DIRECTIONS

1. Bake French fries according to package directions until crispy. Preheat oven to
350 degrees F.
2. In an oven-safe skillet, layer half the fries. Top with half the cheddar and

3. Repeat with remaining French fries and toppings.

2. Bacon Pickle Fries

12 pickle spears
12 strips of bacon
1/4 c. ranch dressing

DIRECTIONS

1. Preheat oven to 425°.


2. Wrap each pickle spear in bacon. Place the bacon-wrapped pickles on a baking
sheet, seam side-down.
3. Bake until the bacon is cooked through and crispy, 12 to 15 minutes, turning
halfway if needed.

3. French Fry Nachos

INGREDIENTS
1 lb. bag frozen french fries
1 tbsp. extra-virgin olive oil
1/2 onion, chopped
2 cloves garlic, minced
1 lb. ground beef
1 tsp. chili powder
1/2 tsp. paprika

1/2 c. sour cream

DIRECTIONS

1. Preheat oven to 425°. On a large baking sheet, bake French fries in a single layer
according to package instructions.
2. Meanwhile, in a large skillet over medium heat, heat oil. Add onion and cook
until tender, about 5 minutes, then add garlic and cook until fragrant, about 1 minute.
Stir in ground beef, chili powder, and paprika, then season with salt and pepper. Cook
until beef is no longer pink in center, about 6 minutes. Drain fat.
3. Top the French fries with Monterey Jack and bake until the cheese is melted and
bubbly, about 10 minutes more.
4. Meanwhile, make spicy sour cream. Whisk together sour cream and hot sauce
until smooth.
5. Sprinkle cheesy fries with jalapeños and parsley then drizzle with spicy sour

INGREDIENTS
1 bag frozen fries, baked according to package instructions
1 1/2 c. shredded Cheddar
1/3 lb. breakfast sausage, casings removed
2 tbsp. all-purpose flour
1 c. whole milk

DIRECTIONS

1. Preheat oven to 350°. In a large ovenproof skillet, add about a third of the
French fries in a single layer. Top with about a third of the cheese. Repeat twice more
with remaining fries and cheese. Bake until the cheese is melty and the fries have
crisped up even more, 12 to 15 minutes.
2. Make gravy: Cook sausage in a medium skillet over medium heat until browned
all over. Sprinkle flour over the sausage and cook 1 minute. Pour over milk and bring
mixture to a boil. Reduce heat and simmer until very thick, about 5 minutes. Season
with salt, pepper and cayenne. Remove from heat.
3. Fry eggs: In a large skillet (preferably cast-iron) over medium heat, heat olive oil.
Crack eggs into pan, spreading them apart as far as possible, then pour about 2
teaspoons of water around the eggs. Cover skillet with a large, tight-fitting lid and cook
until the whites are set, 3 to 4 minutes.
4. Arrange eggs over the cheesy French fries, then drizzle with gravy and garnish
with chives. Serve warm.

INGREDIENTS
1 can refrigerated biscuits, such as Pillsbury Grands
Vegetable oil, for frying
1/2 c. sugar
1 c. chocolate chips, melted
1/4 c. rainbow nonpareils or sprinkles

DIRECTIONS

1. Roll out each biscuit until 3 to 4" long. Slice into strips.
2. Heat 1" vegetable oil in a large pot over medium-high heat until slightly
bubbling. Add biscuit strips and fry until golden, turning once, 2 minutes. Transfer to a
paper towel-lined plate.
3. Roll donut strips in sugar and dip in melted chocolate, then top with sprinkles.
Serve immediately.
6. Steak Frite Bites

INGREDIENTS

1. 1 lb. flank steak, pounded inch thick


2. 2 tbsp. extra-virgin olive oil
3. 1 tbsp. freshly chopped rosemary
4. 1 tbsp. Dijon mustard
5. 2 tbsp. Worcestershire sauce
6. Kosher salt
7. Freshly ground black pepper
8. 1/2 (1-lb) bag frozen French fries
9. Steak sauce, for serving

DIRECTIONS

10. Preheat oven according to French fry package directions. Slice steak against the
grain, on the diagonal, into thin 2-inch-long strips. 
11. In a large bowl, whisk together olive oil, rosemary, Dijon, and Worcestershire,
then add steak and toss to coat. Let marinate in the fridge, at least 15 minutes and up
to 2 hours. When ready to grill, generously season with salt and pepper. 
12. Meanwhile, bake frozen fries according to package directions. Let cool slightly.  
13. Heat a grill to medium-high or heat a grill pan over medium-high heat. Grease
grates or pan with vegetable oil. Place four to five baked French fries on top of a piece
of steak and roll up; secure with a toothpick. Repeat until all steak and fries are used
up. 
14. Grill until charred, about 2 minutes per side for medium-rare. 
15. Drizzle with steak sauce before serving.

