How did a minor festival considered to be fairly insignificant become so prominent in America? Ashton says that after the Civil War, two Cincinnati rabbis, both leaders of influential national Jewish newspapers, led a movement to Americanize Judaism. The movement coincided with the growth and popularity of home-based Christmas customs among German Christian immigrants in the U.S. Interest grew when one of the rabbis began writing serialized accounts of the Maccabean War, romanticized, cliff-hanging accounts of heroism and bravery -- two qualities that were extremely important to Jewish immigrants, says Ashton. Hanukkah, also known as the Festival of Lights, is an eight-day commemoration of the rededication of the Holy Temple in Jerusalem after the successful Maccabean Revolt. The other rabbi sought to promote the idea of a fun holiday festival for Jewish children, according to Ashton, author of The American Hanukkah (New York University Press), which examines Hanukkah from 1860-2000. The rabbi said Jewish children shall have a grand and glorious Hanukkah, a festival as nice any Christmas, with songs, dramatics, candle lighting, ice cream and candy, Ashton says. This really shifted Hanukkah from primarily an observance of Jewish adults to a festival seen as particularly important for Jewish children, a way to keep them interested in Judaism, says Ashton. Truth isnt. -- Mark Twain DONNAS DAY: CREATIVE FAMILY FUN By Donna Erickson Meringue Mushrooms Are Whimsical Treat Magical meringue mushrooms are a trompe loeil (trick of the eye), as the French say, and, in fact, France is where this whimsical holiday recipe originates. They look like mushrooms, but taste like dessert! With family-friendly steps, its a must for giving and eating through the New Year. Meringue Mushrooms 3 egg whites (1/2 cup) at room temperature 1/4 teaspoon cream of tartar 1 cup sugar 1 teaspoon vanilla extract 1/2 cup chocolate chips Cocoa powder for dusting 1. Preheat oven to 225 F. In a large bowl, beat the egg whites until frothy and foamy with an electric mixer set at low speed. Add the cream of tartar. Increase speed until soft peaks form. Start adding the sugar slowly, a tablespoon at a time. Let your kids watch as the mixture changes, and glossy stiff peaks form. Beat an additional 5 minutes after sugar is added. 2. Spoon the thick mixture into a large plastic zipper-style bag and push toward one corner to form a pastry bag. Cut off the very tip of that corner so the meringue can be squeezed out of the bag (or use a pastry bag and a 5/8-inch tip). Let your child try it out by dotting four small beads of meringue at the corners of the cookie sheet. Set a sheet of parchment paper over the top. The beads will provide a bond to hold the paper in place. 3. Make the mushroom caps by holding the bag over the parchment paper and push until a one-inch mound of meringue forms. Place 1/ 2 inch apart. Once you have made approximately 35-40 caps, let your child dip the tip of his finger in a small bowl of water and gently round any peaks to make a smooth surface. Lightly strain cocoa powder across the tops. Shape mushroom stems about 3/4 to 1-inch high on another parchment paper covered cookie sheet by pulling the bag up as you press meringue out. Tap down peaks with wet fingers. These stems will be attached to the caps with melted chocolate after baking. 4. Place the two cookie sheets in the oven for 1 hour or until meringues can be lifted easily. Turn off the heat and leave in the oven with the door propped open for an hour or more. The extra time allows the meringue caps and stems to dry. 5. To construct mushrooms, melt the chocolate chips in a microwave-safe dish. Use a small spoon to spread chocolate on the underside of a cap. Attach a stem. Allow the chocolate glue to harden. Arrange in a festive basket and share with friends at a holiday party. S. W. THE KITCHEN DIVA Check Holiday Lists Twice! As the holiday season approaches, many of us have holiday parties and gatherings to plan. In these tough economic times, we face the daunting task of keeping alive our family traditions without breaking our budget. The good news is that by being creative and planning carefully, and making lists, you still can make this season fun and memorable. Most of your budget may be spent on purchasing food for the holidays. The following budget-friendly tips and my easy, meatless recipe can help you save money and have fun at the same time. 1. Establish your budget and how much you can afford to spend. Design a menu around your budget and what is seasonal or on sale at the grocery store. Next, write a list of who will be invited. Your budget will guide you on the number of guests you can comfortably invite. 2. Keep a grocery list so you're less likely to make an impulse purchase. A list also should prevent you from making extra trips to the store. Stick to your list for added savings, but stay flexible if you come across a sale. 3. Use coupons! In most cases, grocery stores have great sales on holiday staples like turkeys and hams. Their goal is to get you into the store with the hope that you'll buy lots of other products that are not on sale. Use this to your advantage, but only buy items you need. Check for online coupons as well. Start with the website of the store where you shop or of products you use. Shopping on double or triple coupon days can save you a lot of money. 4. Buy in bulk. If the price is right and the larger size fits your criteria, go for it! Prices can be deceiving, so pay attention to unit prices to ensure you are getting the best deal. Bigger is not always cheaper. Make sure you will use the food before it spoils. 5. Save on store brands. Buy generic and you could save up to 40 percent a year on your grocery bill. In taste tests, most consumers cannot identify the difference between generic and store brands. 6. Shop high and low. Bargains are usually on the top or bottom shelves. The worst deals are at eye level. 7. Pay attention at the checkout. Don't lose out on a great deal because an item scans incorrectly. 8. If you're hosting a holiday gathering, ask for help with meal preparation. This will help relieve some of the financial burden. Contact everyone on your holiday guest list and see who can bring a dish to share. Guests traveling from out of town may not be able to bring perishable items, but they can grab some nonperishables on their way in. Make sure you coordinate who's bringing what to avoid overlap. 9. Include a variety of meatless dishes, like my recipe for Penne Pasta With Pumpkin Sauce. You may have some of the ingredients on hand from Thanksgiving, or they may be on sale. Meatless meals are often cheaper

