fellowship, a free lunch and a variety of topics important to seniors.

NEW Medication Disposal Made Easy

Relatively few people are aware


of the significance of prescription
drug and alcohol abuse among
older adults. While those over 65
years of age make up only 12%
of the current population, they
use 1/3 of all prescription drugs
and nearly 1/2 of medications
purchased are over the counter.

A Simple Fudge Recipe!
Submitted by Brenda Burkholder

5 cups sugar 1 12-oz. package chocolate chips


1 can carnation milk 1 large Hershey chocolate bar
1 stick butter 1 large jar marshmallow cream
Bring sugar, carnation milk and butter to a boil for 5 minutes (4 1/2
for softer fudge), stirring continuously. Add chocolate chips, crushed
chocolate bar and marshmallow cream. Stir until mixed and pour
into a well buttered jelly roll pan.

Buttermilk Sorbet with Strawberries


2 cups low-fat buttermilk 3 cups sliced strawberries
1/4 cup sugar 1 Tbsp. sugar
1/4 cup light corn syrup

Combine buttermilk, sugar and corn syrup in a medium


bowl. Stir until sugar dissolves. Pour mixture into the
freezer can of an ice-cream freezer; freeze according to
manufacturer’s instructions. Spoon sorbet into a freezer
safe container; cover and freeze 1 hour or until firm. Combine
strawberries and sugar; let stand 10 minutes. Spoon berries into
serving bowls, and top with sorbet. Makes 4 servings.

Summertime Smoothie
1 cup vanilla yogurt Blend all
1 cup crushed ice ingredients together
1/2 cup fresh or frozen fruit and enjoy!
1/2 cup pineapple juice

Tuna Sandwich with Red Pepper Sauce
1/3 cup bottled ranch salad 1 12-oz. can solid white tuna,
dressing drained and broken chunks
1/2 cup bottled roasted red sweet 1 8.75-oz. can whole kernel corn,
peppers, drained drained
Butterhead lettuce (optional)
For the roasted red pepper sauce, in blender combine
salad dressing and half the sweet peppers until
smooth. For tuna filling, chop remaining peppers. In a
bowl combine chopped peppers with tuna, corn and 1/4
cup of the roasted red pepper sauce. Spread on
bread, layer with lettuce leaves. Makes 4 servings.

1/2 tsp. kosher salt 1 cup cherry tomatoes, halved
1/2 lemon 1 cucumber, seeded & chopped
1 7-8oz. carton sour cream 1/4 cup finely chopped chives
2 hearts romaine lettuce 1 avocado, seeded, chopped
2 ears fresh corn, cut from cob 6 slices bacon, chopped
Prepare dressing by peeling garlic and finely chopping with kosher
salt. Rub garlic and salt together with knife blade until worked into a
fine paste. Place in small bowl, squeeze lemon over garlic, stir in
sprinkling of salt. Allow to stand 10-15 minutes.
Whisk in sour cream and season with salt and
pepper to taste. Refrigerate 1 hour. Wash and
drain lettuce and thoroughly dry. Mix chopped
lettuce, corn, green beans, tomatoes, cucumber,
chives, avocado and bacon. Add dressing.
