They used honey instead of candi sugar to add a degree of complexity and then aged the beer for three months in Bourbon barrels acquired from Hair of the Dog (their Adam was stored for over two years in these barrels). They chose to use these tempered barrels because it brought the level of Bourbon down to where it balanced nicely with the Honey Triple. See if you can detect all the flavor notes in this one-of-a-kind beer. Rose hips were added after the primary fermentation was complete, just enough to give a hint of fruitiness.
