TREASURED SMILES
The Second Quarter Chapel Outreach Program for 2018
Last May 25, 2018, the Holy Family Chapel of Tagaytay Highlands Country Club held its quarterly outreach program.
The children from Casa Miani San Jose Orphanage, together with other volunteers and staff from the orphanage, were
invited to visit the Club and enjoy a day of adventure at the Animal Farm and Camp Highlands.

The gleeful guests were welcomed at the Montana Hall. Where, they showcased their talents through singing their own
compositions, such as “No longer orphans”, “Maria, Ina ng mga Ulila,” and other songs. Amidst the joy of the performance,
their songs were so full of emotions and longing. Fun games were prepared by the Marketing Communications Team.
During the morning program, one of the members of our club, Mary Ann Gonzales, graced the event and personally
donated school supplies for the children.

Come midday, the group celebrated the Holy Eucharist as presided by head and priest-in-charge of the orphanage,
Rev. Fr. Joseph Mallari, CRS. In his homily, Fr. Joseph gave emphasis on the importance of “hope” as something that
he said we hold onto. “Hope is the one that makes continue moving forward despite so many struggles and sufferings
in life.” “Hope is the one that assures us that in the end, through God’s graces and goodness, everything will be okay.
Despite losing their parents or being abandoned by their families, God never forsakes the little children, for they have
a very special place in His heart.” In the last part of his homily, Fr. Joseph reminded everybody to be grateful even for a
very simple act of generosity. “Being grateful is to acknowledge the loving presence and generosity of God. We should
realize that we do not have a right to demand anything from God for we are only His creatures. What we have and what
we receive is because of His willingness to provide us of our needs.” Lastly, Fr. Joseph expressed his heartfelt gratitude
to the Tagaytay Highlands International Golf Club Inc. for supporting the orphanage and opening its doors to them.
He expressed his gratitude to all the members of the Club for all the donations and assured that the Casa Miani San
Jose Orphanage will always include Tagaytay Highlands in their prayers. Truly, seeing the smiles of those children is an
experience that someone will always treasure and keep in his heart.

T
he Club is pleased to have on its management team,
Rhoneil Cousart, the new Golf Director. With over 20
years in golf, Rhoneil started as a junior golfer way
back in the 80s. A seasoned golf coach in De La Salle Zobel
Campus, he is very much active in his community in Ayala
Alabang as a regular golfer and a restaurateur with an eye
for photography. For the past six years, he has been a Golf
Referee for the National Golf Association of the Philippines-
Pasig.

More than a decade ago, Rhoneil was part of the Tagaytay

Highlands Men’s Federation Team, and from then on, he
seemed to have been in love with the natural charm of the
Club.

He admires Tagaytay Highlands Golf Course for its view,

weather, and condition as if one is golfing in another country.
“While Midlands is equally scenic, its remarkable offer is the
picturesque Taal Lake and Volcano.” Rhoneil said. He added
“The third nine is a short but very a testy course which takes a
while to appreciate. It’s the type of course that you will either
love or hate, no in between a true challenge to any golfer.”

Golf Director Rhoneil Cousart

16 | HIGHLANDS VIEW
Surrounded by this unparalleled view, he usually heads out
for the course shortly after he arrives early in the morning.
He needs to check on the course condition and to make
sure that everything is in its rightful place. After this, he
balances site inspection with tons of paper work, targets,
and meetings. Despite the grueling schedule, golf keeps
him inspired. With much joy he said. “Golf has always been
my passion. For me to start my day in the golf course is truly
a blessing.”

He cannot resist taking some shots with his camera. From

sunrise to sundown, the greens glisten its rich peridot color
against the blue sky. Resplendent horizon shines every
moment in time, one will always be mesmerized and relaxed
to play the game.

As a true professional, he shared his management style:

“Since I started in THIGCI, I studied its system. [And for]
every system that is working, I didn’t change it but for those
that had room for improvement, I implemented change. In
short, my style is not to rock the boat too much and try to
run things in harmony.”

HIGHLANDS VIEW | 17
Designed to create a balance in playability and aesthetics, this
harmony is felt throughout the great views of Midlands. The vast
greens of the fairways are ingeniously commingled with a variety
of colorful flora adding depth and color to the perspective and
visual accord.

