Letter
W
elcome to the Summer 2006 issue of Get Fresh!, and my first issue as editor. Unless this

is the first time you have ever seen the magazine, you’ll have noticed that it’s looking
rather different! Unfortunately, I can’t take credit for the fabulous new image. That’s
down to the art direction and design of Mike Marshall, Leyton Edwards and the rest of the team
at eatsleepthink. It’s safe to say that they have exceeded all our expectations with this visual feast
of a magazine, and we look forward to bringing you more gorgeous-looking issues of Get Fresh! in
partnership with this wonderful company.

I’m thrilled to have taken charge of what is easily my favourite magazine of all time, and I
know many readers feel the same about it. That is in large part thanks to Karen’s hard work,
passion and dedication over the last six years – and so is Get Fresh!’s impressive list of contributors.
Thank you Karen, and thank you contributors! Without these experts – who are world-class
leaders in their particular areas of raw nutrition and its related subjects – Get Fresh! would not
be the magazine it is. However, I’m not stopping there. I am in the process of adding to that list,
and given the massive growth in all things raw on both sides of the Atlantic there’s no shortage
of candidates.

In this issue, we are privileged to be featuring Natalia Rose for the first time ever – our exclusive
interview with her begins on page 30. Natalia is a Manhattan-based clinical nutritionist who has
achieved great success putting all her clients on 70% raw or higher, and she is also the author of The
Raw Food Detox Diet. I’m a huge admirer of Natalia’s work and I’m sure you will be too when you
read what she has to say.

On page 42 we welcome another new face to Get Fresh! – Russell James, the Fresh Network’s resident
raw chef. Russell trained with ‘mother of gourmet raw vegan cuisine’ and Get Fresh! contributor
Cherie Soria at the Living Light Culinary Arts Institute in California. For this issue he has
written a special piece on how to prepare delicious raw picnics to enjoy in the (hopefully) glorious
summer weather.

On page 58 you’ll find our new feature A Day In The Life. In each issue a different raw expert
will provide a peek into their daily lives – what time they get up, how they spend their time,
what and when they eat, and a whole lot more. In this issue we feature the vibrantly inspirational
Alissa Cohen.

than eating your favourite food with the sun on your face and
a cooling breeze in the air? Now, I know that if you’re in England,
the opportunities to experience warm whether can be few and
far between but with summer now upon us, it’s the perfect time
for a raw version of that English institution – the picnic!

The probable origins of the word ‘picnic’ are thought to have


come from ‘picking’ food during the early outdoor social
gatherings in Europe dating as far back as medieval times. The
French word ‘piquer’ means to pick at food and ‘nique’ means
something small of no value. There are also references to picnics
that evolved from meals eaten indoors, where everyone present
had contributed some food, not unlike the raw pot lucks many
people will be familiar with.

Wherever picnics evolved from, they provide an excellent setting


to enjoy a variety of simple, organic, raw, fresh food with no set
courses and with the emphasis on simplicity and fun!

Sweet Potato Crisps
Spicy Garlic Flavour
Makes enough for 2-3 dehydrator trays

3 cups sweet potato, sliced thin on a mandoline


2 teaspoons garlic powder
¼ teaspoon cayenne
1½ teaspoons Nama Shoyu or Tamari

1 In a small bowl mix Nama Shoyu, garlic powder, cayenne and


water to form a paste.

2 Place the sweet potato slices in a bowl and add the paste. Mix
well by hand to make sure every slice of potato is covered.

3 Lay out slices on a mesh dehydrator tray.

4 Dehydrate at 110 degrees F. for approx 6 hours or until crisp.


The timing will depend on how thin you sliced the sweet
potato.

not tempted to eat it before it’s ready) or until bread feels light
in your hand. If the pieces don’t fully come apart where you
scored, use a knife to cut them.

Mushroom Stroganoff
Serving size: 6

Cream Sauce
1/4 cup dried porcini mushrooms 1 cup reserved mushroom 1. Soak the porcini mushrooms in 1 1/4 cups water until soft,

nutritional yeast, salt, garlic powder, and pepper, and blend
until smooth and creamy. Add the remaining almond cream
and pulse to blend. Do not continue blending the gravy once

frothy. It should just be mixed in.

7. Gently squeeze the zucchini to remove the salt and excess


moisture, and toss with the remaining sliced mushrooms and
cream sauce.

8. Put the stroganoff in a glass baking dish and place it in the


dehydrator set at 135 degrees F. for 1 hour. Serve warm.
