HOT TIPS ON SAFE MICROWAVE USE (NAPSA)- You can protect yourself and your family from the dangers of foodborne, illness-causing bacteria, such as Salmonella, if you heed the Cook It Safe campaign by the experts at the U.S. Department of Agriculture. There are four things you need to do: 1. Read and follow package cooking instructions. Most frozen or refrigerated convenience foods must be properly cooked before you can eat them. The label can tell you whether the product needs to be thoroughly cooked or simply reheated. Uncooked meat or poultry, for example, must be cooked to a high enough temperature to destroy harmful bacteria. 2. Know when to use a microwave and when not to. Sometimes, thorough cooking requires the use of a conventional oven, not a microwave. Microwave oven cooking times may not be enough to cook some foods to a safe internal temperature. Microwave ovens-even those equipped with a turntable-can cook unevenly and leave cold spots where harmful bacteria can survive. You may need to use a conventional oven, convection oven or toaster oven. So always follow the package cooking instructions. 3. Know your wattage. If your microwaves wattage is lower than that required in the cooking instructions, it will take longer for the food to reach a safe internal temperature. The higher the wattage of the oven, the faster it will cook food. If you dont know the wattage of your microwave, check the inside of the ovens door, the serial number plate on the back of the oven or the owners manual. You can also do a time-to-boil test to estimate the wattage: Mea_sure a cup of plain tap water in a two-cup glass measuring cup. Add ice cubes; stir until water is ice cold. Discard ice cubes and pour out excess water so only one cup remains. Set the microwave oven on high for four minutes. Watch the water through the window to see when it boils. If it boils in less than two minutes, its wattage is 1,000 watts or more. If it takes 21/2 minutes, its wattage is about 800 watts or more. If

THIS IS A HAMMER By Samantha Mazzotta Using Linseed Oil to Preserve Tools Q: Ive heard mixed information about using linseed oil to preserve tools over the winter. Do you place it on the cutting blades of garden tools, or only on the handles? Is there an alternative protectant for garden and work tools? -- John F., Providence, R.I. A: Linseed oil isnt a good protectant for the metal parts of tools. The reason is that it creates a somewhat gummy, sticky coat that may be hard to clean off come springtime. It often is used to coat and protect wooden handles, but like most preservative products, linseed oil has its benefits and its drawbacks. First, many people dont know that there are two kinds of linseed oil available: raw and boiled. Raw linseed oil is extracted directly from flax seeds, with no additives of any kind. Its straight-up linseed oil and nothing else. The raw oil dries extremely slowly, over several weeks, and so it develops a kind of gummy or sticky texture that you may not want to experience when picking up a hammer. Boiled linseed oil is not actually boiled. It has several ingredients added that quicken drying time and prevent mildew from setting in. If you want to coat wooden tool handles with linseed oil to preserve them, this is the product to use. The website NaturalHandyman.com has a pretty detailed article available on various uses for raw and boiled linseed oil. A note of caution when using linseed oil: After use, wash any rags that are soaked with the oil in soap and water immediately, or store the rags in a pail of water that is covered. Linseed oil tends to heat up as it dries (through a process called oxidation), and while that isnt a problem for a tool handle with a light coat of boiled oil on it, it can be a problem if a pile of oil-soaked rags are sitting in a corner of your garage drying out. Your best bet is to shop at various computer stores and take notes. Tell the store techs what youll be using the computer for: email, games, a small business, photograph storage, writing and correspondence, Internet. Theyll be able to guide you to a computer that will handle what you want it to do. After you buy, before you leave the store, take the boxed-up computer to the stores repair area and have virus protection installed. Either have the techs start up any pre-installed software and pay for the next year, or have them install a different type. Youll want to make sure your new computer is fully covered before you even get it home. If you have children or teens in the house, or anyone who is likely to change settings or install unwanted software on your new computer, have the store techs set up a BIOS password. That way no one but you will be able to start the machine. If finances make for a difficult decision -- whether to buy a better computer and no printer, or a lesser computer along with a printer -- hold off on the printer, as well as any other peripherals. Buy the best computer you can afford. Printers, scanners, oversize monitors, upgraded speakers and lots of software can be purchased one at a time later, as you learn more about what you need and find it on sale. If the store has in-store credit, beware being talked into buying