HISTORY OF BAKING
The baking industry came into existence with the invention of bread. Ovens made of rocks were used for baking. The dough was put into the stone chamber which was heated before with fire and the dough was cooked into bread. In earlier days common society ovens were used to cook bread as a tradition.

The raw materials can be categorized into two categories:Primary Raw Material- The materials which are essential for the production process. Flour Cold Water Yeast Salt Sugar
FERMENTATION
The molded dough is kept in the covered metal boxes and stored in a temperature controlled area until it rises.

BAKING PROCESS
The pans containing the fermented dough is now moved into the oven. Temperature and speed are carefully calculated so when the loaves come out of the oven they are completely baked.
COOLING PROCESS
The baked process are hot and also contain 40% of moisture. The loaves are now kept in a cooling tunnel which reduces the temperature of the loaves and also the moisture is removed. The loaves are now moved to a slicing area where they are sliced and packed also.
DISPATCHING PROCESS
The packed loafs are placed in the plastic crates and then loaded on the trucks for their dispatch.
INVENTORY MANAGEMENT
Good morning bakery keeps a bulk amount of flour as raw material. It places bulk orders for wheat flour directly from the mills and stores it under separate area. The consumption of flour is done on FIFO basis so as maintain the quality of the flour which is stored. The finished products are dispatched immediately to the distributers to maintain its freshness.
QUALITY CONTROL
Quality checks are performed at each step of the production process. Taste checks, Chemical analysis and visual observations are done to ensure quality. Amount of moisture is very critical, a ratio of 12 to 14 is ideal for the prevention of bacteria growth. It is mandatory to keep the bakery plant clean, they use fungicides and ultraviolet lights to maintain quality.
