Golden Rum And Nut Cake


Cake Ingredients 1 cup chopped pecans or walnuts 1 - 18 oz. pkg. yellow cake mix 1 - 3 oz. pkg. vanilla instant pudding mix 4 eggs cup BACARDI Gold Rum cup vegetable oil cup cold water Glaze Ingredients stick of butter 1 cup sugar cup water cup BACARDI Gold Rum Cake Instructions Preheat oven to 325 degrees F. Grease and flour 12-cup bundt pan or a 10-cup tube pan. Sprinkle nuts over bottom of pan. In a large bowl combine cake mix, pudding mix, eggs, BACARDI Rum, oil and water. Using an electric mixer, beat at low speed until moistened. Beat at high speed 2min. Pour batter over nuts. Bake 1 hour or until a skewer inserted into the cake comes out clean. Cool 15 min, then invert onto a serving plate. Glaze Instructions Melt butter in saucepan. Stir in sugar, water and BACARDI Rum. Boil 5 min, stirring constantly. Remove from heat. Prick top of the cake with a fork. Spoon and brush glaze evenly over top and sides. Allow cake to absorb glaze. Repeat until glaze is used up.

Mixers Holiday Punch


Ingredients 1 750 ml bottle BACADI Gold Rum 1 can Strawberry Daiquiri Frozen BACARDI mixers; thawed, undiluted 1 can Pina Colada Frozen BACARDI mixers; thawed, undiluted 1 can Minute Maid frozen concentrate for Pink Lemonade; thawed, undiluted 1 liter club soda 1 tbsp. vanilla extract 2 liters Sprite tsp. nutmeg Instructions Combine all ingredients, except Sprite and nutmeg, in large punch bowl. Stir well. Chill before serving. Add Sprite and sprinkle with nutmeg. Makes 25 6oz. servings.

Double-chocolate Rum Cake


Ingredients 1 - 18 oz. pkg. chocolate cake mix 1 - 3 oz. pkg. chocolate instant pudding mix 4 eggs 1 cup BACARDI Gold Rum cup water cup vegetable oil 1 - 12 oz. pkg. semisweet chocolate chips, divided 1 cup raspberry preserves 2 tbsp. shortening 1 oz. white chocolate Cake Instructions Preheat oven to 350 degrees F. Grease a 12-cup bundt, 10in. tube pan or 10in. spring form pan. Combine cake mix, pudding mix, eggs, cup BACARDI Gold, water and oil in a large mixing bowl. Using an electric mixer, beat at low speed until moistened. Beat at medium speed 2min. Stir in 1cup of the chocolate chips. Pour batter into prepared pan. Bake 50 min. or until a skewer inserted into the cake comes out clean. Cool in pan 15 min. Remove from pan and let cool on a rack. In a small saucepan, heat preserves and remaining cup BACARDI Gold. Strain through a sieve to remove seeds. Place cake on a serving plate. Prick surface of cake with fork. Brush raspberry glaze evenly over cake, allowing the cake to absorb the glaze. Repeat until all glaze has been absorbed. Icing Instructions In a glass bowl combine remaining chocolate chips and shortening. Microwave on medium-high until melted, about 1 min. Stir until smooth. (Or heat over hot-not boiling-water until melted.) Spoon chocolate icing over cake. Let stand 10 min. Melt white chocolate and drizzle on top of chocolate icing.

Egg Nog
Ingredients 1 oz. BACARDI Gold Rum 2 oz. half & half 1 tsp. sugar 1 tsp. vanilla extract nutmeg Instructions Combine BACARDI Rum, half & half and sugar in a shaker with crushed ice. Shake well and strain into a mug, or, using prepared egg nog, add BACARDI Gold Rum. Sprinkle with nutmeg.

Hot Buttered Bacardi Rum


Ingredients 1 oz. BACARDI Gold Rum 1 tsp. sugar 1 tsp. butter 4 whole cloves boiling water Instructions Pour BACARDI Gold Rum into mug. Add sugar, butter and cloves. Fill with boiling water and stir.

Spice And Hot Tea


Ingredients 1 oz. BACARDI Gold Rum 1 tsp. sugar 1 cup very hot tea 1 cinnamon stick or 1 tsp. ground cinnamon 1 lemon slice Instructions Place BACARDI Gold Rum and sugar in mug. Add hot tea and cinnamon. Stir well and top with lemon slice.

Golden Apple Crisp


Ingredients 1 oz. BACARDI Gold Rum hot apple cider 1 cinnamon stick nutmeg Instructions In a mug, pour in BACARDI Rum and fill with hot cider. Add cinnamon stick and sprinkle with nutmeg.

Rum Balls
Ingredients 2 cups ground walnuts (from 2 cups chopped walnuts) 1 cups of vanilla wafer crumbs cup BACARDI Gold Rum cup honey confectioners sugar Instructions In a medium bowl, combine walnuts and wafer crumbs. Stir in BACARDI Gold Rum and honey. Shape into 1 balls. Roll confectioners sugar. Store in tightly covered container. Makes approximately 2 dozen.
