CULTURAL INSIGHT

Choucroute garnie

(dressed sauerkraut) is a famous Alsatian recipe for fermented sauerkraut with sausages,
salted meats, charcuterie (cold meat) and potatoes. Choucroute is a francophonic form of
Alsatian Sürkrüt.

They imported this dish into the region after its annexation in 1648, as sauerkraut is
originally from Germany and Eastern Europe.

Traditional recipes call for Frankfurt sausages, Strasbourg sausages, and inexpensive or
salted cuts of pork such as ham hocks, pork knuckles and shoulders, back bacon, and
slices of salt pork. Other recipes call for fish, which is a twist of the recipe invented much
later.

They usually heat the sauerkraut with a glass of Riesling wine, or other dry white wines or
stock, and goose or pork fat. A traditional recipe includes black peppercorns, cloves, garlic,