9. Campfire Garlic Fries

INGREDIENTS
16 oz. bag frozen french fries
extra-virgin olive oil
kosher salt
Freshly ground black pepper
3 cloves garlic, minced
1 c. shredded cheddar and monterey Jack mixture
2 green onions, sliced

DIRECTIONS

1. Heat coals over campfire, or preheat grill to medium-high.


2. Tear aluminum foil to make 4 large rectangles. On each foil piece, spread out
about 1/4 of the fries. Drizzle each serving with olive oil and toss with salt and pepper.
Fold each foil piece in half crosswise and seal the edges to make packets.
3. When the coals (or grill) are hot, add the foil packets. Cook (tossing occasionally
to avoid burning) until heated through and golden, about 20 minutes. Open packets and
add garlic to each. Toss and let the fries crisp over coals, uncovered, about 1 minute
more. Top each serving with cheese and cook until cheese is melty. Remove from coals
(or grill).
4. Garnish each serving with green onions.
10. Extra Crispy Oven Baked French Fries

Ingredients:

Seasoning Mix (DO NOT USE ALL  OF THE SEASONING FOR ONE BATCH, READ
INSTRUCTIONS):
 2 Tablespoons seasoned salt
 1 teaspoon chili powder
 1 teaspoon dried basil
 1/8 teaspoon cumin
 1/8 teaspoon black pepper
For the Fries:
 3 medium russet potatoes (russet are the best choice for perfect crispy fries)
 1-2 Tablespoons olive oil
 2 Tablespoons grated Parmesan (optional)

Directions:

1. Combine seasoning ingredients in a small bowl; set aside.


2. Wash and peel the potatoes. Cut off the ends. With a very sharp knife, cut the
potatoes into thin slices about 1/4 inch wide.
3. Add the fries to a large bowl and cover with cold water. Allow them to soak for at
least 30 minutes but they can soak for as long as overnight. (Place in the fridge if soaking
more than an hour).
4. After the fries have soaked, drain, rinse, and lay the fries on a paper towel lined
cooling rack to dry while you preheat the oven to 400 degrees. Blot the tops with
additional paper towels to absorb any excess moisture.
5. Line a baking pan with parchment paper or foil and spray with non-stick spray. Make
sure the previously used bowl is dry and add the potatoes to it, add 1-2 tablespoons of
oil and 1/2 – 1 Tablespoon of the seasoning mixture based on how much salt you prefer.
Toss around to mix.
6. Evenly line the baking pan with the fries in a single layer. Don’t overlap or they fries
won’t cook properly. Bake for about 30 minutes, flipping with a spatula once or twice
after 15 minutes of cooking. Increase heat to 425 degrees and continue baking until the
edges look a little burnt!
7. Sprinkle the fries with the other half of the seasoning mix and Parmesan cheese
(optional). Serve immediately.

INGREDIENTS

 1 large onion , finely chopped (about 1 1/2 cups)

 2 teaspoons butter

 Kosher salt

 2 tablespoons plus 2 teaspoons mayonnaise

INSTRUCTIONS

1. Keep the sliced potatoes in a bowl of cold water while you prepare the rest of the
ingredients.
2. Heat 1 tablespoon butter in a skillet over medium-high heat until shimmering.
3. Add onions and 1/2 teaspoon kosher salt to skillet.
4. Reduce heat to medium low, and cook, tossing and stirring occasionally until onions
are well browned, about 15 minutes.
5. Once onions begin to sizzle heavily and appear dry, add 1 tablespoon water to skillet

to a small bowl and stir to combine.
10. Dry the potatoes. Heat oil to 365 degrees

13. To double fry, put the potatoes back in the hot oil after they've cooled and fry a

Ingredients

 1 cup all-purpose flour


 1/4 cup Dutch-processed cocoa powder
 1/2 teaspoon salt
 8 oz semi-sweet chocolate
 1/2 cup (1 stick) unsalted butter
 3/4 cup sugar
 3 large eggs
 10 oz chocolate, melted (semi-sweet or dark)
 Fleur de Sel  or Maldon salt

Instructions

1. Preheat an oven to 350 degrees F. Line a 9 x 13 inch baking pan with parchment
paper.
2. Mix together the flour, cocoa powder, and salt together in a small bowl. Set
aside.
3. In a medium saucepan, melt the chocolate and butter over a double boiler. Mix
the sugar and eggs together, then add to the melted chocolate.
4. Stir in the flour mixture into the chocolate mixture and mix until there are no
lumps. Pour the batter into the baking pan and spread evenly.
5. Bake for about 15 - 20 minutes, or until no longer jiggly. Remove from oven and
allow to cool completely.
6. Cut into thin fry-like shape (I cut the pan in half lengthwise, then several times
the opposite way.) Optionally freeze the fries on a baking sheet to make it easier to
dip in the chocolate.
7. Melt the 10 ounces of chocolate over a double boiler. Coat each of the brownie
fries with the melted chocolate and then sprinkle with the salt. Leave to harden on a
wax sheet.
15.CHORIZO FRENCH FRY NACHOS

INGREDIENTS
 1 tablespoon olive oil
 1 large white onion cut into small dice
 1 1/2 pounds frozen french fries
 1 tube of Cacique Beef Chorizo9oz
 3/4 - 1 pound ground beef

