Tobyhanna Elementary celebrates diversity
Chartwells dishes up delights at TEC Multicultural night.

Students, parents and teach-
ers alike joined in an evening
celebrating diversity at Toby-
hanna Elementary Center on
December 7. TEC’s Multicul-
tural Night was developed to in-
troduce the different holidays
celebrated throughout the win-
ter season around the world.
Organizer Karyn Yarashas
commented on the event, now
in its third year, saying, “Every
year we try to do bigger and
better.” Success was clearly ev-
ident by the crowd in atten-
dance.
Passing through hallways of
colorful multi-cultural holiday
decorations delegated to
each grade guests were in-
vited to make crafts including
Mexican tissue paper flowers
and Chinese pencil or brush
characters.
A variety of aromas enticed
one and all to visit the cafeteria
housing a plethora of culinary
delights. Irish potato soup was

Usually I try to eat healthy, and offer
healthy recipes. But itʼs holiday time,
and a little holiday indulgence never
hurt anyone. So my holiday present to
you is two dessert recipes Iʼve come
across recently. The first, a definitely
decadent Pumpkin Bread Pudding,
comes from one of my Facebook
friends, Bill Tyson. Itʼs not low calorie,
but because itʼs so rich, a small serving
may be enough. Then again, it may
not!
The second recipe really is pretty
healthy. Poached Pears with Choco-
late Sauce is printed with permission

Research, www.aicr.org. It sounds like
just the thing for after the holidays,
when we need to lose some of the
pounds those indulgent desserts may
have added!
Iʼm hoping to be able to offer some
soup suggestions in a few weeks. On
Sunday, Seth and I are going to be
judges at the fourth annual Soup
Cook-Off at The Four Fellas on Route
940, west of White Haven. Weʼll be
sampling all kinds of flavors and tex-
tures, and perhaps some of the win-
ners will be willing to share their
recipes.
If you have a favorite soup recipe,
itʼs not too late to enter. Thereʼs a $5
fee per soup entry, and you donʼt even
have to register in advance; just show
up by 12:30 with a pot of soup. If youʼd
prefer to just sample soups, come at
$1; donation is $5 for tastes of all the
soups. All proceeds benefit the Ameri-
can Cancer Society.
Finally, if you prefer spicy to soupy,
keep watching for information about
the annual Chili Cook-off at The Four
Fellas in February.
Pumpkin Bread Pudding
Note: This makes enough to fill a 9″
square pan…I always double the
recipe & put it in a 9X13 pan.
2 c. Half & Half
1 15-oz can pureed pumpkin
(Libbyʼs 100% pure pumpkin)
1 c. + 2 T packed
dark brown sugar
2 large eggs
11⁄2 t. cinnamon
11⁄2 t. pumpkin pie spice
11⁄2 t.vanilla
dash salt
10 c. challah bread cut into 1/2″ cubes
(about a loaf and a half of bread
needed to double the recipe)

⁄2 c. golden raisins (optional)
PREHEAT oven to 350° F.
Wisk all except bread and raisins in
a large bowl.
Fold in bread cubes.
Stir in raisins.
Let stand 15 minutes.
Bake about 40 minutes, or until cake
tester comes out clean.
CARAMEL SAUCE:
11⁄4 c. packed dark brown sugar

⁄2 c. unsalted butter
1
⁄2 c. whipping cream
Whisk dark brown sugar and un-
salted butter in heavy saucepan over
medium heat until butter melts. Whisk
in cream and stir until sugar dissolves
and sauce is smooth (about 3 min-
utes.) I generally stab the bread with a
knife many times and then pour the
caramel sauce over it to let it sink in,
but you can also serve the sauce, as
needed, on the side. This is also good
without the raisins AND I usually go
very light on the caramel sauce. The
sauce can go on the table so the
hyper-sweettooths can add more to
their own....
Poached Pears
with Chocolate Sauce
If chocolate is your heartʼs desire,
pair it with pears. This healthy dessert
for your sweetheart provides fiber, pi-
quant lemon (what relationship does-
nʼt need a little tang?) and a version of
chocolate that is low in fat. Itʼs quick
and easy, too!
Makes 4 servings.
Per serving:122 calories, 0 g total
fat (0 g saturated fat), 32 g carbohy-
drates, <1 g protein, 3 g dietary fiber, 7
mg sodium.
4-11⁄4 cups water
1
⁄4 cup granulated sugar
Grated rind and juice of ½ lemon
1 cinnamon stick
2 fresh, ripe pears
2 Tbsp. chocolate syrup
2 Tbsp. dried cherries or dried
cranberries (optional)
Directions
1) In large saucepan, combine
water, sugar, lemon rind, lemon juice,
and cinnamon stick. Bring to boil, stir-
ring until sugar is dissolved.
2) Peel, halve and core pears. Add
pears to boiling syrup. (Pears should
be covered in liquid; if not, double the
amount of poaching liquid or poach in
batches.) Reduce heat to medium-low
and simmer gently 15-20 minutes until
pears almost tender.
3) Remove from heat and let cool in
liquid. Drain pears thoroughly and pat
dry on paper towels. Place halves on
individual plates.
4) Drizzle with chocolate syrup and
sprinkle with dried cherries or cranber-
ries. Serve at room temperature.
