Nutrition: The intake of food and the processes that convert food substances into living
matter are known as Nutrition. Nutrition comprises the following steps:

1. Ingestion: The intake of food into the mouth.


2. Digestion: The process in which large food molecules are broken down into soluble
and diffusible molecules that can be absorbed into the body cells.
3. Absorption: The process in which digested food materials are taken into body cells.
4. Assimilation: The process in which some of the absorbed food materials are
converted into new protoplasm or used to provide energy.
5. Defecation: The process in which dietary fibres and other undigested substances
pass out of the body through anus as faeces.

Digestion involves two processes:

i. Physical Digestion: Process which involves the breaking down of food into small
molecules by the chewing action of the teeth, in the mouth.
ii. Chemical Digestion: Process which involves breaking down of large food molecules
by the action of digestive enzymes.

Digestive Enzymes: Chemicals produced by the wall of the gut which breaks down large
food molecules into smaller ones that can be absorbed into the blood. Each type of food
needs a different enzyme to break it down.

Breaking down of Carbohydrates:

1. Amylase (Carbohydrase enzyme) cuts the Starch (carbohydrate) present in rice, bread and potato
into separate glucose molecules

2. Glucose molecules pass through the cells of the gut wall.

3. Then it passes through the blood vessel walls into the bloodstream.

4. Blood carries the glucose to the cells of the body for assimilation.

Alimentary Canal or Gut: The whole passage along which food passes through the body
from mouth to anus during digestion. The mammalian digestive system consists of the gut
and the glands associated with it. The gut is a 7m coiled tube inside our abdominal cavity.

Parts of the alimentary canal/ Organs of digestive system:

1. Mouth and the Oral cavity or Buccal cavity: Food is first taken inside the mouth and
then leads to the buccal cavity. Inside the buccal cavity there are:
a) Four types of teeth: Incisors, Canines, Premolars and Molars are the four
types of teeth we have. They break up the food into small pieces.
b) Tongue: To taste and mix the food with saliva .
c) Three pairs of salivary glands: To make the food slippery and digest starch by
producing the enzyme salivary amylase.

2. Pharynx: It is the common passage for food and air. There is a possibility of food
passing into the windpipe (trachea) during swallowing. This is usually prevented by a
piece of flap-like-cartilage called the epiglottis.
3. Oesophagus: It is a long tube like structure which carries food from the mouth to the
stomach. It does not secrete any digestive enzymes. The bolus is squeezed past the
epiglottis, into our gullet or oesophagus. Alimentary canal has circular muscles in it’s
wall. These muscles contract behind the bolus and relax in front of it. This
contraction and relaxation of circular muscle is called peristalsis. It keeps the food
moving.

4. Stomach: From the gullet, food passes into a muscular bag called stomach. Gastric
juice is released from the walls of the stomach. Gastric juice is made up of:
a. Hydrochloric acid (HCl): to kill the germs in good and provide an acidic
environment for the enzymes to work in stomach.
b. Protease enzymes- Enzymes known as Rennin and Pepsin are present to
digest protein.
5. Pancreas: Leaf like structure which produce pancreatic juice which contains protease
to digest protein, amylase to digest carbohydrates and lipase to digest fats and oils.
6. Liver: The largest gland of our body. It secretes bile. Bile is a greenish yellow liquid
containing bile salt and bile pigment. It has no enzyme. It breaks up the oil droplets
into an emulsion to make them easier to digest. It neutralizes stomach acid to get
the food ready for digestion.
7. Small Intestine: It consists of:
a. U- shaped Duodenum: Chemical digestion occurs here. It secretes
intestinal juice which contains lipase, amylase and protease.
b. Jejunum and ileum: responsible for absorbing nutrients to complete the
digestion.

In Small Intestine, three liquids are mixed:

a. Pancreatic juice: this juice from pancreas contains protease to digest proteins,
amylase to digest starch and lipase to digest fats and oils.
b. Bile: Bile from the liver breaks up the oil droplets into an emulsion to make them
easier to digest. It also neutralizes stomach acid to get food ready for pancreatic and
intestinal enzymes.
c. Intestinal juice: this juice from the lining of intestine contains more protease,
amylase and lipase, which completes the digestion. These turns proteins into amino
acids, carbohydrates into glucose, and fats and oils into fatty acids and glycerol.

By the help of these three liquids, in small intestine all three nutrients proteins,
carbohydrates and fats are digested completely.

8. Large Intestine: Undigested food passes into the colon where water is absorbed. It
becomes a nearly solid waste called faeces.
9. Rectum: Faeces are stored in the rectum temporarily before defecation.
10. Anus: Faeces pass out of the body through the anus.