Still with harmony in mind, he upholds the best relationship with

the Tagaytay Highlands and Midlands members and makes his
best to keep every golf game more enjoyable for them. Listening
to feedback is key in golf club management. He stated, “[and]
with the help of our golf tournament committee, we are trying
to elevate each and every tournament.” Much is in store for the
anniversary, “we are currently planning on creative ways to make
it memorable”.

The management and club members are thrilled to have Rhoneil

on board. So far, he has successfully launched two major
tournaments in the Club, the Presidents Cup 2017 and the Belle
Cup 2018 with great registration turn out, positive feedback,
and a level of excitement for golf beyond compare. May he also
continuously chronicle his daily journey in the course through
his photographs. The Highlands View editorial team truly
appreciates this. Welcome to the Club!

WEDDINGS AT THE MIDLANDS
the perfect setting for a memorable wedding
Words: Jie Pambid

Clear blue skies set the scene for the chapel providing a crisp backdrop against the rustic character of the architecture.

Y
es… destination weddings are now a thing. The
concept of having the most memorable day
in your life set outside the city is proving to be
quite a trend. For one, a wedding outside the bustling
metropolis guarantees an intimate, reserved, and stress-
free ambiance. Destination weddings limit the number
of people attending the event guaranteeing controlled
and hassle-free proceedings. This being the case, the
choice of an out-of-town locale will undoubtedly affect
the mood of not only the bride and the groom but of the
wedding guests as well. In a destination wedding, the feel
is calm and restful, devoid of unnecessary concerns like
traffic, unforeseen delays, and the mad rush of “getting
to the church on time” because chances are, everyone’s
already there at least a day before. Second, the choice
of venue also offers a contained and select atmosphere
where guests are treated to a certain sense of exclusivity
and privacy. The mood is classy and sophisticated, yet
the feel is familiar and welcoming. Chances are, in a
destination wedding, everybody knows everybody else
thus evoking a warm and congenial tone ensuring that
everyone will have a good time. And lastly, there is just
something about a destination wedding that elicits visions
of romance, exuding a nostalgic and timeless appeal that
will forever be remembered. A very popular destination
wedding choice is Tagaytay and the Midlands in Tagaytay
Highlands offers not one but two wedding options.

An arch within an arch frames the entrance of the chapel giving a

It is recommended that garden weddings at

the Midlands Gold Clubhouse be set in the late
afternoon to experience the cool and chilly climate
that Tagaytay is famous for while at the same time
appreciate the sunset and the changing hues of
the sky that come with the dusk. Consequently,
receptions at the function room highlight and
capture the changing of the light from the
setting sun through its floor to ceiling windows,
complemented by the warm glow of the candlelight,
exuding an elegant and dramatic appeal.

THE BEST OF BOTH WORLDS…

Whether it’s a solemn ceremony or an outdoor

gathering, weddings at the Midlands in Tagaytay
Highlands are events that capture the essence of
destination weddings. Exclusive, intimate, with the
right amount of warmth and familiarity, the Madre
De Dios Chapel and the Midlands Golf Clubhouse
offer a one-of-a-kind experience. These venues offer
a contrasting take on weddings – from the nostalgic
and timeless church ambiance replete with the
formality and pomp of a traditional formal wedding
to the casual and carefree vibe of a garden setting
where trend replaces tradition and nature becomes
part of the entourage. At Midlands in Tagaytay
Highlands, there is the option of experiencing the
best of both worlds.

ince opening its gates for stylish weddings in 2006,
Tagaytay Highlands has easily become among the
top destinations of choice for couples who want to
tie the knot in the most special of ways. The exclusive Club
boasts of natural sceneries, which are beyond compare
with all other wedding destinations in the country.

In the Luxe City issue of Wedding Essentials magazine this

year, several well-known fashion designers (including Jazel
Sy, Catherine Cavilte, Rafael Gonzales, Francis Libiran,
Edwin Tan, Patrick Lazol, Chino del Pilar, Paul Tenorio,
Khai Villanueva, Russ Cuevas and Kat Corpus) created
a combined 25 wedding gowns created specifically for
Tagaytay Highlands, which is now walking through the Gowns by Paul Tenorio, Catherine Cavilte, Khai Villanueva,

aisles towards its 25th year.

All the designs took on the classics and vintage feel, cozily
complementing the breathtaking venue. All designers opted
to use free-flowing laces and soft fabrics to accentuate the
beauty of their creations, which in turn blend in perfect
harmony with the lush backdrop.

