Introduction

A heltheir kind of vinegar is what I want to offer. For this kind of vinegar that I made, I
would like to take the interest of the public consumer with my version of organic lakatan
and latundan vinegar. I would for them to know that this kind of vinegar has a sweet and
sour taste; and has a unique aroma that are pleasant to the nose.

Nowadays some perople produce synthitic/ artificial vinegar and sell it in the market,
without the public knowing. Promoting a helthier kind of vinegar is what my product want
to offer. My product is vinegar made of purely fermented juice of lakatan and latundan
banana. Would help not just the public consumer with its health benefits, like it is reach
of potassium, dietary fiber,vitamin c, soluble fiber which may help lower blood
cholesterol and reduce the risk of heart disease and magnesium. It can also help the
banana planters of Dulag, by increasing the demand for thier products.
Background of the study

I make this product for the porpuse of serving the public consumer a healthier kind of
vinegar and to help some banana planters of Dulag.

Serving the public consumer a helthier vinegar, because most people nowadays are
very conciouse with thiere health. They are carefull and meticulous on what to buy.
They usually buy organic products and more fruits and vegetables on thier list. By
creating this product ( organic lakatan and latundan vinegar) I am atleast supporting this
people on what they want to achieve, which is a heltheir life style than before. I can also
give the public consumer a choice to use a healthier vinegar for thier daily usage.

To help the banana planters of Dulag Leyte, by turning lakatan and latundan banana
into vinegar. By thise I can now increase the demand for thise type of banana.I will not
be choosy in purchasing thier banana. I will still buy it even the bananas are small or
significant interm of sizes. Even the bananas does not have a good quality in terms of
look, as long as it is "gurang" and not "linghud". I will assure them that I will be a
permanent buyer of lakatan and latundan banana. Because some planners are having
difficulties in looking for a permanent buyers. Other buyers are very meticulous and
choosy and buy it in a cheaper price if the product does not fit on what they want.
Management Study

This chapter tackles about the entire organizational arrangement of the business. Since
my business is home base and just new, the owner will be the one to do all the work.
Thise chapter also will be discussing the duties and responsibility of the owner to the
business. This contain the organizational chart, company policy, management
policy,what type and form of business is this.What will happen during the pre off
operating period, operating period and gant chart.

Pre – operating period

During the pre – operating period the owner are responsible of dealing with some
government agencies to secure the necessary documents needed for the business (
Business permit, DTI, Sanitary permit, BIR and Barangay clearance). The owner should
secure the direct material (banana) is enough for the production and should ensure that
the company supplier can supply the direct material (banana) which will be needed for
production. The owner should make sure that the indirect material (Net sack,
Containers, Funnels, Filter paper/cotton cloth and bottles used for packaging are clean
and enough for the production. That he/she has the enough workers for the business.

Operating Period

During the operating period, the owner will be handling all the responsibility in the
business. He will act as the manager, marketing staff and worker. Since the business is
small and home base.

Nature of Business

The nature of my business is manufacturing; where the business is engaged in buying


raw materials and supplies to be processed or manufactured, converting them into
finished product for sale at a profit.

Form of Business

The fprm of business I will have is sole proprietorship; in which the capital is owned and
provided by a single person. The one who will manage the business by himself or hire
another person. The advantage of this form of business is, it is easy to manage and the
profit will be yours alone. The disadvantage of this form of business are limited source
of capital; whatever happen to the business the owner alone should bear it all, including
unpaid obligations.

product that will provide delicious food to all family home.

Technical Study

This study discuss about the process of production and the activities of the business. It
state also the equipment and supplies used in the production, including its cost. Other
aspects regarding of bringing the raw material to the plant location and turning it to
finish goods ready for trade. Plant layout and location. Location of the raw material, how
far it is from the plant and the accesibility of the road. The process of making the
product in a flow chart and the product description. The cost of the raw materials used
and how it is purshased from the supplier.

Product description

Organic lakatan and latundan vinegar is made of purely fermented lakatan and latundan
banana juice.It has a sweet and sour taste and has a distinct smell that will differentate
it from other vinegar. It has a color that is near to orange or near to brown. Its color is
getting darker through time and its taste is getting sour as the time pass by. The product
did not undergone pasteurization, but it went through filtration just to remove the solid
parts.

