Total Store Cleaning Program Ecolab-Kay INTRODUCTION


Wendys has aligned with a new Total Store Cleaning partner. After months of testing and conducting a detailed analysis, it was determined that partnering with Ecolab-Kay would be beneficial to Wendys. Feedback from our customers has told us the importance of a clean restaurant can not be underestimated. Operators know the importance of maintaining a clean restaurant for our customers. The Ecolab-Kay program is well designed to assist Wendys with maintaining sparkling clean restaurants. Benefits to Wendys include: Specialization in cleaning products for quick service restaurants. Superior customer service, including a dedicated representative for the Wendys brand along with an Ecolab-Kay representative for each region. Several state-of-the-art Research and Development laboratories dedicated to making products more effective and easier to use. Very competitive pricing. Even from the most conservative analysis during the testing phase of Ecolab-Kay, the franchise and company test restaurants realized measurable savings.

This guide will provide information that operators need to know about the program.

WHAT COMES WITH THE PROGRAM?


1. Dispensing Equipment: o Dispensing Equipment will be maintained by Ecolab-Kay and serviced free of charge. 2. Training Aids: New training materials are provided. o Replacement training materials (including wall charts, procedures manual, and DVD) can be ordered through Ecolab-Kay and will be provided free of charge. 3. Exterior Sprayer Unit: A sprayer unit will be provided to each restaurant at the time of install. o One additional replacement unit (free of charge) may be ordered through Ecolab-Kay each calendar year.

4. Restroom Caddy and Tools: A new caddy, toilet brush and nipper tool will be provided at every install. o Replacements may be ordered through Ecolab-Kay but will be billed to the restaurant. 5. Sanitizer Strips: A 6 month supply of sanitizer test strips will be provided during store install and at every Ecolab-Kay value visit. o Additional sanitizer test strips may be ordered through Ecolab-Kay free of charge. 6. Value Visits: Bi-Annual restaurant visits to inspect equipment. o The Ecolab-Kay representative will also answer a series of 20 - 25 questions on their PC tablet which will be available to operators via the Ecolab-Kay website. o Example: Did the restaurant have all wall charts posted? 7. Ecolab-Kay Website (Still in Testing Phase): Wendys specific website with information on procedures. o Based on an organizations hierarchy, it will contain information on every stores recent value visits. o The website will be accessible through both store WeNet and Corporate WeNet. 8. Free Product: Each restaurants initial auto shipment of product will have a $150 credit applied to the order. This will be handled through the Distribution Centers. o In January of the 2nd and 3rd year of the contract, each store will receive free of charge $25 worth of free product. 9. Customer Service Line: 24 hour customer service line (1-800-529-5458). Restaurant managers should call Ecolab-Kay with any questions or concerns on products, equipment or training materials. 10. Technical and Regulatory Services: Dedicated teams that assist with any technical or regulatory questions. o For example, if Wendys introduces a new piece of equipment, Ecolab-Kay will conduct thorough testing in one of their laboratories and then provide a recommended procedure for effective cleaning.

Hand-washing soap for employees and customers. o Fortress benefits include less irritating and drying of hands. o Fortress is slightly more expensive. 2/10 of a penny per hand-washing instance.

Foaming Fortress soap dispensers must be mounted beside Sparkle Sink or on Sparkle Sink cabinet

Liquid

Excelerate
Equipment dispensed enzymatic floor cleaner. o Product is applied and removed using a mop. Assists with the cleanliness and sanitation of floor drains.

Kayquat II Sanitizer
Equipment dispensed quaternary sanitizer. It also is the sanitizer product used in spray bottles for sanitizing items such as ice bins and prep sinks.

Spirit Restroom Cleaner


Ready-to-use restroom cleaner packaged in a 1 quart bottle.

Powdered packets used for urinals, toilets and faucets.

Triple Play
Equipment dispensed product for the dining room. It is a cleaner, disinfectant and deodorizer.

Titan (Interior)
Equipment dispensed degreaser for interior use.

Titan (Exterior)
Bulk concentrated degreaser. o 1:1 ratio with water and used for exteriors.