 1 1/2 cups grated Cacique Mozzarella cheese
 1/2 cup fresh cilantro chopped

INSTRUCTIONS
1. Heat the olive oil on a pan and add the diced onions.
2. Cook on a medium heat until they start to caramelize and turn brown, about 20
minutes.
3. Lay the frozen french fries on a large baking tray and cook as per the manufacturers
instructions.
4. In another pan, cook the chorizo and ground beef together, drain any grease that
may appear leaving only the meat.
5. Make the chipotle crema by adding the chipotle powder and cumin to the crema and
stirring until combined. Set aside.
6. Once the french fries are cooked, adjust the oven temperature to 425 degrees F.
7. Center the french fries in the middle of the baking tray and arrange the chorizo all
over the fries.
8. Top with the diced onion and both types of grated cheese.
9. Place back in the oven and bake for about 5 minutes and the cheese has fully
melted.
10. Drizzle the crema over the melted cheese and sprinkle with the chopped cilantro.
11. Serve at once on the baking tray.

1 (15 ounce) bag Alexia Foods Organic Yukon Select Fries


8 ounces lean ground beef
1/2 tablespoon New Mexico chile powder
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder 
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
4 ounces Colby Jack cheese, shredded
1/2 cup shredded lettuce
1/2 cup diced tomatoes
sour cream

INSTRUCTIONS
Preheat oven 425°F. Line baking sheet with aluminum foil and pour fries in an even layer.
Once oven it preheated place baking sheet in oven and bake 26-28 minutes until desired
color and crispness are reached, stirring 1/2 way between bake time.

In a large (10 inch) skillet over medium-high heat cook ground beef, until cooked through. 
Break beef up with a spatula as it cooks. Add all seasonings and 1/2 cup water. Stir and
cover with lid.  Cook 10 minutes, remove cover and continue to cook until water evaporates.
Reduce heat to low until ready to serve. 
While beef is cooking, prep toppings:  Shred lettuce, dice tomatoes and shred cheese. Set
aside.

Once fries are baked, place on a serving tray and sprinkle seasoned beef over top. Sprinkle
cheese over beef and top with lettuce, tomatoes and sour cream.

Serve and enjoy!

17. CANADIAN POUTINE WITH MUSHROOM GRAVY

INGREDIENTS
 french fries, the more the merrier
 5-7 oz cheese curds
for mushroom gravy
 1 tbsp olive oil
 ½ medium onion, chopped
 1 tbsp fresh sage, chopped
 ¼ cooking sherry
 3 cups chicken stock
 ½ tsp salt
 5-6 oz mushrooms, chopped or slices
 2 tbsp all-purpose flour
 1-2 tbsp butter
 ¼ ground pepper
INSTRUCTIONS
1. Nothing special about french fries. Just make some the way you want them,
wedges work too.
2. Add oil to a pan and heat over medium heat. Add onion and sauté for 1-2
minutes.
3. Add sage, salt, mushrooms and sauté until mushrooms are browned or
however you like them.
4. Add wine and cook until it almost evaporates. Stir in chicken stock and simmer
until reduced to two cups, 10-15 minutes.
5. Combine flour and a couple of tablespoons of cooked stock and stir until
becomes smooth. Add the flour mixture to pan; return to boil then reduce heat
and simmer for 2 minutes until lightly thickened.
6. Remove from heat and stir in butter and pepper.
7. Place the french fries in a plate of your choice and top with cheese curds. Pour
hot mushroom gravy over the cheese and serve.

18. Garlic Cheese Fries

Ingredients
 28 ounces frozen shoestring potato fries
 Vegetable oil for frying
 5 garlic cloves minced or crushed
 1/4 cup flat Italian parsley minced
 1 tablespoon extra virgin olive oil
 1/2 teaspoon fine sea salt
 1/2 teaspoon ground black pepper
 3/4 cup shredded cheese (your choice, I used an Italian blend)
 Cooking spray

Instructions
1. Preheat oven to 350 degrees. Line a baking sheet with aluminum foil and coat with cooking spray.
2. Prepare French fries according to package directions for either frying or baking. If frying, do it 2-3
batches and watch out for splatter. Hot oil does not like cold, frozen fries. Remove to a paper towel
lined plate to drain while you prepare the spices.
3. In a large mixing bowl, combine garlic through black pepper and give it a mix. It will all sticky
together at this point, but will break apart as soon as you toss the fries. So you guessed it, the next
step is to toss the French fries!
4. Spray the inside of metal cans (soup cans, tomato sauce, etc) with cooking spray. Place on the
baking sheet. Stuff a pinch of French fries into your can; just enough to cover the bottom. Sprinkle a
pinch of cheese over the fries and continue to layer, ending with an additional sprinkle of cheese.
Pack fairly tight and be generous with the cheese, it is the "glue" to making your tower stay upright.
5. Bake for 10 minutes, or until cheese has melted. Using a large, wide spatula, transferring stack,
metal can and all to your serving plate.  Slide the spatula under and carefully transfer.  Now carefully
pull the metal can up and off.
6. Admire your French fry construction and enjoy your Garlic Parsley French Fry Tower!