and, as a bonus, generally healthier, too. 10. Help others. How about serving some homemade food or giving a grocery-store gift certificate to a family in need? This is the greatest investment you can make for your money during the holiday season. Happy holidays! PENNE PASTA WITH PUMPKIN SAUCE If you don't have poultry seasoning on hand, you can add in a tablespoon of Italian seasoning and 1/4 teaspoon each of nutmeg and cinnamon. Salt 1 pound whole-wheat penne pasta 2 tablespoons extra-virgin olive oil 1 small onion, finely chopped 3 to 4 cloves garlic, minced 2 cups chicken stock 1 (15-ounce) can pumpkin puree 1/2 cup cream or evaporated milk 1 tablespoon poultry seasoning 1 teaspoon hot sauce or 1/4 teaspoon cayenne pepper 1 teaspoon salt 1 teaspoon freshly ground black pepper 1/2 cup grated Parmigiano-Reggiano cheese 1. Heat water for pasta, salt it and bring to a rolling boil. Cook penne until it's tender but still firm, about 8 to 10 minutes. 2. Heat olive oil in a large saucepan over medium heat. Add onion and garlic to the pan, saute 3 minutes. Stir in chicken stock and combine with pumpkin, stir in cream or evaporated milk. Season sauce with poultry seasoning, hot sauce or cayenne pepper, and salt and pepper, stirring well. 3. Reduce heat to medium-low and simmer 5 to 6 minutes more to thicken. Drain pasta and combine with sauce. Sprinkle pasta with grated cheese. Serves 4 to 6. By Ronda Addy As your canine companion gets older, their muzzle will turn gray, their hearing and vision will diminish, and their energy will wane. These are all natural signs of aging. Yummy By Ronda Addy Peppermint Apples for Horses 1/4 c. honey 5 T. sugar 1 T. salt 3 peppermints, crushed 1/2 c. oats 1 carrot, shredded 1 large apple, cut into large chunks Combine honey, sugar, salt and peppermint. Combine oats and carrots. Coat apple chunks with honey mixture and roll in oat mixture. Place in a container and store up to two days.
Birdie Manicotti 4 manicotti pasta shells 2 large eggs with shells 1/4 c. small curd cottage cheese 1/4 c. cooked broccoli pieces 1/4 c. carrots, shredded Pure vegetable oil 3 medium-sized tomatoes Preheat oven to 350 degrees. Boil manicotti shells until tender, drain and cool. Scramble eggs with shells and set aside. Combine cottage cheese, broccoli and carrots. Add egg and fill manicotti shells with mixture. Lightly grease a glass casserole dish. Place filled manicotti shells in dish and bake for 15 minutes. Wash tomatoes, removing stems and leaves. Crush into a fine pulp and spoon over cooked manicotti. Serve at room temperature and store leftovers in refrigerator for three to five days. Quick Duck Soup for Ferrets 1/4 can Heinz pureed turkey or Gerbers Stage I turkey baby food 2 droppers full Linatone (Ferretone or similar) 1 dribble molasses Warm water (enough to fill a bowl) Mix ingredients and serve warm. Hamster Treats 1/4 t. peanut putter 1 small dog biscuit or piece of bread 1 box plain Cheerios cereal Birdseed or sunflower seeds Vegetable variety (carrots, celery, bok choy), shredded Small amount cheese, cheese Spread peanut butter on dog biscuit or bread. Coat with cereal and birdseed or sunflower seeds. Roll in vegetables and cheese.

