Aztec Gold Dry Rub

Ingredients

 ¼ cup finely ground coffee


 ¼ cup paprika
 2 Tbsp coconut sugar
 2 Tbsp sea salt
 1 Tbsp garlic powder
 1 Tbsp ground cardamom
 ½ Tbsp ground ginger

Directions

Mix all dry ingredients together in a large mixing bowl. Grind coffee, cardamom and ginger into a fine
powder.

King Kona Coffee Dry Rub

Ingredients

 2 Tbsp ancho chili powder


 2 Tbsp finely ground coffee
 5 Tbsp dark brown sugar
 2 Tbsp smoked paprika
 1 ½ Tbsp dried oregano
 2 tsp ground black pepper
 2 tsp ground coriander
 2 tsp ground ginger
 1 Tbsp kosher salt

Directions

Mix all dry ingredients together in a large mixing bowl. Grind coffee, coriander and ginger into a fine
powder.
King Kona Coffee HOT Dry Rub

Ingredients

 2 Tbsp Garlic powder


 2 Tbsp ground coffee
 2 Tbsp paprika
 2 Tbsp onion powder
 1 Tbsp ground cumin
 1 Tbsp salt
 1 Tbsp brown sugar ( 1/2 Tbsp Dark / 1/2 Tbsp Light)
 ½ Tbsp cayenne pepper

Directions

Mix all dry ingredients together in a large mixing bowl. Grind coffee into a fine powder.

All American Dry Rub

Ingredients

 ¼ cup dark brown sugar


 ¼ cup paprika
 ¼ Tbsp cayenne pepper
 2 Tbsp ground black pepper
 1 Tbsp ground white pepper
 3 Tbsp kosher salt
 2 Tbsp garlic powder
 2 Tbsp onion powder
 2 tsp celery seed
 1 tsp ground thyme
 1 tsp cumin
 1 tsp cocoa powder

Directions

Mix all dry ingredients together in a large mixing bowl.


Longhorn Dry Rub

Ingredients

 ¼ cup kosher salt


 3 Tbsp unrefined cane sugar
 3 Tbsp brown sugar (2 Tbsp dark & 1 Tbsp light)
 1/16 cup chili powder
 1/8 cup New Mexico chili powder
 1 Tbsp chipotle chili powder
 2 Tbsp ground black pepper
 2 Tbsp ground cumin
 1 Tbsp sweet paprika
 1 Tbsp onion powder
 1 Tbsp garlic powder
 1 Tbsp celery salt
 1 Tbsp dry mustard
 ½ tsp cayenne pepper

Directions

Mix all dry ingredients together in a large mixing bowl.

Memphis Dry Rub

Ingredients

 2 Tbsp brown sugar (1 Tbsp dark / 1 Tbsp light)


 2 Tbsp ground black pepper
 2 Tbsp paprika
 1 ½ Tbsp ground white pepper
 1 ½ Tbsp red pepper flakes
 1 ½ Tbsp salt
 1 Tbsp chili powder
 1 Tbsp garlic powder

Directions

Mix all dry ingredients together in a large mixing bowl.


All Meat Dry Rub

Ingredients

 2 ½ Tbsp dark brown sugar


 2 Tbsp paprika
 2 tsp mustard powder
 2 tsp onion powder
 2 tsp garlic powder
 1 ½ tsp dried basil
 1 tsp ground bay leaves
 ¾ tsp ground coriander seed
 ¾ tsp ground savory
 ¾ tsp dried thyme
 ¾ tsp ground black pepper
 ¾ tsp ground white pepper
 1/8 tsp ground cumin

Directions

Mix all dry ingredients together in a large mixing bowl.


All American Meat Sauce

Ingredients

 1 lb ground beef
 6 oz tomato paste
 1 Tbsp sugar
 1 Tbsp yellow mustard
 1 Tbsp dried minced onion
 2 tsp chili powder
 1 tsp Worcestershire sauce
 1 tsp salt
 ½ tsp celery seed
 ½ tsp ground cumin
 ¼ tsp black pepper
 1 cup water

Directions

1. In a skillet, brown and crumble ground beef.


2. Add all ingredients.
3. Bring to a gentle boil then reduce heat to low and simmer until thickened, about 30 minutes.

All American Spicy Meat Sauce

Ingredients

 1 lb ground beef
 1/3 cup beef stock
 5 oz canned tomato sauce
 ½ cup ketchup
 1 Tbsp yellow mustard
 2 ½ tsp chili powder
 ½ tsp kosher salt
 ½ tsp black pepper
 ½ tsp onion flakes
 2 cloves minced garlic
 ½ tsp dark brown sugar

Directions

1. In a large skillet over medium heat add ground beef, beef stock, tomato sauce, ketchup and
mustard. Break up the meat with a spatula.
2. Add in chili powder, salt, pepper, onion flakes, garlic and dark brown sugar. Stir together and
cook for about 25 minutes until chili is thick enough to spoon on your hot dogs.

