Friday, October 28, 2011 ~ Check in @ 1:00 pm 1. This is an I.B.C.A. sanctioned event. All rules, as set forth, by the I.B.C.A., as a sanctioning body, shall apply. Visit www.ibcabbq.org to view a complete listing of the rules. 2. Only one (1) team per pit. Each team will consist of a Chief Cook and up to four (4) team members. The head cook is required to attend the Cooks meeting on Friday evening. 3. Check-in will begin on Friday 10/28/11 @ 1:00 p.m. Competitors & trailers will not be allowed to leave until the completion of the cook-off at 5:00 p.m. on Saturday. All sites must be vacated by, no later than 5:00 pm on Sunday afternoon. Your tents, BBQ pit, etc, must be confined to your Spot. All sites must be cleared of debris before leaving. No open fires on the ground, unless you have a fire ring. No loud Music after 10pm. Only one (1) vehicle is allowed, per site, there is additional parking in designated areas. 4. All meat must be cooked on site. No pre-cooking or marinating, of meats, will be allowed. All meats will be inspected upon arrival. No meats will be allowed to leave the site after check-in. 5. Fires must be of wood or charcoal. A pit is defined as any commercial or homemade, trailered or untrailered, pit or smoker normally used for competitive BBQ. The pit may include gas or electricity, for starting the wood and/or charcoal fire, but shall NOT be used during cooking. Each team should have easy access to a fire extinguisher. 6. No animals will be allowed in the cook off area, with the exception of Seeing Eye Dogs. 7. Cash Prizes to the winners. Grand Prize Winner, $500, 1st place in each category (Chicken, Ribs, & Brisket) $400, 2nd place $250, and 3rd place $100. 8. Excessive use of alcohol may be grounds for disqualification. No alcoholic beverages will be allowed in the judging area. If participants in the cook off become unruly or inappropriate at anytime, he or she may be asked to leave or may be removed if so required.

9. One, two or all three meats may be cooked but ALL three must be submitted for Turn-In in order to qualify for Grand Champion. (Discussed at cooks meeting) 10. Mandatory Cooks Meeting at 7PM on Friday night. 11. Turn-In Times will be as follows: Saturday, October 29, 2011 a. Sauce and/or beans (BBQ) category: 2 quarts @ 11:00 AM b. Chicken: One (1) fully jointed 1/2 chicken, consisting of breast, wing, thigh, & drumstick, @ 12:00 Noon. c. Pork Spare Ribs: Seven (7) individual cut ribs, bone-in (St. Louis cut is acceptable), @ 1:00 PM. d. Brisket: Seven (7) full slices approximately 1/4 thick @ 2:00 PM e. Peoples Choice This is our Peoples Choice event @ 11:00 am -- the public will have the opportunity to VOTE on your dish!!! NO TEAM NAMES or anything to identify your team dish! Prepare enough to feed approx 200 taster cups we will fill the cups. The public will be allowed to start voting @11:15. f. Donation of Brisket We are asking each team wishing to participate in the Peoples Choice award to provide a brisket for sampling. Please have food ready for 10:30 am Saturday morning. 12. No garnish or condiments are allowed in the tray @ turn-in. Meats may be cooked with sauces but, once the cooking is complete, sauces cannot be added to the meat after it is placed into the judging tray. No pooling, of sauces, will be accepted. 13. The Greater Pointe Coupee Chamber, the City of New Roads, and/or Cook-Off officials will not be held responsible for accidents, theft, or any mishaps to property or any personal items. 14. A double number system shall be utilized to assure fair judging of all entries. Trays with tickets and foil will be distributed at the cook's meeting on Friday afternoon. If a tray is found to be marked, it may be disqualified from the competition. The head judge or designated representative will inspect all trays to assure turn in criteria is met. Turn in times will be announced at the cooks meeting. 15. Prizes will be announced at a specified time on the Harvest Festival grounds at a specified time on Saturday afternoon. Prizes include cash awards for first, second and third places in each category and fourth through tenth will be announced. A Grand Champion and Reserve Champion will also be awarded. 16. DISQUALIFICATIONS: WE will follow IBCA RULES for Cook Off, if any team does not follow the rules as set forth in the cooks meeting, your tray will be disqualified.