By Sam Mazzotta DEAR PAWS CORNER: This weekend I took my dog Marty, a dachshund-beagle mix, out to some property, where she sniffed and sniffed and dug and sniffed and sniffed. I think she had her nose buried in the rocky soil for so long that she gave herself a rather large (maybe the size of a nickel) blister on her upper lip. Its not puffy -- just a raw patch under her nose, and she licks at it. I saw something saying that canola oil or olive oil might help chapped lips, but this seems like a larger area. Any tips? -- Matt P., via email DEAR MATT: First, I have to caution that its always wise to consult your dogs vet. With that out of the way, Id say the best thing to do would be to treat the raw patch like you would a blister or a raw patch on your own nose. Keep the area clean, rub a bit of Neosporin over it two or three times daily and watch it closely. Marty probably will lick off the antibiotic ointment within a minute or two of application, but in such small quantities it isnt a problem to ingest. A Band-Aid probably will cause more discomfort and trouble than it prevents. You also can ask your vet for topical medicine to reduce any discomfort and thereby reduce her licking of the area so it can heal faster. If it is indeed just a raw patch caused by friction, the area should heal up within a few days. But do keep a close eye on it: If the patch looks like its getting infected or otherwise changes for the worse, take Marty to the vet right away. (c) 2011 King Features Synd., Inc.

Small Package, Big Attitude


By Ronda Addy Exotic pets arent for everyone. They require specialized care that may not be readily available in your area, and in some cases, they may be illegal. Before you rush out to get one, you need to check your city, county and state laws and find a vet that deals with exotic pets. Should you be permitted to get an exotic pet, you will have to choose the right type for you. One type that you might want to consider is the Fennec fox. The smallest of the foxes, Fennec foxes are native to the deserts of Northern African and the Arabian Peninsula. They have a lush, sandy-colored coat, furrysoled feet, a plush black-tipped tail and large ears. They are similar to dogs in temperament, friendly to everyone, including family pets, and have an abundance of energy. They are nosy by nature and would rather play than cuddle on the couch. The active, agile foxes have a high-pitched yelp and weigh anywhere from two to three-and-a-half pounds at maturity. Because they are basically wild animals, Fennec foxes can be hard to housebreak. They can be litter box or outdoor trained. They can also be trained to fetch and walk on a leash. The leash needs to be secure enough they wont get loose. Once loose, the foxes can be hard to catch. With adequate shelter, Fennec foxes can handle most types of weather. If you plan on leaving your Fennec outdoors for any length of time, be aware of the fact that they like to dig and borrow. Make sure your yard is secure. Its best to have an outdoor pen with a mesh cover and fencing that extends several feet underground. In addition to a secure place to play, Fennec foxes also need a high-quality, high-protein diet. Dry dog or cat food supplemented with fresh vegetables, fruit, eggs, crickets, mealworms and canned dog or cat food is ideal. With proper care, Fennec foxes can live to 11 to 14 years. When cornered or threatened, Fennec foxes can get defensive and spray. They have a scent gland located at the tip of their tail, which produces a potent odor. Fortunately, the scent will wash away with soap and water.

Here are some suggestions taken from SPCA Wish Lists: Cat litter, dry cat food, dry and canned kitten food, puppy food, 39 gal. trash bags, 13 gal. trash bags, large stainless steel water dishes, dog chains, leashes and collars, hamster and rabbit food, bleach, 3x5 white and colored index cards, liquid laundry and dish soap, paper towels, and pet grooming aids. If its clear you dont have sufficient money coming in each month, consider ways to up your income. Do you need to work overtime, go after that promotion, pursue a new career or get a second job? If youre stuck where you are, circle back to your spending habits. You may need to downsize your house or car, stop eating out or cut up your credit cards. Youll be pleasantly surprised by the ideas you generate when you take the time to examine the numbers with a clear head and a critical eye.