more computer than youd planned on. Look carefully at the fine print on the agreement, especially the interest rate. If you havent done it already, take a computer class. You dont want to discover in two years that your computer has capabilities you never knew about. As Collins explains, it was a complex murder. The victim had been lured from Manhattan, murdered in Queens and then had his body parts scattered over three boroughs. As competing newspaper moguls Joseph Pulitzer and William Randolph Hearst helped turn the murder into a media circus, the combined efforts of an eccentric professor, an anxious cop and a cub reporter finally helped crack the case. By deftly putting the characters, the event and the festering underbelly of the Gilded Age into historical context, Collins has produced one of the most exciting true-crime books of the summer. EASY HOLIDAY TURKEY 1 (12 to 14 pound) turkey (not self-basting) 3/4 cup canola oil 3 tablespoons poultry seasoning 1 1/2 tablespoons kosher salt 2 tablespoons freshly ground black pepper 1 stick unsalted butter, melted Aromatics: 2 medium onions, peeled and chopped 3 large carrots, chopped, 2 large apples, cored and chopped 2 to 3 sprigs of fresh rosemary, thyme, sage, parsley, in any combination 6 sage leaves 1/2 cup water or chicken broth 1. Adjust the oven racks to the lowest level of the oven. Preheat oven to 500 F. 2. Pull the package containing the neck and giblets out of the neck and interior rear cavity of the turkey (neck cavity may be covered with a flap of skin). Set the liver, heart and giblets aside to use for the gravy. Reserve the turkey neck to use with the aromatics for the basting broth. 3. Rinse the turkey with cold water inside and out. Dry the turkey skin with food-safe paper towels. The turkey will not brown if the skin is still wet. The turkey probably will have the legs trussed in a metal or plastic clamp. Release the legs from the clamp and discard the truss. This will allow the dark meat on the legs to cook faster. 4. Rub the turkey inside and out with the canola oil. Sprinkle turkey all over, inside and out with the poultry seasoning, salt and pepper. 5. Fill the turkey with half of the aromatics -- chopped onions, carrots, apples and herbs. Place the turkey neck and the rest of the aromatics in the bottom of the roasting pan with the water or chicken broth. 6. Place a sheet of aluminum foil on a roasting rack and place it inside of a roasting pan. Using the tip of a knife, poke 20 to 30 holes in the foil. Place the turkey, breast-side down, on the foil-covered rack. Roast for 30 minutes (set the timer on the oven to prevent overcooking). 7. Turn the temperature down to 325 F. Turn the turkey breast-side up and tuck wing tips underneath the bird. Baste, inside and out, with the melted butter and the juices that have collected in the bottom of the roasting pan. 8. Roast for 1 1/2 hours for a 12-pound turkey (a 14- to 16-pound bird will require 2 to 2 1/2 hours. Add an extra 15 minutes per pound for larger birds). Roast the turkey until the meat at the thigh (when the thermometer is inserted without touching the bone), the thickest part of the wing and the meat at the breast registers 165 F. At this temperature, juices should be clear, not reddish pink, when thigh muscle is pierced deeply. 9. Cover the turkey breast loosely with a sheet of aluminum foil, creased in the middle to make a tent, to keep the turkey warm without steaming the crispy skin. No matter how many guests are expected -whether its dinner for four or 24, allow 1 pound of turkey per person. I never buy a turkey more than 14 pounds, as its easier to cook two turkeys than it is to wrestle a turkey weighing 25 plus pounds in and out of the oven. I cook one turkey the day before Thanksgiving. I let it rest and carve it ahead of time, cover it with basting juices and aluminum foil to keep it moist, and reheat it to serve during the meal. I also roast a turkey on Thanksgiving day. Its my show bird -- the one I display whole on a decorated platter. While my guests are serving themselves, I can carve the other turkey without feeling rushed. When selecting a turkey, its better to pick an unstuffed turkey for safety reasons, and then season and baste the bird yourself so that you can control the quality of the ingredients. The pop-up timer that you find in some brands of turkey usually only pops up when the turkey is overcooked! If you want to use a brand with a timer, leave it in place until the turkey is ready to carve, but use a conventional meat thermometer to check your bird for doneness. Forgetting to thaw out the turkey is a common mistake that many cooks make during the holidays. Allow approximately 24 hours for every 4 to 5 pounds of turkey, approximately three to seven days before Thanksgiving. Thaw the turkey in the refrigerator on a rimmed pan to catch any drips or in a cooler kept at 38 F. If youre preparing a turkey for the first time, my recipe for this Easy Holiday Turkey is a great way to begin. Read over the instructions a few days before the holidays, purchase and prep your ingredients ahead of time, and enjoy your Thanksgiving with a lot less stress! (c) 2011 King Features Synd., Inc.