Hot Weiner Meat Sauce (The Longhorn Dog)


Ingredients:

 6 cups water
 8 oz ground hotdogs (I prefer all beef)
 1/2 cup cornstarch (dissolved in a little cold water)
 1 tbls paprika
 1 tbls chili powder
 1/4 cup white vinegar
 1 tsp sea salt
 1/2 tsp onion powder
 1/4 tsp white pepper
 1/2 tsp oregano
 1/2 tsp cinnamon
 1/4 tsp dried thyme leaves
 1 tsp crushed red pepper flakes a few grinds of fresh black pepper

Directions

1) Bring everything to a boil, except the cornstarch.


2) Let simmer for 45 minutes, then slowly add the cornstarch mixture, stirring constantly.
3) Bring back to a boil, and keep stirring.
4) Taste along the way, adjusting the salt or pepper as you like it.
5) Serve on your favorite hot dog, with brown mustard, diced onion, in a steamed hot dog bun.
6) This sauce will be thin, it is supposed to be, it is not a "chili dog" recipe. The sauce will
thicken as it cools.
7) It freezes well.
Southern Meat Sauce
Ingredients

 1lb Hamburger Meat
 8oz Tomato Sauce
 1 16 oz water
 2tsp Chili Powder
 1/2tsp Cumin
 1tsp Paprika
 1/4tsp Garlic Powder Can substitute 1 clove of fresh garlic
 1/4tsp Cayenne Pepper Can omit if you do not want it spicy
 1med Onion Chopped fine
 1/2cup Ketchup
 1tsp Worcestershire Sauce
 2tbsp Prepared Yellow Mustard
 1tbsp olive oil
 1/2tsp Salt to taste
 1/2tsp pepper to taste

Directions
1. Start with a small stock pot on medium high heat and add olive oil to the pot.
2. Wait till oil is hot then add the chopped onion.
3. After onion is translucent (about 5 mins) add your 16 ozs of water.
4. Next, add the hamburger meat to the water and break the meat apart with a wooden spoon.
The water will help the meat to break down real fine.
5. Bring water to a boil then reduce heat to medium low.
6. Add remaining ingredient and stir.
7. Continue to check periodically and stir chili.
8. Simmer till chili has reduced by half or you reach the desired consistency you would prefer.

Recipe Notes

Make sure you do not brown your meat first as you will add the raw meat to the water. It will have a
slightly undesirable color for a few mins but hold tight and it will turn out perfect. If you would like to
simmer longer, just add a little more water till you are done. This will make a fine texture chili that is
perfect for hot dogs and hamburgers.
Cajun BBQ Sauce

Ingredients

 1 tsp salt
 ½ tsp black pepper
 1 Tbsp paprika
 4 Tbsp light brown sugar
 1 med onion (minced)
 1 cup tomato puree
 ¼ cup butter
 ½ tsp Cajun spice

Directions

1) Combine all the ingredients in a sauce pan over medium-high heat.


2) Bring to a boil, stirring frequently to dissolve the brown sugar.
3) Reduce the heat to simmer and let cook for about 2 hours or until the sauce is very thick.

Argentinian BBQ Sauce

Ingredients

 6 cloves garlic (finely chopped)


 ½ cup parsley (chopped)
 ½ cup oregano
 ¼ cup dried red pepper flakes
 1 cup boiling water
 ½ cup white vinegar
 ½ cup olive oil
 Salt and pepper to taste

Directions

1) Mix the ingredients in the above order and then let it cool.
2) Once cooled, put in a sealed jar and store in the refrigerator for at least 12 hours.
Blackened Dry Rub

Ingredients

 1 ½ Tbsp paprika
 1 Tbsp garlic powder
 1 Tbsp onion powder
 1 Tbsp ground dried thyme
 1 tsp ground black pepper
 1 tsp cayenne pepper
 1 tsp dried basil
 1 tsp dried oregano

Directions

1) Mix all ingredients in a bowl until evenly mixed.
