DIRECTIONS
1. Bake French fries according to package directions until crispy. Preheat oven to

DIRECTIONS
1. Preheat oven to 425°. On a large baking sheet, bake French fries in a single layer
according to package instructions.
2. Meanwhile, in a large skillet over medium heat, heat oil. Add onion and cook
until tender, about 5 minutes, then add garlic and cook until fragrant, about 1 minute.
Stir in ground beef, chili powder, and paprika, then season with salt and pepper. Cook
until beef is no longer pink in center, about 6 minutes. Drain fat.
3. Top the French fries with Monterey Jack and bake until the cheese is melted and
bubbly, about 10 minutes more.
4. Meanwhile, make spicy sour cream. Whisk together sour cream and hot sauce
until smooth.
5. Sprinkle cheesy fries with jalapeños and parsley then drizzle with spicy sour

1. Preheat oven to 350°. In a large ovenproof skillet, add about a third of the
French fries in a single layer. Top with about a third of the cheese. Repeat twice more
with remaining fries and cheese. Bake until the cheese is melty and the fries have
crisped up even more, 12 to 15 minutes.
2. Make gravy: Cook sausage in a medium skillet over medium heat until browned
all over. Sprinkle flour over the sausage and cook 1 minute. Pour over milk and bring
mixture to a boil. Reduce heat and simmer until very thick, about 5 minutes. Season
with salt, pepper and cayenne. Remove from heat.
3. Fry eggs: In a large skillet (preferably cast-iron) over medium heat, heat olive oil.
Crack eggs into pan, spreading them apart as far as possible, then pour about 2
teaspoons of water around the eggs. Cover skillet with a large, tight-fitting lid and cook
until the whites are set, 3 to 4 minutes.
4. Arrange eggs over the cheesy French fries, then drizzle with gravy and garnish
with chives. Serve warm.

10. Preheat oven according to French fry package directions. Slice steak against the
grain, on the diagonal, into thin 2-inch-long strips.
11. In a large bowl, whisk together olive oil, rosemary, Dijon, and Worcestershire,

1. Preheat an oven to 350 degrees F. Line a 9 x 13 inch baking pan with parchment
paper.
2. Mix together the flour, cocoa powder, and salt together in a small bowl. Set
aside.
3. In a medium saucepan, melt the chocolate and butter over a double boiler. Mix
the sugar and eggs together, then add to the melted chocolate.
4. Stir in the flour mixture into the chocolate mixture and mix until there are no
lumps. Pour the batter into the baking pan and spread evenly.
5. Bake for about 15 - 20 minutes, or until no longer jiggly. Remove from oven and
allow to cool completely.
6. Cut into thin fry-like shape (I cut the pan in half lengthwise, then several times

15.CHORIZO FRENCH FRY NACHOS

1 large white onion cut into small dice
1 1/2 pounds frozen french fries
1 tube of Cacique Beef Chorizo9oz
3/4 - 1 pound ground beef

1. Heat the olive oil on a pan and add the diced onions.
2. Cook on a medium heat until they start to caramelize and turn brown, about 20
minutes.
3. Lay the frozen french fries on a large baking tray and cook as per the manufacturers
instructions.
4. In another pan, cook the chorizo and ground beef together, drain any grease that
may appear leaving only the meat.
5. Make the chipotle crema by adding the chipotle powder and cumin to the crema and
stirring until combined. Set aside.
6. Once the french fries are cooked, adjust the oven temperature to 425 degrees F.
7. Center the french fries in the middle of the baking tray and arrange the chorizo all
over the fries.
8. Top with the diced onion and both types of grated cheese.
9. Place back in the oven and bake for about 5 minutes and the cheese has fully
melted.
10. Drizzle the crema over the melted cheese and sprinkle with the chopped cilantro.

Preheat oven 425°F. Line baking sheet with aluminum foil and pour fries in an even layer.
Once oven it preheated place baking sheet in oven and bake 26-28 minutes until desired
color and crispness are reached, stirring 1/2 way between bake time.
In a large (10 inch) skillet over medium-high heat cook ground beef, until cooked through.

1. Nothing special about french fries. Just make some the way you want them,
wedges work too.
2. Add oil to a pan and heat over medium heat. Add onion and sauté for 1-2
minutes.
3. Add sage, salt, mushrooms and sauté until mushrooms are browned or
however you like them.
4. Add wine and cook until it almost evaporates. Stir in chicken stock and simmer
until reduced to two cups, 10-15 minutes.
5. Combine flour and a couple of tablespoons of cooked stock and stir until
becomes smooth. Add the flour mixture to pan; return to boil then reduce heat
and simmer for 2 minutes until lightly thickened.
6. Remove from heat and stir in butter and pepper.
7. Place the french fries in a plate of your choice and top with cheese curds. Pour
hot mushroom gravy over the cheese and serve.

28 ounces frozen shoestring potato fries
Vegetable oil for frying
5 garlic cloves minced or crushed
1/4 cup flat Italian parsley minced
1 tablespoon extra virgin olive oil
1/2 teaspoon fine sea salt
1/2 teaspoon ground black pepper
3/4 cup shredded cheese (your choice, I used an Italian blend)

1. Preheat oven to 350 degrees. Line a baking sheet with aluminum foil and coat with cooking spray.
2. Prepare French fries according to package directions for either frying or baking. If frying, do it 2-3
batches and watch out for splatter. Hot oil does not like cold, frozen fries. Remove to a paper towel
lined plate to drain while you prepare the spices.
3. In a large mixing bowl, combine garlic through black pepper and give it a mix. It will all sticky
together at this point, but will break apart as soon as you toss the fries. So you guessed it, the next
step is to toss the French fries!
4. Spray the inside of metal cans (soup cans, tomato sauce, etc) with cooking spray. Place on the
baking sheet. Stuff a pinch of French fries into your can; just enough to cover the bottom. Sprinkle a
pinch of cheese over the fries and continue to layer, ending with an additional sprinkle of cheese.
Pack fairly tight and be generous with the cheese, it is the "glue" to making your tower stay upright.
5. Bake for 10 minutes, or until cheese has melted. Using a large, wide spatula, transferring stack,
metal can and all to your serving plate. Slide the spatula under and carefully transfer. Now carefully
pull the metal can up and off.
6. Admire your French fry construction and enjoy your Garlic Parsley French Fry Tower!