DOLLARS AND SENSE BY David Uffington 11 Ways to Save on Heating Costs Here are a few ideas to help you save money during the coldest months of the year. 1. If you havent had your furnace inspected this year, its not too late to do so. Consider buying one of the service plans. If your furnace quits in the middle of a cold night, you not only want to know whos going to come fix it, you want to know that some or all of the repair costs are covered. 2. Be sure youre not blocking any air vents with furniture. 3. If you never got around to caulking your windows and are feeling drafts when the wind blows, head to the hardware store and look for Frost King plastic window sheeting. This clear plastic (three large sheets to the box) goes on the inside of windows with the adhesive tape thats supplied. Shrink the plastic tight with a hair dryer and trim off the extra. The trick is to get a few inches of dead air space between the window glass and the plastic. The wider that area, the better the insulation factor. 4. While youre at the hardware store, pick up two or three furnace filters. Plan to change them on the first of every month during the winter, when the furnace is running frequently. 5. If you have ceiling fans, run them in reverse to move the warm ceiling air down into the main part of the rooms. 6. Consider turning down the temperature on your water heater. Generally theyre set at 140 degrees F. You can still get a hot shower, and it will save 3 percent to 5 percent of your energy bill with the temperature set at 120 F. 7. If youre home during the day, open the drapes on the sunny side of the house, and close them when the sun moves to the other side. 8. Turn down the temperature on your thermostat 1 degree. In a few days, turn it down another degree. You likely wont feel the difference in temperature, but youll save between 2 percent and 5 percent on your heating costs. If you can, invest in a programmable thermostat set to lower the temperature when no one is home. 9. Insulate your attic access door, if you have one. 10. Add a warm-air humidifier: Moist air feels warmer. 11. Youll be pleasantly surprised by the ideas you generate when you take the time to examine the numbers with a clear head and a critical eye. Step Four: Follow your budget. Theres no point in making a budget if you dont intend to act on it. Keep your budget in front of you and document your expenses on a daily basis. Then adjust your spending as necessary. Monitoring your budget this way can make your money more manageable and give you the feeling of being in control. Step Five: Check in with a financial advisor. There are books and websites that can teach you the finer points for preparing and following a budget. But theres nothing quite like being in the presence of someone who can share their financial knowledge. Stack sheets of phyllo, one on top of the other. With knife or kitchen shears, cut phyllo stack lengthwise in half. Cut each half crosswise in half to make 24 pieces. Keep phyllo covered with plastic wrap to help keep it from drying out. 2. Preheat oven to 375 F. In 10-ounce custard cup, place 1 phyllo piece; spray lightly with nonstick cooking spray. Top with 3 more pieces of phyllo, spraying each lightly with nonstick cooking spray and arranging them slightly overlapping to evenly line the whole cup. Repeat to make 6 phyllo cups in all. Place custard cups in jelly-roll pan; bake 10 to 12 minutes until phyllo is crisp and golden. Cool phyllo cups in custard cups on wire rack. 3. Meanwhile, coarsely chop dried fruit. In 2-quart saucepan over medium-high heat, heat dried fruit, apple or orange juice, anise extract and water to boiling. Reduce heat to low; continue cooking, covered, stirring occasionally, until most of liquid is absorbed and fruit is tender, about 10 minutes. If not serving right away, keep fruit mixture refrigerated. 4. To serve, let frozen yogurt stand at room temperature to soften slightly. Remove phyllo cups from custard cups to 6 dessert plates. Kahne, whose one-year ride with Team Red Bull will expire -perhaps along with that team -- at season's end, has finished sixth or better in five of the past six races, including a runner-up finish in Kansas and a third in Texas Motor Speedway's AAA Texas 500. Kahne will replace Mark Martin at

