INTRODUCTION

BACKGROUND OF THE STUDY


Dried chips are typically eaten as a snack. Since most are made from fruits such as
mango or banana, others assume that it is healthy. These commercialized chips might be
packed with high amount of sugar as well as saturated fat. While they contain few essential
nutrients, large amounts of sugar can lead to obesity, diabetes and elevated triglycerides, or fat
in the blood.
It is widely distributed in most South American and Asian countries (Bayma, 2008).
According to Ethno-botanical studies, the whole plant has been in medicinal use since long
(Majumder, 2011). It is reported to possess antipyretic, analgesic, anti-inflammatory,
antimicrobial, refrigerant and CNS activity (Majumder, 2011). It is used ethno-medicinally to
treat abdominal pain, abscesses, acne, boils, colic, fatigue, gout, headache, renal disorder and
rheumatic joint pains (Khan, 2002; Ragasa, 1998; Omoloso, 2002). The roots are used to treat
fevers and the aerial parts are used as dressing for wounds (Muñoz, 2000). The whole plant is
used to stop hemorrhages (Egwuche, 2011); it is crushed and mixed with water to form a
mixture, heated and administered orally or applied topically to arrest wound bleeding or
hemorrhage (Majumder, 2011).
Pansit-pansitan or Shiny Bush in english is an erect, branched, annual herb, shallow
rooted, reaching up to 40 centimeters high, with very succulent stems. Stems are round, often
about 5 millimeters thick. Leaves are alternate, heart-shaped and turgid, as transparent and
smooth as candle wax. Spikes are green, erect, very slender, 1 to 6 centimeters long. Tiny dot-
like flowers scattered along solitary and leaf-opposed stalk (spike); naked; maturing gradually
from the base to the tip; turning brown when ripe. Also, in a phytochemical test, it appears that
the methanol extracts of stems yielded carbohydrates, alkaloids, tannins, flavonoids, steroids,
triterpenoids, with the absence of saponins and proteins. According to Medical Health Guide
page, pansit-pansitan is used as herbal medicine to treat eye and skin inflammation, sore
throat, arthritis, burns, wounds, pimples, mental excitement order, and cancer. Pansit-pansitan
also consists of triterpenoids that strengthens the immune system and phytosterol that
balances the cholesterol level.

STATEMENT OF THE PROBLEM
This study aims to determine the acceptability of Pansit-pansitan as nutritional chips.
Specifically, this study seeks to answer the following questions:
1. How long do Pansit-pansitan nutritional chips will develop molds?
2. How long does a Commercialized Nutritional chip will develop molds?
3. Is there a significant difference between the Pansit- pansitan nutritional chips and
the commercialized chips in terms of:

PURPOSE OF THE STUDY


The researchers came up with the idea of using pansit-pansitan in making nutritional
chips. Since a lot of people hate the taste of vegetables, making it into chips is appealing to
children and it can be brought anywhere since it is a ready-to-eat snack. The best thing about
using pansit-pansitan is that it is cheaper than most commercial nutritional chips and pansit-
pansitan is abundant in the environment.
The reason why the researchers want to conduct this study is to help people, especially those
who do not eat vegetables, maintain a healthy body.

SIGNIFICANCE OF THE STUDY
Peperomia pellucida, mostly found in damp environments and tropical and subtropical
climates, is a plant abundant in the Philippines. It is already proven that Peperomia pellucida
can be safely eaten raw or cooked. Because of its abundance, the researchers decided to use
this plant to appeal children to it vegetables in the form of chips. Peperomia pellucida was
found to have analgesic and antifungal properties, and is a good antioxidant, which suggests
that it could be made as a healthy but inexpensive snack.
The following will benefit this study:
Children. Since a lot of people hate the taste of vegetables, making it into chips is appealing to
children and it can be brought anywhere since it is a ready-to-eat snack.
Industrial Manufacturing Companies. This will help them to create products that will be
patronize by people who loved organic foods and in the long run this will offer more job
opportunities for the people that could help them.
Future Researchers. This study will not only be beneficial for the students, teachers and parents
but also for those future researchers. The results of this study will be beneficial for further
researchers that seek to understand the use of pansit-pansitan for nutritional purposes. The
result of the study will encourage researchers to formulate more plant based products which
are organic, environmental friendly and cost efficient.

RESEARCH METHOD
The researchers will use the mixed-method which is a methodology for conducting
research that involves collecting, analyzing and integrating quantitative (e.g., experiments,
surveys) and qualitative (e.g., focus groups, interviews) research. This approach to research is
used when this integration provides a better understanding of the research problem than either
of each alone. The researchers will conduct several experiments to produce results that can be
used for the study including the making of the nutritional chips using Pansit-pansitan.
Furthermore, the researchers will conduct surveys and interviews to know the opinions of the
people in the taste, crispiness and longevity of the Pansit-Pansitan nutritional chips. This
method is suitable and appropriate on the purpose of the study and on the set of specific
questions that the researchers have formulated.

DEFINITION OF KEY TERMS


Pansit-pansitan/ Shiny Bush- erect, branched, annual herb, shallow rooted, reaching up to 40

SUMMARY
Pansit-pansitan (Peperomia pellucida Linn) is a common fleshy shallow rooted herb that
grows up to 40 cm in height with juicy stems and has been used as food item as well as a
medicinal herb. The entire plant is edible either cooked or raw. Because of its health benefits
and abundance the researchers decided to use Peperomia pellucida as their raw material in
making nutritional chips.
Commercialized chips nowadays full of sugar and saturated fat. This research study was
conducted to determine the acceptability of Pansit-pansitan as nutritional chips and its
significance difference to commercialized chips in terms of taste, texture and texture. To
further analyze the Pansit-pansitan as nutritional chips the researchers used mixed-method.
Experimentation, conducting surveys using questionnaire and interview will be used to acquire
answers from the sample size.
This research will be vital in the community, Pansit-pansitan is typically overlooked and most of
the individuals don’t recognize its amazing nutritional effect to human health. Moreover its
price is cheap compared to other commercialized chips sold in the market.

PLANS ON MAKING THE VIDEO
The researchers will make the video in one of the researcher's houses. The content of
the video is the procedure on how to make nutritional chips out of Pansit-Pansitan (Peperomia
Pellucida). The whole procedure of making the nutritional chips will be recorded as well as the
preparation of materials to promote a proper and clean environment making the Pansit-
pansitan nutritional chips- it is to ensure that it is clean, healthy and most importantly edible.

First, the researchers will collect nurtured Pansit-pansitan in the researcher's backyard
then clean it thoroughly- only the leaves and stem are the ones needed. Chop the collected
Pansit-pansitan. Next, mix all the ingredients needed like the flour, spices to taste and most
importantly, the main ingredient which is the shiny bush or Pansit-pansitan. Mix the ingredients
continuously until the dough is not sticky anymore and flatten the dough to easily cut the
dough into smaller squares. Lastly, deep fry the chips until the edges are golden brown.
