Exerce atividade anti-inflamatória por inibição de uma série de moléculas que desempenham um
papel importante na inflamação. As curcuminas exibem propriedades anti-inflamatórias em
modelos animais através da inibição da atividade das enzimas ciclo-oxigenase e lipo-oxigenase. A
ação anti-inflamatória da cúrcuma é provável devido a uma combinação de três propriedades
diferentes. Primeiro, o açafrão diminui a produção de histamina que induz inflamação. Em
segundo lugar, aumenta e prolonga a ação do cortisol, hormônio anti-inflamatório, e, finalmente,
o açafrão melhora a circulação.

Seu efeito hepatoprotetor ocorre devido a sua atividade antioxidante que reduz o
dano celular causado pelo estresse oxidativo. O extrato também aumentou a atividade
das enzimas superóxido dismutase (SOD), catalase (CAT), glutationa peroxidase (GPx) e
delta-aminolevulinato desidratase (d-ALA-D) enquanto diminui a peroxidação lipídica
em modelos induzidos ao dano hepático. Além de levar a diminuição das enzimas
marcadoras hepáticas, como aspartato transaminase (AST), alanina transaminasa (ALT)
e fosfatase alcalina (ALP) em hiperamonemia (excesso de amônia) experimental.