Hendrick Motorsports in 2012. Martin announced recently that he will compete in 25 races for Michael Waltrip Racing. "The Red Bull team just keeps doing a good job," Kahne said. "They're working hard. It's pretty impressive for a lot of them, not knowing their future, not knowing what's going on there." Kahne, 31, was unable to qualify for the 12-driver Chase for the Sprint Cup, but he is 14th in the standings, trailing only Clint Bowyer among non-qualifiers. It goes without saying that Kahne is looking forward to a move to NASCAR's most successful team of the past two decades. Frozen or fresh spinach can be added to just about any meal. Try this wonderful recipe for Pecan Pork Chops with Pumpkin Apple Butter using these superstar fall fruits and vegetables. PECAN PORK CHOPS WITH PUMPKIN APPLE BUTTER You can use canned sweet potatoes that have been drained and mashed instead of pumpkin, if desired. Any remaining Pumpkin Apple Butter mixture will keep in the refrigerator for up to two weeks, or you can freeze it in an airtight container for up to three months. It's also delicious on bread, pancakes or waffles. If you're pressed for time, a good quality, commercially made jar of pumpkin butter also will work well. 1 (14-ounce) can pumpkin puree 1/2 cup apple juice 1/4 cup water 1/2 cup packed light brown sugar, stevia or agave syrup 1/8 teaspoon ground nutmeg or cloves 1 teaspoon ground ginger 1 teaspoon ground cinnamon 1 tablespoon poultry seasoning 1 teaspoon salt 1 teaspoon freshly ground black pepper 1/4 teaspoon cayenne pepper 1/2 cup pecans 1/2 cup Panko whole wheat bread crumbs 8 (1/4 inch thick) boneless pork chops 1 egg, beaten with 3 tablespoons of water 1/4 cup oil for frying Whisk together pumpkin puree, apple juice, water, brown sugar, nutmeg, ginger and cinnamon in a saucepan until smooth. Bring to a boil, then reduce heat to mediumlow and simmer until the mixture has reached the consistency of applesauce, about 10 minutes. Set aside. Meanwhile, sprinkle pork chops with 1/2 tablespoon poultry seasoning, 1/2 teaspoon salt and pepper, and cayenne pepper. Pulse pecans, bread crumbs and remaining 1/2 tablespoon poultry seasoning and remaining 1/2 teaspoon salt and pepper in a food processor until the pecans are finely chopped. Pour into a shallow dish. Dip the pork chops in the egg, shake off excess. Press pork chops into the pecan mixture to coat on both sides. Heat oil in a skillet over medium-high heat. Add breaded pork chops and cook until golden brown on both sides and cooked through, about 3 to 4 minutes per side. Remove and drain on a paper towel-lined plate. Place 2 tablespoons of pumpkin apple butter on each plate. Place pork chops on the pumpkin butter. Serve with a side of steamed spinach, green beans or broccoli. Makes 8 pork chops. never taken the time to write it down. Simply put: "Place pot roast sprinkled with taco seasoning in a slow cooker. Set on high and cook five to six hours. Spoon tender, shredded beef into warm soft taco shells and add favorite fillings." That's it! Nofail, no-fuss cooking that our busy lifestyles demand when we want to gather friends together for a robust and tasty evening meal. Ingredients for 12 soft-shell beef tacos: 2-1/2- to 3-pound boneless beef chuck pot roast, trimmed of fat 1-ounce package taco seasoning mix, such as Old El Paso brand 1 medium onion, peeled and sliced (optional) 12 flour tortillas Toppings according to taste: cilantro, chopped tomatoes, chili peppers and onions, shredded cheddar cheese, sour cream, guacamole, salsa, squeeze of lime juice 1. Sprinkle both sides of meat with seasoning mix. Reduce the amount according to taste. Place meat in slow cooker. If using onion, spread slices evenly over the meat. No need to add water. 2. Cover, set on high and cook for five to six hours or until meat is tender and easily falls apart. Remove from slow cooker with a large slotted spoon. 3. Using two forks, shred the beef into a large bowl. Add onion and remaining warm juices from the slow cooker. Toss lightly to keep moist. To serve, spoon meat into warm taco shells. Add favorite toppings. Extra idea: For a spicy pot-roast dinner, follow above steps. After three and a half hours in the slow cooker, add six peeled and quartered potatoes and six medium carrots, halved crosswise and lengthwise, on top of the meat. Add pepper and 1/4 teaspoon salt. When meat and vegetables are tender, about two hours later, remove meat and vegetables with a slotted spoon and place on a serving platter.
