As the UK recovers from its coldest December for
100 years and the deepest and most widespread
snow since the mid-1960s, the world is about to
set a record for its warmest year on record.
so how does that work?

At first glance it appears rather odd that we could say both


of these things but, in fact, it is true for a number of reasons.
Our country is very small compared to the rest of the
world so what happens here is not a reliable guide to what
may be happening elsewhere. Temperatures around the
world can vary enormously (known as global variations) and,
for every area experiencing much colder weather than usual,
there is another enjoying warmer weather. You can see this
with a glance at the map here showing where the hotter
and colder parts of the world were during December 2010,

how can a cow in a field be so important to our diet? From grass
to grub, we follow the flow from a dairy farm to investigate how
marvellous milk can be!
In the UK, 13.2 billion litres of milk are produced every year. That’s enough to
fill 5,280 swimming pools! But what do we do with all that milk, and why is it so
important for our health?
Of the raw milk taken from cows in the UK, 53% goes into shops as milk in its various
full-fat and skimmed forms. The next biggest use of milk, 27%, is for making cheese.

There are over 16,400 dairy producers in the UK and each one of their cows makes an
average of 7,084 litres of milk every year. That’s nearly 12,500 pints from just one cow!

it starts with a ‘moo’ and ends in your mouth, but what happens to the milk to turn it into yogurt?

keep the milk cool and fresh.

Once it gets to the factory, the milk is


homogenised, which means that the
cream is broken up and spread evenly
throughout the milk. This helps to stop a
creamy layer forming at the top.

The milk is heated to kill any harmful bacteria, then


cooled down again. Harmless ‘friendly’ bacteria are
then added. The two most commonly used are called
Lactobacillus bulgarius and Streptococcus thermophilus.
The bacteria then start to ferment the milk, by turning the
