L’idée ?
Elle nous est venue simplement en nous inspirant de l’esprit de Noël, ce qui nous a
amenés à représenter l’emblématique sapin de Noël et ses décorations.
La forme ?
Elle est représentative du sapin de Noël et de ses fameuses boules rouges brillantes.
On a rajouté des paillettes au chocolat
pour intensifier le côté festif de Noël.
Les saveurs ?
Nous avons décidé de rester fidèles aux saveurs classiques d’une bûche de Noël, c’est-
à-dire d’allier la douceur de la vanille à la chaleur du chocolat tout en ajoutant une
touche de tonus grâce à la framboise et aux pralinés.
Attention
Pour réussir la recette, veiller à respecter les courbes de température des glaçages
Mousse chocolat
Lait 160 g
Crème liquide 35 % MG 160 g
Jaunes d’oeuf 65 g
Sucre 30 g
Chocolat 63 % 220 g
Crème liquide montée 35 % MG 600 g
Faire une crème anglaise, la verser sur le chocolat et réaliser une ganache. Monter la
crème mousseuse et procéder au mélange pour obtenir une mousse chocolat.
Biscuit chocolat sans farine
Chocolat 63 % 400 g
Beurre 220 g
Jaunes d’oeuf 200 g
Blancs d’oeuf 400 g
Sucre 220 g
Maïzena® 40 g
Chantilly vanille
Crème fleurette 35 % MG 1 000 g
Sucre glace 60 g
Gousses de vanille 2 pièces
Gélatine 5 feuilles
Faire tiédir la crème pour pouvoir faire infuser la vanille, puis venir mettre le sucre
glace et finir avec la gélatine. Laisser au réfrigérateur pendant 12 heures minimum.
Croustillant praliné
Praliné noisette 450 g
Pâte de noisette 150 g
Feuillantine 300 g
Chocolat au lait 150 g
Faire fondre le chocolat à 45 °C, mettre le praliné et la pâte de noisette, bien mélanger
et incorporer la feuillantine. Puis étaler et mettre entre deux feuilles pour avoir une
épaisseur régulière. Détailler des rectangles de 50 cm de long et 6,5 cm de large qui
serviront à fermer le montage.
Confit framboise
Purée de framboise 400 g
Sucre 150 g
Sphère framboise
Purée de framboise 250 g
Gélatine 10 g
Crème liquide 35 % MG 190 g
Blancs d’oeuf 75 g
Sucre semoule 75 g
Glaçage rouge
Crème liquide 130 g
Nappage neutre 150 g
Eau 85 g
Gélatine 22 g
Sucre semoule 230 g
Glucose 230 g
Beurre de cacao 55 g
Colorant rouge QS
Chauffer l’appareil à pistolet à 45 °C et venir pulvériser les sapins et les bandes dès la
sortie du froid pour avoir un beau velours.
Faire une ganache avec l’extra noir et la crème fleurette et finir à 45 °C avec le glaçage
neutre. Ajouter les feuilles d’or et mixer.
Montage
Couler la mousse chocolat dans le moule à bûche. Sur le biscuit, venir incorporer le
confit framboise sur la base, puis venir mettre des boudins de chantilly et des
framboises fraîches et refermer avec le deuxième biscuit chocolat. Lisser le moule à
bûche avec la mousse pour compléter et finir avec la croustillante praliné. Après
congélation de la bûche, venir couler le glaçage noir dessus et dresser sur carton.
Glacer les sphères qui ont été collées auparavant et les glacer avec le glaçage rouge.
Venir pauser les sphères sur la bûche.
Décor
Étaler du chocolat tempéré sur un papier guitare et détailler deux sapins. Ne pas
oublier les deux bandes sur le côté de la bûche. Après cristallisation du chocolat,
mettre les éléments à pulvériser en vert.
My beautiful christmas tree
The idea?
The idea came when brainstorming ideas from the Christmas spirit. The idea was to
represent a Christmas tree and its decorations.
The shape?
The shape of a Christmas tree with its famous red balls. We added flakes of chcoolate
to intensify the festive spirit of Christmas.
The flavours?
We decided to stay true to traditional flavours of a yule log by combining the sweetness
of vanilla the warmness of chocolate while adding notes of raspberry and praline.
Careful
To correctly finish this recipe, take care to respect the temperatures of the glazes
Chocolate mousse
Milk 160 g
Cream 35% fat 160 g
Egg yolks 65 g
Caster sugar 30 g
Chocolate 63% 220 g
Whipped cream 35% fat 600 g
Make a crème anglaise and pour onto the chocolate to create an emulsion. Cool the
chocolate mixture and fold in the lightly whipped cream.
Melt the chocolate and butter to 45°C, add the starch and egg yolks. Whip the egg
whites
with the sugar and fold the two mixtures together. Spread 1,200 g per tray. Bake at
190°C
and once cooled cut rectangles of 50 cm long, by 6.5 cm wide for the base of the
finishing.
Vanilla chantilly
Cream 35% fat 1,000 g
Icing sugar 60 g
Vanilla beans 2 pieces
Gelatin 5 leaves
Warm the cream to infuse the vanilla, add the icing sugar and finish with the gelatin.
Leave to set for 12 hours in the refrigerator.
Praline crunch
Hazelnut praline 450 g
Hazelnut paste 150 g
Feuillantine 300 g
Milk chocolate 150 g
Melt the chocolate at 45°C and add the praline, hazelnut paste and fold in the
feuilletine.
Spread out in between two baking sheets to have a regular thickness. Cut rectangles 50
cm by 6.5 cm.
Raspberry confit
Raspberry puree 400 g
Caster sugar 150 g
Cook the puree with the sugar to 105°C, set aside for the finishing.
Raspberry sphere
Raspberry puree 250 g
Gelatin 10 g
Cream 35% fat 190 g
Egg whites 75 g
Caster sugar 75 g
Boil the cream and puree and add the gelatin. Whip the egg whites with the sugar and
fold into the previous mixture. Pour the mousse into 2.5 cm dome moulds. Once
frozen,
stick them together.
Red glaze
Cream 130 g
Neutral glaze 150 g
Water 85 g
Gelatin 22 g
Caster sugar 230 g
Glucose 230 g
Cocoa butter 55 g
Red colorant as needed
Heat the cream, glaze, water and soaked gelatin to 45°C and add the sugar. Boil for 1
minute and pour onto the glucose, cocoa butter, the colorant and use the glaze at 30-
23°C.
Heat all of the ingredients to 45°C and spray onto the Christmas trees and bands out of
the freezer to have a nice velvet effect.
Make a ganache with the chocolate and the cream and finish at 45°C with the neutral
glaze. Add the gold leaves and mix with a hand mixer.
Finishing
Pour the chocolate mousse into log moulds. On the sponge spread the raspberry confit
and pipe lengths of chantilly, placing fresh raspberries into the chantilly. Close with a
second sponge and smoothen with the chocolate mousse, finishing with the crunch.
After the log is frozen, pour the dark glaze on the top and place onto a cake board.
Glaze the spheres with the red glaze and place onto the top of the glazed log.