Step Four: Follow your budget. Theres no point in making a budget if you dont intend to act on it. Keep your budget in front of you and document your expenses on a daily basis. Then adjust your spending as necessary. Monitoring your budget this way can make your money more manageable and give you the feeling of being in control. Step Five: Check in with a financial advisor. There are books and websites that can teach you the finer points for preparing and following a budget. But theres nothing quite like being in the presence of someone who can share their financial knowledge. THIS IS A HAMMER By Samantha Mazzotta When the Holidays Wont Light Up Q: I bought three strings of exterior holiday lights last year to decorate the trees in my backyard. This year, although I put them up the same way, half the bulbs on one string wont light. Whats going on? -- Carol in Cocoa, Fla. A: The problem is likely as simple as a single burned-out light bulb halfway down the string. Turn on the lights as you normally do and locate the first bulb on the string that will not light up. Mark that bulb with a small bit of masking tape so you can find it again, and then unplug the string. Go to the box where you stored your holiday lights and look for a container or a small plastic bag that contains replacement bulbs and fuses. Return to your string, locate the burned-out bulb, remove it by pulling it firmly straight out of the socket, and put a replacement bulb in its place. (The new bulb must be the same size and type as the old one.) Plug the string back in and turn on. If the bulb was the culprit, the entire string will relight. If that method doesnt work, you may have a fuse issue. Fuses are located in each of the plugs. If your strings are attached end-to-end and the failure occurs at one of these attachment points, try removing the old fuse from the attached end and putting in a replacement fuse (be sure to unplug the entire string before doing this, just to be safe). Fuse faults can occur when too many strings are attached end-to-end, overloading the circuit. Read the package instructions to find out the maximum number of light strings that can be attached to each other (three strings is a good limit). (c) 2011 King Features Synd., Inc.

I think not! Do you know that the Royals are fishing for a left-handed utility player? Well, the wags down at Dallas (where the meetings were held this year) know! And the fans back in Kansas City could not possibly be more riveted. They are literally queuing up outside the department-store window displays -- even when its snowing -- hands deep in their pockets, watching the TV sets through the glass to catch the latest news headlines. (Because thats how all news is gathered, right Hollywood?) A quizzical woman passes by, clutching her handbag and adjusting her hatpin. Say, she says. Did the Royals sign Jose Batista yet? The man tips the lid of his fedora and pulls the pipe out of his mouth, temporarily averting his gaze from the television sets. Say, responds the man. Not yet -- but they may have made a swell offer to Jerry Hairston! Say! she replies. That is swell! Say! he yells back, wild eyed, whipped into that jungle-like frenzy that the winter meetings bring out in all of us. Because whenever a general manager holds a press conference and says, Were here to try and improve the ball club, it speaks to an ancient, some would say, primal urge to just light fires and dance. And that, of course, is exactly what all of those folks in front of the department store proceed to do (except for the lighting fire part -- I mean, come on, lets not go too far here). They start off with a little two-step, then they kind of shake their hands in a hand-jive-meets-Michael-Jackson sort of way, before stomping their feet, doing a complete turn before tossing their heads back, throwing their hands in the air, simultaneously dropping to their knees and yelling out: Bautista! This ritual is repeated all over the country. In Tampa Bay, they shoot off cannons usually reserved for the annual Gasparilla pirate festival whenever an agent drops a hint that a player might be interested in signing a long-term deal to play for the Rays. (And dont even ask what theyd do if hes a left-handed reliever, because, oh boy! Look out! Are those real?) And whod have thought that the Yankees are looking to add pitching? And that the Sox are looking for a bat? I mean, these are the sort of things that can be uncovered only at the winter meetings, that wonderous three-day span which is, apparently, the only time baseball executives, managers, agents, Andrei Gromyko and Henry Kissinger can get together in the same room and communicate with one another. If you have pine trees in your area, collect the branches that drop on the ground and let them dry. You will need a lot, about thirty of differing lengths. Trim the needles to about four inches and paint the branches with spray paint of a color you choose (be sure the branches are dried out). Place a beam or pole of wood (get this free by looking around for waste lumber or by stripping a sapling) into a bucket of clay or plaster. Use old coat hanger wire and hobnails to create a loose spiral frame of wire around the beam. Insert the branches into the frame with long branches lower and short branches higher. Sculpt your tree. Make it very full. Use spray paint to color any unpainted spots. Then decorate. They last many years if you treat them well. -Van in AL

