ALL RECORDS BROKEN BETWEEN NEW YORK AND LONDON: THE MAURETANIA BEATS A CRACK GERMAN LINER BY SIXTEEN HOURS.

All Atlantic records were brolcen by the Mauretania, which dropped anchor in Fishguard Harbour at five minutes past one yesterday afternoon, thus inaugurating the new Cunard service between that port and New York. Leaving New York exactly twenty-four hours after the North German Lloyd liner Kaiser Wilhelm der Grosse, the Cunarder landed her passengers in London less than eight hours after those who liad travelled aboard the German vessel. Passengers who breakfasted last Wednes-

SOLUTION OF THE DIFFICUUTV. An excellent m a r r o w j a m can be made from either the ripe or green marrow, a different flavour being obtained in the two cases. Pare the marrow, removing the pith and all seeds, and cut it into neat dice about an inch across. Weigh, allowing for every pound of marrow ^Ib. of loaf sugar, the juice and fmely-shred rind of half a lemon, and ^oz, of the best root ginger, well bruised and cut into small pieces. I'lit the marrow in an enamelled bowl, with a little sugar over it to draw out the juice, and leave it to stand overnight, when a quantity of juice will have run from it. iSoil gently, together with the lemon and ginger (the latter tied in a muslin bag), until tender. Add the remainder of the sugar, bring again to the boil, and let it simmer until the marrow is quite transparent ant! the juice sets when poured on to a cool plate. Remove the bag containing the ginger, and i)our the j a m , while sidi hot, into glass jars. 'J'he preserve should be the colour of pineapple, and quite clear. If the ginger is liked, instead of puttiiig it in a bag, boil it until tender in a little of the juice before adding it to the marrow, as it takes much l o n g e r t o soften.
