Edible insects
Eating insects is also known as entomophagy which is a common culture in most parts of
world including North, Central and South America. Over 2000 species are found to be eatable
globally rich in protein content and other necessary minerals. Anthopods and other species of
insects are good source of nutrition.
By Product
Beetles - Beetles are a group of insects that form the order Coleoptera, in the superorder
Endopterygota. The most commonly eaten beetles are the long-horned, june, dung, and
rhinoceros varieties. They are efficient at turning cellulose from trees (indigestible to humans)
into digestible fat. Beetles supply calcium and iron, as well as a good dose of zinc. Beetles
also have more protein than most other insects: the protein content ranges from 10-20 grams
per 3.5-ounce. Beetles can be eaten once cooked (since the shell becomes tender), and taste
similar to smoked bacon.
Caterpillars - Caterpillars are the larval stage members of the order Lepidoptera. They are
an excellent source of protein, iron and other minerals. Caterpillars of most species are
herbivorous, some are insectivorous, even cannibalistic. The mopane caterpillar is one of the
most consumed and economically valuable edible insects in southern Africa and could go some
way to improving iron deficiency in the diet. Their iron content ranges from 30 to 70 mg per
100g serving.
Grasshoppers, locusts & crickets – Grasshoppers contain over six times iron content
compared to beef. A 3.5-ounce serving of raw grasshoppers contains between 14 and 28
grams of protein, which is quite high for such a small amount of food. Grasshoppers and
crickets are a good source of unsaturated fats, according to the Food and Agriculture
Organization of the United Nations, which can help lower the risk of heart disease. These
insects also supply small amounts of iron, though the exact amount depends on the size of
the bug. Cricket protein is a highly nutritious food source containing protein, fiber, vitamins,
minerals and healthy fats, which is bio-available, implying that cricket powder is easily
digestible.
Bees, wasps and ants –Ants are full of proteins, vitamins and minerals essential to the
proper functioning of the body. Honey bee larvae and pupae can be compared to beef in terms
of their protein quality and quantity. Wasp is any insect of the order Hymenoptera and
suborder Apocrita. Wasps as a group do not form a clade, but are paraphyletic with respect
to bees and ants.
Scale insects & true bugs - Depending on the species, scale insects may be found on plant
stems, twigs, trunks, foliage, or fruit. Most scale insects are small and inconspicuous. The
size of scale insects ranges from 1/8 to 1/2 inch. Color, shape, texture and other features
vary with the species. They are divided into two categories, soft scales and armored scales.
Scale insects feed by sucking sap from trees and shrubs through piercing-sucking mouth
parts.
By Application
Flour- Insects are dried, roasted and powdered to form insect flour. Most commonly
consumer insect flour includes cricket flour, locust and beetle. These powders are rice in
protein content containing essential minerals and amino acids. These products are processed
to offer consumer with low fat and high protein content. These powders are widely used in
energy bars, bread and pasta to increase the protein and nutrient content in any food.
Bars – Bars are nutrient dense combining edible insect flour offering high protein and iron
content along with other nutritional ingredients.
Snacks- Snacks are small amount of food eaten between meals. It essentially uses cricket
flour and other edible insect ingredients to cook into snacks.

Increase in bugs consumption owing to growing health concerns and avoiding unhealthy foods
may favor edible insects market. Insects are also used as animal feed mainly in fish and
poultry. Insects offer a sustainable and economical source for human as well as animal feed,
with comparatively lower greenhouse (GHG) emissions as well as costs.
Insects can be grown on organic waste and therefore are rich in protein, vitamins and amino
acids. Therefore, insects are a potential source for conventional production (mini-livestock)
of protein, either for direct human consumption (DHC) or in recomposed foods (with extracted
protein from insects) and as a protein source into feedstock mixtures.
Regulatory restraints faced by this market is adding and convincing U.S. FDA to add crickets,
mealworms and other insects-based products to the agency’s database of Generally
Recognized as Safe (GRAS) ingredients. Companies need a better regulatory certainty to
encourage more infrastructure investment as well as setting up wide distribution network
along with marketing spending.

TABLE 4 Global edible insects revenue, by region, 2013 – 2017, (USD Million)
Increase in edible insects demand puts pressure on source populations due to new
technologies used to harvest bugs more efficiently and to store them safely for longer periods.
The over harvesting of edible insects from different tropic levels will have an adverse
implication for ecosystem processes in Asia Pacific and other regions. USDA is involved in bug
farming through their Animal and Plant Health Inspection Service (APHIS) agency. China
includes wild insect harvesting as food, insect farming and usage of insects in small village
for animal production as fish or poultry.
In Asian countries such as China and Thailand, edible insects are sold as whole to be
consumed by people. They are also the part of street food in these regions. With the rising
preferences ascribed to consumers in the region, companies are also providing packaged
edible insects in BBQ and raw form. The key industry participants are also moving towards
providing food-grade certified insects for consumption.