We havent seen each other since high school graduation, but recently Carlton and I got back together. And he told me this story. My dad gave me a really nice pen. In 3 1/2 to 4-quart slow cooker, combine chicken and soy sauce; mix to coat evenly. Add the stir-fry vegetables and reserved pineapple juice. Stir to combine. Cover; cook on low setting for 4 to 5 hours. 2. In small bowl, combine sweet-and-sour sauce, cornstarch and gingerroot or powdered ginger; and stir until well-blended. Stir into chicken mixture. Add pineapple chunks; stir gently to mix. 3. Increase heat setting to high; cover and cook an additional 20 to 25 minutes. Serve over chow mein noodles and sprinkle with the green onions. After a frustrated Kurt Busch lashed out against NASCAR and ESPN's Dr. Jerry Punch during the last Cup race of the season, owner Roger Penske and the driver decided on a "mutual parting of ways." In the final race of the 2011 season, a frustrated Kurt Busch, eliminated from contention at Homestead-Miami Speedway, first used a well-known gesture of derision toward NASCAR officials, then lashed out at ESPN reporter Jerry Punch, who was trying to interview Busch after he climbed out of his No. 22 Dodge. To make a long story short, the No. 22 Dodge won't be his anymore. Penske Racing announced a split with the older Busch brother, who finds himself out of a ride. It's a major development. Kurt Busch has won 24 Cup races and was the winner of the first Chase, in 2004. Since leaving Roush Fenway Racing for Penske in 2006, Busch ranks eighth in driver rating and 10th in victories, topfive and top-10 finishes.

The split was officially termed "a mutual parting of ways," which isn't uncommon. Both owner Roger Penske and Busch were gracious in statements issued on Dec. 5. "I appreciate the victories that Kurt has brought Penske Racing and our sponsors over the past six years," said Penske's statement. "While I am disappointed that Kurt will not be racing for our team in the future, both Kurt and I felt that separating at this time was best for all parties, including our team and sponsors. I wish Kurt the best in his future racing endeavors." Kurt Busch had already been fined $50,000 by NASCAR officials for his Homestead antics. Busch's statement read, in part: "I am grateful to Penske Racing for six very productive years. ... I also appreciate the lasting friendships I've made while working with our great sponsors through the years, including Miller Lite, Shell and Dodge. "Coming to a mutual agreement to go our separate ways is a positive step for me. Over the Thanksgiving holiday I took time to reflect on what is most important to me and realized I need to find a way to put the fun back into racing. It's time for a fresh start. Leaving a great organization and a lucrative contract is not easy, but it allows me to take a deep breath and work on things that can make me a better driver and a better person. JILL JACKSON'S HOLLYWOOD By Tony Rizzo HOLLYWOOD -- Remember "The Addams Family," the creepy, kooky sitcom that ran for 64 episodes in the mid-1960s, starring John Astin and Carolyn Jones as Gomez and Morticia Addams? It was revived for two films with Raul Julia and Anjelica Huston in the starring roles in '91 and '93. With Raul Julia's death, a '98 film reboot starred Tim Curry as Gomez and Daryl Hannah as Morticia. That year, ABC Family revived the series, again with John Astin as Gomez, which ran 65 episodes. This summer I saw "The Addams Family" (the musical) on Broadway with Brooke Shields and Roger Rees (of "Cheers") as Morticia and Gomez. Now Tim Burton plans to write, produce and possibly direct a stop-action animated film of "The Addams Family" along the lines of his "Nightmare Before Xmas" film. Another spooky sitcom, "The Munsters," also debuted 1966 and ran for 70 episodes, with Fred Gwynne as Herman Munster and Yvonne De Carlo as his wife, Lily. In l981, NBC made "The Munster's Revenge" with the same cast. In '88, "The Munsters Today" brought back the series for 72 shows. In '95 Edward Hermann and Veronica Hamel took over in "Here Come the Munsters." The following year, Fox TV gave us "The Munster's Scary Little Christmas." Now that "Once Upon a Time" and "Grimm" are grabbing viewer attention, NBC has given "Pushing Daisies" creator Bryan Fuller the green light to develop a one-hour drama series about the Munsters. So, if you're too young to have seen "The Addams Family," "The Munsters"