“Tagaytay Highlands was the perfect backdrop for the shoot,

since it enhanced all the gowns,” said Wedding Essentials
Editor-in-Chief Kitten Zapata. “The sprawling greens and
the majestic woods made the editorial look like it was shot
in a different country.”

T
he Gallery at Tagaytay Highlands opened
its doors to one of South Luzon’s prominent
artist Noel Bueza. Harnessing his skills for
over 20 years with several solo exhibitions in
the Manila art scene and in Hong Kong, he has
mastered his impeccable pen and ink drawings
with great deal of artistic technicality. With
abstraction of lines forming an image, this
medium allows the artist to create contrasts in
rendering visuals.

Known for his church sketches from all over the

country, Bueza momentarily captured these
in various strokes and shades. The artist uses
varied techniques in drawing lines like hatching,
cross-hatching, cross contour, stippling, and
ink wash to create the necessary layers and
depth forming the imagery. His works account
some of the church museum collections and
art collectors, whose fond memories of these
churches give life to their nostalgic living
spaces.

Just a few years ago, the artist ventured into stainless
steel art, sculpting, and moving metal pieces into still
life of nature. The composition’s dynamism defies the
rigidity of the medium. With his playful painting series
depicting vibrant koi fishes, he froze these lovely
creatures into gleaming pieces of art, yet still seemingly
moving across the pond amidst lotus pods and flowers.

The summer exhibit collection is a showcase of the

artist’s changing styles while retaining his true passion
for minute detail. From structural sketches to landscape
and panoramic renderings, he presented Tagaytay
Highlands in various iconic scenes with sunlit vistas
that are familiar to any member’s memory. Interspersing
his framed pen and ink works are his metallic biota
portraying the tranquility of oriental garden sensibilities
matching the serenity of the Club.

Some of his artworks are now part of Tagaytay

Highlands’ art collection. These will grace the walls of
some selected suites.

LUCKY EIGHT
Usher in some good fortune this Ghost month with eight auspicious
and mouthwatering dishes from Highlands China Palace
Words: Marilen Fontanilla

T
he seventh lunar month is a time filled with
superstitious beliefs in Chinese culture.
Folklore states that the gates of hell will be
open, allowing ghosts to cross over until the end
of the month. Family members usually do sacrificial
offerings to their deceased ancestors and relatives,
honoring them with delicious food three times a day.

A number of taboos meant to ward off bad luck

during the Ghost month include not whistling or
singing (as this may draw the ghost’s attention),
avoiding going out at night and not patting others
on the shoulder. Avoid wearing red, since the color
attracts ghosts, and do not pick up coins or money
found on the street. Do not hang clothes outside at
night. And don’t move houses or start a new business
at all. There are more beliefs, each one meant to
steer individuals away from possible misfortune.

service, an ornate oriental setting with exquisite
Cantonese fare prepared by the capable Executive
Chinese Chef Patrick Wong and his equally talented
culinary team. In fact, the restaurant proudly boasts
of being the only place in Tagaytay City offering
authentic Cantonese fare.

The hands-on and humble chef is known for using

only the best ingredients in his restaurant, even
sourcing it from overseas, which provides for an
exciting menu that is both comfortingly familiar to its
loyal customer base who frequent this establishment

AUSPICIOUS DINING

Chef Patrick recommends eight specialties from

China Palace’s extensive menu that combine
classical favorites with novel touches for a palatable
journey into Cantonese fare.

The exquisite Stir Fried Egg White and Shredded

Abalone is a refined innovation on the classic
egg white with dried scallops dish often found in
Cantonese restaurants. Each bite is an indulgent
combination of abalone slivers, delicately scrambled
egg whites and steamed broccoli florets, mounded
with salmon roe for a savory finish. With abalones
representing good fortune and eggs symbolizing
fertility and health, this is one dish that should be
slowly relished until the very last.

Chef Patrick recommends his latest creation,

Sautéed Prawns in Tangerine Peel Wine, especially
to seafood lovers. Lively flavors burst forth with
each mouthful, interplaying the zesty hints from
the citrus fruit with the softer spices underneath,
resulting in a tantalizing wine sauce coating each
prawn for a lovely seafood course. Prawns embody
liveliness, while tangerines bestow luck, wealth
and abundance. Wine adds everlasting friendship,
happiness and other wishes. The combination
of flavors makes for an irresistible repast and
encourages a clamor for more.