Production Process

Organic Latundan and Lakatan Vinegar

Ingredients

• Latundan Banana

• Lakatan Banana

– 20 kls of latundan banana and 10 kls of lakatan banana can make 6 L of


unfiltered banana juice and 5.8 L when the banana juice is already filtered. It can
make 5.5 L of banana vinegar if it is already gone through filtration.

Step by step procedure

Ripen the lakatan and latundan banana for 3 days . If the banana is already ripen, wash
it first before you peel it. Put the peeled banana on the net sack. After that put it in the
contianer and live it for 3 to 5 days, so that the banana juice will comes out naturally.
Once the banana juice is ready, filter it with clean cloth or filter paper to remove any
solid parts. Transfer the filtered juice to a clean container, cevered it and live it for 3 to 5
days for firmentation. After 3 to 5 days filtered it again before it went through packaging.

Normal Duration Of Process

It will take 14 to 18 days to make organic lakatan and latundan vinegar. It will take 3
days to ripe the banana, 5 days before you can collect its banana juice. Another 3 to 5
days for the banana juice to get sour and another 3 to 5 days for it to turn to vinegar.

If we are using overiped latundan and lakatan. It will only take 8 to 11 days to make
organic lakatan and latundan vinegar. It will take 3 days to collect banana juice, 2 to 4
days for the banana juice to get sour and 3 to 4 days for it to turn to vinegar.
Cost of raw material

Unriped latundan banana is worth 12.00 pesos per kilo and unriped lakatan banana is
worth 20.00 pesos per kilo.While overiped lakatan banana is worth 10.00 pesos per kilo
and overiped latundan banana is worth 7.00 per kilo.

How the raw material purchased from the supplier

• Purchase the bananas by kilo

• P 12.00 per kilo for latundan banana ( yellow ) and P 20.00 per kilo for lakatan
banana ( yellow ).

• The sizes and appearance of the banana will not matter as long as it is "gurang".

• For over riped bananas , P 10.00 per kilo for lakatan banana and P 7.00 per kilo for
latundan banana.

Alternative raw material to be used

If the the raw material that i am using which is latundan and lakatan banana ( yellow )
will not available. I will use the evergreen latundan and the red lakatan as an alternative.
Any ways evergreen latundan has the same taste as the yellow latundan It is just that
evergreen is much sweeter than the yellow one. While the red lakatan is much sweeter,
more soft in texture, has more vitamins than the yellow one.

Raw Material Location

Latundan and Lakatan bananas will be purchase in some Barangays of Dulag, which is
Barangay Cabarasan, Victory, Maricum, Market Site and Rawis. The pictures below will
show how far is the plant from the raw material location and how accessible the road

This chapter includes the socio - economic benefits or the corporate social responsibility of the
proposed product to the income, government, employment, banana planters / farmers

and to the environment. The proposed product aims to help some banana planters of Dulag. To help
the localities and to give a healthier vinegar to the public consumer. Nowadays people who plan to
create a new product or make their own business should know how to contribute to the socio economic
development of the country, especially the community.

Contribution to income

The main goal of this product is to make profit, especially to the part of the owner . The business and
the owner should have a pleasant relationship to the consumers, to achieve the main goal of the
business which is to generate income.

Contribution to the government

The contribution of this product or the business to the government is through tax. This product is
expected to generate income and it is expected to give its contribution to the government in the form of
taxes. The tax payment from this product can help the localities and we'll as the economy in its future
projects.

Contribution to the employment

If the business will go bigger, it can create employment for the people within the community. The
business now can hire people to make the product and the people that can help the business grow.
Creating employment can help people to support their needs and to have another source of income.

Contribution to the banana planters

With this kind of business, I can help some planters in Dulag,.In creating a strong demand for their
product. By letting them know that whatever sizes and appearance of the bananas. The company will
still buy it as long as it is " gorang " .Because "gorang " bananas can produce more banana juice and
can create more vinegar. By creating a secured buyer for their product.

Contribution to the environment

This product can contribute to the environment by making organic fertelizer. By turning its banana peel,
dried fruit, flowering stem and banana trunk to organic fertelizer, through decomposition. While the
flower bud of the banana can be turn to vegetable or can be sold as raw. It's banana peel can be turn
into burger patty. There will be no waste for this product, because its waste can be turn into something
that is helpful to the environment, farmers and can create another source of income for the community
if it will be developed properly.