No-Thaw
Ready-to use freezer and cooler cleaner. o Packaged in half gallon containers with 1 spray nozzle per case

The 3 optional products part of the Wendys Ecolab-Kay program. These products may be useful to perform restoration on specific equipment or areas. Spirit Restroom Sizzle Plus Kay Destainer Ready-to-use heat activated grill Powdered cleaner mixed with Cleanser
Ready-to use cleanser product used for heavy stains in restrooms or used for stains on cutting boards. and toaster cleaner. o Used to assist with heavy build up on chili stoves or split top grills. water and used for stains on carpet.

Optional products may be requested through each DC. It may take 34 weeks for Distribution Centers to secure inventory.

PRODUCT ORDERING & CONSOLIDATION


Distribution Centers (DC) will maintain supplies of both P&G and Ecolab-Kay products throughout the transition period of March until October. Each restaurant will want to manage P&G product inventories as their install approaches. o Company areas will each have designated Run-Out locations and will convert later in 2008 depending upon DC inventory levels. NOTE: All restaurants will be converted no later than the 2nd week of December. o Franchise locations - Franchisees may want to transfer leftover P&G products from converted stores to stores converting later in the schedule. Product Installation Note: Some items will need to be removed from the restaurant immediately upon the Ecolab-Kay install. Those products are of the dispensed type (sanitizer, dish soap, degreaser and 3 in 1). o Other Ready-to-Use Products may be used up accordingly.

Order Guides: Order guides will be set up to easily distinguish between P&G products and Ecolab-Kay products. (1) Each Ecolab-Kay product will have Eco-K listed after the description of the product. (2) Product Information chart. Chart lists product descriptions, pack sizes, item numbers, and initial order auto-ship quantities. (3) Restaurants will not need to order any products for their installation. Those chemicals will be auto-shipped along with the installation kit. NOTE: Each restaurant will be auto-shipped 1 case each of the 13 core products. Depending on DC, this initial shipment cost will be between $240 and $260.

EQUIPMENT
Although there are very few equipment changes with the Ecolab-Kay program, there are some key items to which operators will want to pay attention. Dispensing Equipment All new dispensing equipment will be installed for the mop sink and 3 compartment sink blend centers. Two dispensing units for the 3 compartment sink and 4 dispensing units for the mop sink blend center. If space is not available, 2 mop sink area bag holders will be placed in a bag stand that will sit on the floor by the mop sink area.

Note: Ecolab-Kay will box up the old P&G equipment (Spray Bottle Racks, Hydro Foamer Rack, old Restroom Caddy) and leave at the restaurant at the end of the install. This equipment is the property of each operator. Spray Bottle Racks New bottle racks will be installed. Included for every store is a bottle rack for the dining room spray bottles and (2) side-by-side bottle racks for the back room. Restroom Caddy and Tools New Restroom Caddy. A toilet brush and restroom debris nipper tool is provided. o Recommended storage for the restroom caddy is the dining room closet or the chemical storage area. The caddy should not be stored under the dining room condiment stand or near food in preparation areas. Exterior Sprayer Unit: A pump up sprayer that is used for exterior cleaning. o Recommended storage for the pump up sprayer is the dining room closet or the chemical storage area. Sanitizer Test Strip Holder: A new plastic holder installed by the 3 compartment sink. This is the designated storage area for a single pack of sanitizer test strips. All back up packages should be stored in the office.

Eliminated Items: Some equipment items will become obsolete. Tile vacuum Watering can Exterior cleaning hydro-sprayer. To manage supply costs, this equipment be transferred to a store that has not yet implemented instead of being discarded.

PREPARING FOR INSTALLATION


Installations will be conducted during the third calendar week of each month. There are several things that operators should do to prepare. 1. Review the installation schedule on WeNet. It lists what stores implement each month and will be updated as the schedule is loaded. 2. Begin watching inventory levels on P&G items. 3. Ensure appropriate cleaning brushes and floor/wall tools are in place. Use the Required Cleaning Tools and Personal Protective Equipment checklist included in the Total Store Cleaning Training Kit for a complete listing of existing tools, brushes, and safety equipment that every restaurant should have. o These items are not new and should be in place prior to conversion. This will allow for proper training. o Most importantly, these tools are necessary to ensure proper cleaning and sanitation.