Chickens are part of the symbolism attached to

the dragon and phoenix, signifying good marriage
and coming together of families. The Stewed
Chicken with Wine Sauce in Hotpot certainly brings
loved ones together in a communal enjoyment of
this piping hot dish. Enticing aromas surround
the table once this slowly simmered creation is
served, promising a satisfying meal for everyone.
The lovely finish of the wine sauce brings out the
piquant essences from the marinade, for a joyous
experience all around.

The Suckling Pig Combination is an alluring menu

item, expertly plating together crisp suckling pig
cuts, century egg wedges, barbecued pork slices,
tender soy chicken and silken seaweeds in a simply
elegant platter. Each component offers diverse
tastes and textures for a wonderful feast worth
sharing.

Stir Fried Egg White and Shredded Abalone

is a modern twist on the classic Cantonese dish,
beckoning diners to taste more with each spoonful.

Birthday Miswa
hits all the right flavor notes, with a subdued seasoning
that allows the various ingredients to shine.

The roast items denote peace, while seaweeds are

associated with wealth and fortune. The barbecued
pork offers strength and abundant blessings while the
soy chicken is related to family, embodying reunion
and rebirth. The symbolism becomes more meaningful
when feasting on this premium selection.
Noodles have long been the harbingers of long life.
The Birthday Miswa continues to herald the same
message, with Chinese guests even cutting a strand
of noodle for good luck and as a symbol of longevity
and happiness. The filling fare hits all the right flavor
notes, with a subdued seasoning that allows the various
ingredients to shine. This includes quail eggs which
gives fertility, black mushroom, carrots and shrimp for
seizing opportunities, good luck and fortune, a sprinkle
of peanuts for health, long life, birth, prosperity and
continuous growth. A generous helping satiates even
the pickiest eater with its superb blend of ingredients
and flavors.

Pork Spring Rolls are another staple in Cantonese

cuisine. Highland China Palace’s version is clearly a
nod to the traditional dish, but expertly rendered with
premium ingredients for an appetizing morsel that has
you reaching for more. Deep-fried to perfection, each
roll reveals the care given to its preparation, with evenly
minced premium pork and finely diced vegetables.
Even the homemade dipping sauce delicately smothers
each roll for an unforgettable bite. Enjoy this with the
other first-rate dim sum choices on the menu.

Spring rolls symbolize wealth, as they resemble gold

bars and are usually eaten on the first day of spring. Pork
gives strength, wealth, abundance and blessings with
black mushroom symbolic for seizing opportunities.
Perhaps more spring rolls will direct good fortune the
diner’s way.

Assorted Vegetables with Bamboo Pith offer a flavorful

respite, with crisp and fresh young corn, bamboo pith,
black fungus, bamboo shoot, Taiwan pechay, carrots
and mushrooms lightly finished with oyster sauce for a
deliciously healthy alternative. The flawless execution
of this dish is another demonstration of Chef Patrick’s
talent, showcasing quality ingredients with the deft
touch of a skilled chef, employing restraint with the
seasonings for an impeccably tasty mouthful.

It is believed that black fungus and bamboo pith

represent long life while bamboo shoots symbolize
wealth, a new start and longevity as well as going
onward or up while assorted vegetables contribute to
family harmony.

Minced Pork with Lettuce is another example of Chef

Patrick’s attention to the finer details in every dish. The
minced pork with finely diced black mushrooms and
carrots top fried rice noodles, for a surprising crunch
that elevates it from the usual fare everyone is used
to. Wrapped with fresh lettuce, it is a delectable and
delightful nibble to partake of and can be savored on
its own or with rice. The simple yet timeless dish finds
new life with a few simple additions to its preparation.

Lettuce is often associated with wealth, since the

Chinese word for lettuce sounds similar to rising
fortune. Pork represents wealth, strength, abundance
and blessings. Carrot and turnips give good luck
while the fried rice noodles symbolize longevity and
happiness.

THE CHINA PALACE TOUCH

If there are some special dishes one wishes to request,

Chef Patrick is more than able and willing to cater to
special items outside of the regular menu.

Whether one wishes to ward off ill fortune or to simply

appreciate the refined and tasteful selections on its
menu, Highlands China Palace is the absolute choice
for authentic Cantonese fare.

Experience the elaborate cuisine of Chef Patrick

Wong in an equally elegant setting overlooking fertile
greenery and grassy mountains, offering a tranquil

with family and friends.