Demand for edible insects are also growing due to number of benefits offered by them along
with rise in globalization. They are being produced by these regions by adopting wild
harvesting, farming and semi-domestication. These methods require very minimal
investment. Asia Pacific is considered to be the largest region accounting for maximum edible
species available. Harvesting, gathering, and processing insects is also becoming an important
business in some countries especially for locals as very little investment is required. Various
types of insects are considered edible including caterpillar, orthoptera, beetles, true bugs, etc.
However, among these, beetles are likely to be consumed on a large scale in the near future.

Most commonly consumed insects are beetles and caterpillars. Other popular insect foods are
bees, wasps and ants, grasshoppers, locusts & crickets, scale insects & true bugs, dragon
flies, flies and termites. Beetle larvae are consumed by tribes in Australia and Africa as their
subsistence diets, whereas fried beetles and locusts are consumed in Thailand. Beetles
contaminated with pathogenic bacteria could pose risks to consumers, and the retailers were
recommended to ensure proper heating of the products to eliminate pathogens.
Recent decline in seafood resource and restrictions imposed by countries on fishing also
should bolster product demand. It has created a need for alternative food sources. Lower risk
of transmitting disease and lower investment of production should drive industry growth.

Insects are important in plant reproduction, improve soil fertility, control harmful species, and
provide products for humans such as honey and silk. Some edible insects include crickets,
beetles, caterpillars, mealworms, grasshoppers, bees, wasps & ants, scale insects and true
bugs, locusts, termites, dragonflies, flies and scorpion. Edible insects are farmed and
harvested for human and animal consumption. They are rich in protein, vitamin, and mineral,
considered nutritious, healthy, and emit less greenhouse gases than animal meat. Edible
insects are consumed whole and powdered form. Asia Pacific led by China and Thailand
dominated overall edible insect market production. Europe edible insects market, led by UK,
Netherlands and France is set to witness high growth rate during the forecast period.
Demand for insects as food has increased along with rising standards of living and increasing
globalization in parts of Africa, Asia and Latin America where cost of insects can exceed the
cost of more conventional animal meats. Instead of a simple supply chain of insects collected
by people as a subsistence diet or to be traded or sold at local markets, the chain involves
traders who sell to wholesalers that distribute insects to small retailers or to larger
supermarkets. Increasing commercialization is accompanied by more effective collective
technique, improved transport network, storage facilities so that out of season demand can
be met.

Food industry remains an attractive and underutilized avenue for edible insects, which has
led to produce cricket and mealworm products. Insects are good source of proteins and are
comparable to conventional livestock. Insects are rich in high quality protein, containing
amino acids that can easily be digested and thus can replace other protein sources such as
soy. Fat content shows higher amount of essential fatty acids than other animal fats and
amount of carbohydrates is low which is derived mainly from the chitin that constitute the
exoskeleton. These factors are expected to favor edible insects market growth.
Absence of clear norms and legislation regarding insect use as food and feed is expected to
hinder market growth. Regulations are largely absent in the U.S. and Europe, while in Asia
Pacific, insects use for human consumption in practice is more tolerated than regulated. Wild
harvesting of edible insects is the conventional method of production which are methods often
depending on the knowledge of particular people and their experience in doing so, who also
monitor the development of the target species and know appropriate times to collect,
appropriate collecting methods, and the land or water management regimes required to
increase insect.

Currently, it is common for insect farmers to sell fresh farmed produce to an agent (wholesale
buyer). The agent further processes (boils), packages and freezes the product and markets
them to end-user industries such as restaurants, snacks, bars and flours. Some of the
companies are forward integrated which farms and sells the final product to end-use
industries. These companies are expected to generate high profit margins as there are no
retailers or resellers in between. They tie up directly with restaurants, snack and bar industry
to supply product on long term contract basis.

Lower feed cost has led to rise in alternative feed products in aquaculture and poultry industry.
Insects are sustainable and economical feed source accounts to natural diets in fish and
poultry feed. Black soldier fly larvae is used as an alternative to fishmeal feed in aquaculture
industry. Insect species suitable for use as feed include maggots of common housefly, desert
locust, grasshoppers, silkworms, termites and mealworms.
Maggots are important animal protein source for poultry. Maggots can replace fishmeal in
broiler chicken production. Silkworm caterpillar meal is less expensive and is used as an
alternative to fishmeal feed.

