Microbiota tractului intestinal este n funcie de specie, dar, n general, microbiota digestiv aparine urmtoarelor trei grupe: o microbiot dominant (90% din total), care este format n principal din Bifidobacterium, Lactobacillus i Bacteroides o microbiot subdominat (1% din total), format din Escherichia coli, Enterococcus i Streptococcus o microbiot rezidual (< 0,01% din total), format din Proteus, Clostridium, Staphylococcus i Pseudomonas, drojdii aparinnd speciei Candida, fungi i alte bacterii cu putere eventual patogen
Probiotic (Fuller, 1989, 1992) supliment alimentar cu organisme vii care influeneaz benefic organismul gazd prin mbuntirea echilibrului microbian intestinal. Prebiotic (Gibson i Roberfroid, 1995) ingredient alimentar nedigestibil care influeneaz benefic organismul gazd prin stimularea selectiv a creterii isau activitii unor specii sau unui numr limitat de bacterii n colon. Efectul benefic al administrrii de probiotice se manifest prin urmtoarele mecanisme: inhibarea bacteriilor nedorite prin: diminuarea pH-ului datorit produciei de acid lactic, absorbia nutrienilor disponibili, diminuarea potenialului redox, producia de H2O2 n condiii aerobe, producia de bacteriocine. Bifidobacteriile au o morfologie variat: celule scurte, coccoidale, celule ramificate, bifurcate, spatulate, izolate sau n lanuri, dispuse n V sau palisade. Sunt Gram-pozitive, neacido- i alcoolorezistente, nesporulate, imobile, anaerobe, catalazo-negative, nu reduc nitraii la nitrii, nu formeaz indol i nu lichefiaz gelatina.