or even "Mr. Ed" -- it looks like you'll be seeing them again ... and again ... and again! *** While the three leads of "Twilight Saga" -- Robert Pattinson, Kristin Stewart and Taylor Lautner -haven't been able to equal their success in anything else, fellow castmember Jackson Rathbone seems to be forging ahead with several impressive projects. His band 100 Monkeys had three CDs in 2009, and a new CD, "Liquid 200," came out in June. He's got two films now shooting -"Truckstop" and "Live at the Foxes Den" -- and two films in the can -"Cowgirls 'n' Angels" and "Zombie Hamlet" with Shelley Long and John Amos. And, of course, "Twilight Saga: Breaking Dawn, Part 2." DOLLARS AND SENSE BY David Uffington How Do You Pay Off Debt? When youre saddled with multiple debt payments every month and want to put extra money toward paying off one at a time, how do you decide which debt gets the extra money first? There are two schools of thought: Some financial gurus advise paying off the smallest debt first, and then using that extra money to attack the next smallest. Others believe in going for the one with the highest interest rate first, no matter how large or small the debt. But when it comes down to it, its the consumer, not the financial wizards, who ultimately write the checks. And its consumer who, for the most part, will pay the smallest debt first, no matter the interest rate. Now a University of Michigan study (Winning the Battle but Losing the War: The Psychology of Debt Management) has uncovered the reasons for consumer debt repayment decisions. Researchers concluded that consumers will pay off a small debt first, even if a larger debt has a higher interest rate, for the emotional and psychological satisfaction of retiring a debt -- a quick win, as they dubbed it. Correct or not, consumers are concerned with reducing the number of debts more than they are with the dollar value of the debts. It was only when consumers were shown the amount of interest they were paying that some saw the sense in changing their repayment methods. Credit-card companies are now required to show in a box on each months statement just how long it will take you to pay off the debt if you make only minimum payments, as well as a sample comparison to how much youd have to pay each month to retire the debt more quickly. You can make use of an online calculator to show 1) how quickly a debt will be paid off if you make payments of varying amounts, and 2) how much interest youll be paying during that time. Search online for credit card payment calculator, then do the math for each of your debts to see which plan gets you debt-free the fastest. The bottom line: No matter which method you use to pay off debts, be sure it makes financial sense. Always make more than the minimum payment to protect your credit scores.

Most people who have had a heart attack can resume an active sex life within three to six weeks of having the attack. I understand it's not caused by uric acid but by calcium. Can you tell me more about it and what can be done for it? -- C.B. ANSWER: Faux (French for

Shoulders, ankles, elbows and hands also might be targets. Who told you that you have this condition? A doctor requires X-ray examination of the affected joint before declaring that a person has pseudogout. Stronger evidence of the diagnosis is obtained by

drawing fluid from the joint and examining it microscopically. The distinctive crystals of CPPD can be seen -- proof positive. Holiday Help for Diabetics My husband and several family members are diabetics, and I'm mindful of their health challenges when preparing holiday meals. Holiday celebrations are all about food, and this can be a very challenging time for individuals dealing with diabetes. Holiday stress and bountiful food can lead to impulse eating and risky bloodsugar levels. Forgoing all holiday foods isn't really an option for those with diabetes, since food is a major part of our celebrations. With some planning and by keeping to your routine, you, too, can manage your diabetes and keep blood sugar under control. Try these tips to help face the holidays head on. Monitor your blood sugar -Maintain your routine of checking your blood sugar and monitor more closely if eating frequently or at irregular times. Eat before the party -- To avoid overeating, eat sensibly during the day of a party. Otherwise you'll arrive hungry, making it hard to maintain control. It's important to spread your carbohydrates evenly throughout the day to better manage diabetes. Be choosy -- Look over the

food offerings, and don't waste calories and carbohydrates on foods that you could eat anytime. Save space in your meal plan for "special" holiday treats. Some people find it helpful to keep a food journal during the holidays to help track carbohydrates and avoid overeating. Downsize portions -- Trim your portion sizes, especially if you're not certain about the ingredients in a tempting casserole or dessert. Control the amount you eat by either limiting yourself to one trip through the buffet line, or make the first trip primarily vegetables and salad, then your second helpings could be small portions of heartier, richer fare. Bring your own healthful food -- Food won't be a challenge if you take along a vegetable dish to share that contains little or no carbohydrates (like my recipe for Microwave Lemon and Garlic Green Beans). Others will appreciate the low-calorie option as well. Consider revising a favorite holiday recipe by substituting lower-calorie ingredients. For example, instead of fried onions in the green bean casserole, add roasted, caramelized onions and lower-fat mushroom sauce. For dessert, use sugar-free gelatins or puddings. Keep eating in perspective -Focus on the fun, not the food. Enjoy connecting with family and friends during the holiday gatherings. Spend your time in conversation rather than thinking about what's on your plate. It's often helpful to keep your back to the buffet table, or move to another