The European Food Safety Agency (EFSA) ensure consumer protection and maintain food
safety. The EFSA started to collect information about edible insects and include insects in
normal diet for both animal and human feed.
There are several legislative requirements that impact the use of insects as food and feed.
Currently, the feed ban provisions of Regulation (EC) No 999/20011 (TSE Regulation) do not
allow insect Processed Animal Protein (PAP) to be fed to farmed animals due to lack of a safety
profile. With respect to feed/substrate for insects, Annex III to Regulation (EC) No 767/20092
prohibits the feeding of faeces and separated digestive tract content even though these
materials are used in other parts of the world as substrates in insect production. The
legislative framework specifically related to insects used as food and feed, however, is still
under development. The processing and storage of insects and their products should follow
the same health and sanitation regulations as for any other traditional food or feed items in
order to ensure food safety. Issues to be considered include microbial, chemical and allergic
hazards. In addition, general animal (vertebrate) health and welfare rules should also apply
for insects.

Increasing applicability in functional food along with positive outlook towards consumer health
benefits is likely to drive edible insects market. Nutritional value of edible insects include
protein, fibres, dietary energy, minerals, vitamins, and fatty acids. Increase in edible insects
consumption has led to rise in sustainable diet owing to low environmental impact to food and
leading healthy life. Sustainable diets are healthy and safe, easily accessible, affordable and
nutritious for human consumption.
Edible insects are excellent alternative to traditional meat production as breeding of insects
has little environmental impact. Insects have a faster rate of reproduction compared to
mammals and require fewer resources (water, food and energy). An edible insect farm
pollutes less than traditional breeding and produced products with better nutritional values.
Many current agriculture methods are not sustainable and are a major cause of pollution and
therefore, global warming. Insects can be grown using less water and land than conventional
livestock.
Edible insects are rich in protein content which increase dietary quality. Protein content
depends on feed such as vegetables or waste and it varies by species. Food products uses
cricket and mealworm powders which are high in protein source containing all the essential
amino acids. Bugs are used in dietary supplements owing to health benefits and product
consumption by sportsmen and athletes.

Use of insects as feed in aquaculture industry may drive the market. Aquaculture is the fastest
growing animal food sector and is expected to expand with increasing demand for fish.
Increase in fishmeal price owing to alternative protein source in aquaculture industry.
Black soldier fly larvae are used as an alternative to protein source in prawn diet. The larvae
are used as high protein and fat ingredient for carnivorous fish including bluegill, rainbow
trout, perch and bass. Dried black soldier fly prepupae contain 42% protein and 35% fat. In
rainbow trout, larvae use 25% of fishmeal and 38% fish oil.

Replacement of tradition source of protein from sources such as chicken and beef may drive
beetle demand over the foreseeable period. Beetles are efficient at turning cellulose from
trees (indigestible to humans) into digestible fat.
Aquatic beetles, dung beetles and wood-boring are different types of edible beetles. In
addition, beetles and their larvae are an important food source for many mammals and larger
birds. A giant water beetle supplies about 20 grams of protein per 3.5-ounce, whereas June
beetle supplies about 13.4. Palmworm beetle can have as much as 36 grams of protein.
Beetles are good source of iron, protein, calcium and zinc. They are also used to control water
hyacinth invasions.

Key human consumption patterns involve the use of insects as a whole or in powder form for
flour, protein bars and other snacks. Food products use cricket, mealworm and grasshopper
powders, rich in protein content having all essential mineral and amino acids. Black soldier fly
larvae and maggots considered as substitute in fishmeal feed in aquaculture industry, are
consumed either whole or as processed meal. Grasshoppers, beetles, crickets, cockroaches,
termites, scale insects, flies, bees, wasps and ants are food sources for poultry and human
which may fuel edible insects market growth. Companies including Bitty, uses high protein
baking flours that are blend of cassava flour, milled crickets, tapioca starch and coconut flour.
Aketta grows its own crickets and sell or markets whole roasted and cricket flour.

Increase in insect consumption as traditional food mainly in the U.S. is likely to drive edible
insects market demand in the region. Approximately 2,000 edible insects species are
described globally, and almost over 90 are used as food in North America. Insects are mostly
consumed in processed form, which range from granules to pastes and powders that are
usually added to drinks, confectionery, snacks, or baked goods.
Crickets are consumed in North America region, either as fried, roasted and boiled. According
to North American Edible Insect Coalition, is to foster collaboration amongst stakeholders and
create a consolidated voice to encourage insect growth as both food and feed. North America
is expected to witness strong gains during forecast period owing to rising population demand
and acceptance of edible insect as novel food product.
