Tamarind tree
Tamarind tree produces edible, podlike fruit called tamarind or Tamarindus
indica .
Belongs to the dicotyledonous
subfamily Caesalpinioideae
(Leguminosae).
Tamarind tree has Red and yellow
elongated flowers .
Grows in more than 50 countries of the
world
major areas of production are in Asian
countries like India, Bangladesh, Sri
Lanka, Thailand, and Indonesia, and in the
African and the American continents.
Mature tree may attain a maximum
height of 30 m.
Tamarind tree has the ability to grow in
poor soils because of their nitrogen fixing
capability and withstanding long periods of
drought makes them ideal low input, high
yielding trees.

65% white kernel.
Tamarind seeds are rich in
polysaccharide. containing (65- 72%) and
seeds also contains lipids 6%,
carbohydrates, fibres, oils,sugar, glucose,
xylose and galactose units.

byproduct of the tamarind pulp industry.

Roasting-Roasting is a means to decrease water level and to soften the shell such that

separate by winnowing (Gerard, 1980).
Screening-When tamarind seed powder is used as thickener, the thick liquid without clod
is more desirable. It should be ensured that powder has been well separated before it is heated
in liquid form (Charley, 1970). The use of tamarind seed powder as thickener is depended on
the purity and the provision of demanding size. Whole tamarind seed powder should pass 150300 mesh screen. Such tamarind seed powder specification will produce good result (Rao,
1983).
Packing-Tamarind seed powder is produced, and then packed in water resistant package.
Overheat and over humidity should be avoided. Packed tamarind seed powder is saved in dry
space such that it can be stored for long period.
