5. Manufacturing Process:
Wheat is the raw material for a flour mill. Mills, where quality is always the goal, ensure that
they only procure the finest. Meticulous checking by sampling is conducted for all wheat
deliveries in order to carry out all of the necessary chemical tests in the quality control
laboratory. The wheat delivery is only completed if it meets the strict quality standards of
Mills. The grains are then stored in respect to their features and go through the cleaning
process before being used.
Cleaning
The wheat is cleaned by specific machinery of the latest technology to remove all extraneous
particles or substances that are contained in the wheat during its delivery and usually
originate from the fields (e.g. stones, foreign grains, chaff, grains infected with diseases, etc.).
The cleaning process is purely mechanical without the use of chemicals. After the dry
cleaning is completed, a small amount of water is added to the wheat to make it more flexible
during its grinding, thus achieving the best possible extraction of grain from the husk (bran).
The wheat is now ready to pass into milling.
Milling
After cleaning, the wheat goes through the milling stage, in special roller mills or a traditional
stone mill, where the flour is now extracted from the grain. The milled product passes
through special sieves that separate it into 3 main grades: Flour - Semolina - Bran. In order to
produce wholemeal flour, the product is extracted as a single grade that retains the bran.
Blending
On completion of the milling process, the flour is stored in special storage silos. The
produced flour has different quality features, depending on the variety of grain that is ground.
Blending is required during this stage. This allows us to blend different flour qualities, which
produces the mixtures with the desired characteristics every time. Furthermore, the mixers
enable us to achieve the same consistent quality in the finished product, regardless of any
instability in the raw material (the cereals). The product is now ready for packaging and
distribution.
Packaging - Distribution
The final blended product undergoes the relevant analyses in the quality control laboratory
and after receiving approval that it meets the specifications, it is then cleared for distribution.
It accordingly goes for either bulk loading into silo trucks destined for the industries or
bagging into professional packaging of 50 and 25 kilos or to the small packaging department
where it is packaged into five and ten kilo packs that are intended for the retail market. The
packaged flour is stored for a brief period of time in special warehouses until it is loaded and
dispatched to the customer.