part of the room. Stay active and get plenty of rest --Holiday stress and fatigue can be reduced with adequate sleep and exercise. Physical activity, like walking or lifting weights, will lower your stress, burn calories and help control blood sugar. Lack of sleep can influence your hunger and increase stress. Use these tips and this delicious recipe for Microwave Lemon and Garlic Green Beans to safeguard your health. Have a happy holiday season! MICROWAVE LEMON AND GARLIC GREEN BEANS This easy microwave recipe uses steam to cook the dish quickly and bring out the best flavors in fresh green beans. Tossing the green beans in the garlic-infused oil, lemon juice and basil is a delicious way to finish the dish. 1 pound fresh green beans, preferably thin French haricots or frozen, whole green beans 2 tablespoons water or reducedsodium chicken broth 1 tablespoon Italian seasoning 1 1/2 tablespoons olive oil 2 cloves garlic, smashed, peels discarded 1/2 teaspoon salt 1 teaspoon freshly ground black pepper 1 tablespoon lemon juice 1 teaspoon grated lemon zest 3 to 4 fresh basil leaves, minced 1. To trim green bean ends: Gather a handful and stand them up on the cutting board while holding loosely so the beans line

up. Then lay them flat and trim the ends. Cut the beans into pieces, about 2 inches long.

2. Place beans in glass bowl with the water or chicken broth and 1/2 tablespoon of Italian seasoning.

Cover with plastic wrap and microwave on high 2 minutes. 3. Heat olive oil in a large frying pan over high heat. Add garlic cloves and stir about 1 minute to season the oil. Be sure not to brown or burn garlic, or it will taste bitter. Remove garlic and discard. Add beans, remaining Italian seasoning, and salt and pepper. Stir for 2 to 3 minutes, until beans are crisp-tender and take on a golden brown color. 4. Lower heat, then pour lemon juice over beans. Stir beans, turn off heat and sprinkle with lemon zest and basil. Makes 4 servings. THE KITCHEN DIVA By Angela Shelf Medearis Leftovers for Lunch After the holiday feasts are over, I always want flavors that are polar opposite of the turkey, ham, dressing and sides Ive cooked and eaten recently. I usually crave Mexican food -- partly because I live in the Southwest, but also because the spicy ingredients differ wildly from my traditional holiday recipes. Ive learned a few tricks to use my leftovers in combination with the flavors I crave to create great dishes like these Turkey Soft Tacos. Leftover turkey works beautifully with the spices in this recipe. The salsa adds moisture to the cooked turkey and a peppery flavor. The tacos are perfect for lunch or a light supper. TURKEY SOFT TACOS 1 1/4 pounds cooked turkey meat, white, dark or combination 1 1/2 tablespoons olive oil 1 medium red onion, finely chopped 4 teaspoons paprika 1 teaspoon ground cumin 1 teaspoon chili powder 1/2 teaspoon cayenne pepper 1/2 teaspoon salt 1 teaspoon freshly ground black pepper 2 cups salsa, hot or medium plus more for topping, if desired 1 can (15 ounces) black beans, rinsed and drained 1 cup frozen corn, thawed or leftover cooked corn 8 flour tortillas (8 inches) 2 cups Iceberg or Romaine lettuce, shredded 1 cup shredded reduced-fat Mexican cheese blend 1 large tomato, sliced into 8 pieces 1 large avocado, peeled and sliced 1 tablespoon minced fresh cilantro 1. Shred the turkey meat and set aside. In a large skillet, heat oil and add in onion, paprika, cumin, chili powder, cayenne pepper, salt and black pepper. Cook over medium heat until the onion is tender, about 3 minutes. Add salsa, beans and corn; cook and stir for 2 minutes or until heated through. 2. Wrap the tortillas in food-safe paper towels and sprinkle both sides with water. Place tortillas in microwave and heat on HIGH for 30 seconds or until warm and pliable. 3. Place about 1/2 cup turkey mixture down the center of each tortilla; top with 1/4 cup lettuce and 1 tablespoon cheese. Fold sides of tortilla over filling. Serve with tomato, avocado, cilantro and remaining cheese and salsa. Mysterious Mistletoe

