Background of the person

1. He Worked in furnace / boiler company in Chennai & Kenya


2. He don’t have any bakery cooking experience
3. Based on furnace / boiler experiences he started doing Bakery ovens.
4. For more than 100 kg rice we can go for stream cooking. But as on 2018 we are using
5 kg rice in ashram. So, waste of doing stream cooking for us, he stated.

Overview of different types of oven


1. Electric oven needs 9 kv for baking it also needs 3 phase to run the oven
2. In Diesel oven If current off we need to put generator for single phase Operation for
even removing of Tray from the oven
3. Gas oven does not needs generator. An invertor is enough to operation single phase
4. His suggestion for us is Gas oven because less production and voltage drop.

Basic calorie value of combustion materials.


For combustion, kilo calorie value is must, which determines the wastage material.

Higher the calorie value, lower the wastage after combustion.

Manual Gas Oven is dangerous because it has high chances of fire which is not
safety compared to Electric and Diesel Oven
Mechanism
1. 2 Burner in gas oven one at top and one at bottom
2. Bottom temperature should be set higher than top burner temperatare.
3. Blower is to blow oxygen for combustion, it requires less than 100 watt for
working.

4. No need to shift tray due to filament heating it bakes evenly.
5. Self life is high compared to diesel oven

1. If voltage fluctuate then filament gets damage & regular maintenance is needed
2. Need of stabilizer is mandatory during power off
3. Only works at 3 phase

Mechanism

Product bakes with Blower blows air to oven Through pipe hot air

Functions with 25% electric & 75% diesel

1. No 100% organic biscuits in market, 70% refined flour & 30% organic flour
2. Whole wheat bread in market contains essence & 30% wheat & 70% Refined

 Size of the tray is 12”*14”.
 A gas oven with 12 tray capacity we can bake around 300 biscuits
