini, and cilantro
ROASTED CHICKPEAS Served with tahini, lemon-toasted panko, and parsley

NOODLE SALAD SELECTIONS:


BUCKWHEAT CASHEW NOODLES Soba noodles, carrots, baked tofu, cashews,
avocado, sesame seeds, and cilantro served with peanut sauce

GREEN ROOT NOODLES Green tea noodles, seaweed salad, roasted


almonds, sesame seeds, parsley, and cilantro served with ponzu sauce