Scandanavians associated Mistletoe with Frigga, their goddess of love, and it may be from this that we derive the custom of kissing under the mistletoe. Those who kissed under the mistletoe had the promise of happiness and good luck in the following year. The practice of kissing under the mistletoe was described in 1820 by American author Washington Irving in his "The Sketch Book of Geoffrey Crayon": "The mistletoe is still hung up in farm-houses and kitchens at Christmas, and the young men have the privilege of kissing the girls under it, plucking each time a berry from

the bush. When the berries are all plucked the privilege ceases. Mistletoe was used by Druid priests 200 years before the birth of Christ in their winter celebrations. They revered the plant since it had no roots yet remained green during the cold months of winter. Mistletoe is intriguing botanically because it is a partial parasite (a "hemiparasite"). As a parasitic plant, it grows on the branches or trunk of a tree and sends out roots that penetrate into the tree and take up nutrients. But it also can grow on its own and produce food by photosynthesis. The mistletoe that is commonly

used as a Christmas decoration (Phoradendron flavescens) is native to North America and grows as a parasite on trees in the West and also along a line down the East Coast from New Jersey to Florida. European mistletoe (Viscum album) figured prominently in Greek mythology, and is believed to be The Golden Bough of Aeneas, ancestor of the Romans. It is said that among Romans, enemies who met under mistletoe would lay down their weapons and embrace. Mistletoe is rarely found growing on oak trees, and as such was especially sacred to the ancient Celtic Druids. On the sixth night of the moon, whiterobed Druid priests would cut the oak mistletoe with a golden

sickle. Two white bulls would be sacrificed amid prayers that the recipients of the mistletoe would prosper. The sticky juice of mistletoe berries was used as adhesive to trap small animals or birds. In South Africa, it is called "Bird lime" in English. According to custom in the English-speaking world, the mistletoe must not touch the ground between its cutting and its removal as the last of Christmas greens at Candlemas; it may remain hanging through the year, often to preserve the house from lightning or fire, until it was replaced the following Christmas Eve. In some parts of England, the Christmas mistletoe is burned on the 12th night lest all the boys and

TO YOUR GOOD HEALTH By Paul G. Donohue, M.D. Wine -- Good or Bad DEAR DR. DONOHUE: I am thoroughly confused. Several months ago, I read of the benefit of wine for women. The conclusion was that it reduced a womans chances of heart attack and stroke by 30 percent. My husband and I have started to drink one glass of wine a day. Now comes a new report that says just one glass of wine a day increases the chances for breast cancer. Should I be concerned? -- M.T. ANSWER: Welcome to the army of nutrition confusion. Whats good one day might be life-threatening the next. I dont rely on one report. I stick to what the majority says. If the majority changes its mind, then I change. Wine and other alcoholic drinks lower the incidence of heart disease and, apparently, strokes. Thats the current majority thinking. Moderate drinkers of alcohol -- wine in particular -- have a lower overall mortality rate than do alcohol abstainers and heavy drinkers. Moderate drinking is one glass of wine, one 12-ounce can of beer or 1.5 ounces of whiskey for women; its two for men. The role of wine (or alcohol) in promoting breast cancer is less clear. Analysis of 40 studies shows an increase in breast cancer for women downing three or more drinks a day. The same studies suggest that even one or two daily drinks might pose a slight danger. Other studies show an increase in lobular breast cancer with one drink a day, but no increase in ductal breast cancer. Ductal cancer is the most common kind of breast cancer. I am positive that equally confusing information will be forthcoming. The best advice I have read is this: If a woman truly savors drinking wine, one glass a day is relatively safe in regard to breast cancer. The benefits of heart health and prevention of stroke are not so great that they should induce anyone to change from being a nondrinker to a drinker. SENIOR NEWS LINE by Matilda Charles Yes, You Can Afford a Pet Those of us who have pets know the benefits of pet ownership. Theres just something very physically and emotionally positive about owning a cat or dog, and the research literature is full of proof. We generally have lower blood pressure because pets reduce stress and anxiety. Maybe its the soft fur to pet, the funny antics or the happy welcome when we come home, but were happier and better able to fend off depression. Were also in better shape, more active and physical, because of the care we need to give: walking, throwing toys, feeding, bending to put down food and water, daily brushing. Limited incomes can come into play, however. If you have a pet but are considering giving it up because of the cost of pet food, wait. All across the country there are local groups that can help you keep your pet. Some will help financially if the cost of food is too much. Others will help with the cost of veterinary care. One group will even take care of your pet if you go into the hospital. Other groups will match seniors with pets and provide help. If you receive Meals on Wheels or another program, they often have pet food they can deliver too. Your first calls should be to the local humane society, the pet store or the veterinarian: Theyre the ones most likely to know about programs available in your area. Or go online and search for pet food assistance and put in your town and state. If you dont have a pet, consider starting the New Year with an adult pet thats outgrown the puppy/kitten stage and needs someone to love. It will be good for both of you!