4. Hold preliminary conversations with your management teams and crew members. Explain that a new cleaning program is coming and re-emphasize how important cleanliness and Food Safety is to Wendys customers. 5. Anticipate calls from Ecolab-Kay prior to installation: o 3 weeks Ecolab-Kay will communicate the exact date and time of the install. They will also verify: 1) Correct dish soap (Manual or Power Soak) 2) Desired hand soap (Liquid or Foaming). o 1 week Ecolab-Kay will call the store to remind them of the install date and time that will be occurring the following week. o 3 days Ecolab-Kay will contact the restaurant to verify the install kits and initial product shipments arrived. o Day of Installation o Morning Installations will occur @ 7:00 a.m. A manager will need to be present at 7:00 a.m. The install will last approximately 3-5 hours depending on store complexity. The Ecolab-Kay representative will conduct training for the manager and selected personnel from 10:00 a.m. to 11:00 a.m. even if they are not fully completed. o Afternoon Installations will occur @ 1:00 p.m. The install will last approximately 3-5 hours depending on store complexity. The Ecolab-Kay representative will conduct training for the manager and selected personnel from 4:00 p.m. to 5:00 p.m. even if they are not fully completed. o 2 days after installation Ecolab-Kay will contact the restaurant to follow up and ensure that everything met the managers satisfaction. 6. Prepare for the delivery of installation kit and product. Expected arrival is 3 - 5 days prior to install. Do not unpack the start up kits. Please store them in a safe place until installation day.

INSTALLATION DAY EXPECTATIONS


GM should try to be present for the install. If not, then another designated manager should be present. The Ecolab-Kay installer will complete the following activities: Arrive at the scheduled time (7:00 a.m. for morning install or 1:00 p.m. for afternoon install). Present an Ecolab-Kay badge along with a business card. Inquire as to where the install kits are located and explain that they will begin the install process. Remove current P&G equipment and box up. Fill any holes in the walls where the P&G equipment was installed. Remove old spray bottle racks. Fill any holes where the old bottle racks were mounted. Install the new dispensing equipment and hand soap dispensers. Install the new spray bottle racks, procedure card rack, updated Total Store Cleaning Chart, and all other wall charts. ***The manager will need to provide specific direction on proper locations for these items. Box up all P&G dispensing equipment and chemicals. Clean up any debris created during the install. Conduct training (10:00 a.m. for morning install or 4:00 p.m. for afternoon install). Ask the manager to sign an installation checklist. A copy to be left at the restaurant. An example is on the next page. Record the names of those that were present for training (Ecolab-Kay will maintain a record of who was trained in their data base). NOTE: Tasks that cannot be completed on installation day will be resolved within 24 hours. The Ecolab-Kay representative will communicate this to the manager.

Total Store Cleaning Program Ecolab-Kay TRAINING SESSIONS


Many of the procedures with the new Total Store Cleaning Program have not changed. However, proper training and follow up with the new chemicals and procedures is critically important. Proper procedural execution is important. Components to the training approach for the new program are: Multi-Unit Overview Sessions: (ECOLAB-KAY LEADS) During the weeks of 3/3/08 and 3/10/08, Ecolab-Kay will be facilitating Multi-Unit Overview Sessions in 50 geographic areas throughout the U.S. Field Training Managers coordinated sign-ups for these. o The sessions are 2 hours in length and will give operators a chance to see the Ecolab-Kay program prior to it being installed in one of their restaurants. Training Hours Allocation o Company restaurants have budgeted 22 hours per store for training. Installation Day (5 hours) Manager meeting (10 hours) Key crew member meeting (7 hours) In Store Training Sessions: (ECOLAB-KAY LEADS) On install day, the Ecolab-Kay representative will conduct a 1 hour training session for the managers and key crew members present. The focus will be primarily on the products and procedures that are distinctly different from the P&G program. Managers should select managers and key crew members to be present for the in store training. (4 5 attendees recommended) In store Training Sessions: (GM LEADS) Additional training will be necessary to seed proper habits. o Manager meeting o Key crew member meeting Use the Training Agenda provided in the TSC Training Kit received from Old Trail Printing.
