A COLLECTION OF GENERALLY RECOGNISED

RULES , PROCEDURES AND PRACTICES THAT
TOGETHER PROVIDE A CODE STATING WHAT IS
ACCEPTABLE AND UNACCEPTABLE IN THE FOOD
INDUSTRY . THIS IS MAINLY IN THE FIELDS OF
HYGIENE ,FOOD PRESERVATION , AND
TECHNOLOGY .
THE ULTIMATE AIM IS TO PROVIDE OUR
CUSTOMERS WITH FOOD FREE FROM
CONTAMINATION

S1 SORT AND DISCARD

Main aim is to remove clutter from the workplace
and to place materials , equipment , etc in a
position to make work more effective .
This element of 5S provides a technique to
remove unwanted materials . NGMP standards
will help in determining which ones to keep .
NGMP indicates what is needed in a certain
area .

NGMP helps with the following :-

Personal practices with respect to protective

clothing . eg., safety clothing , personal uniforms
for different areas .
Practices with respect to packing and labeling of
product .
Zoning requirements for different areas of
factory eg., cleaning tools , uniforms , personal
hygiene .
Mapping of all service lines such as water ,
remove those that are not necessary .
Requirements with respect to fitters tools .
Cleaning chemical requirements .

S2 SHINE AND INSPECT

Main aim is to make defects obvious and hence
helps with problem solving .

This element of 5S provides the process to

achieve NGMP standards .
NGMP standards indicate the level of cleaning
required in different areas of the factory .
For example cleaning check sheets to include
basic NGMP standards .

NGMP helps with the following :

Cleaning requirements for different zones in the

factory .
Cleaning of equipment , types of cleaning
materials , cleaning tools .
Guidance on types of lubricants .
Rules to prevent foreign matter contamination .
Storage of cleaning materials .
Hygienic design .

S3 SIGNPOST AND ORDER

Making it visibly clear where everything is
located .

This element of 5S provides means to achieve

this transparency .

NGMP provides standards

NGMP helps with the following :

Identification of CCPs .

Marking of different zoned areas .

Identifying cleaning tools , materials and

waste receptacles .

Storage of scrap , rework , WIP .

Documentation control .

S4 SIMPLIFY AND
STANDARDISE

Involves simplifying work practices and

ensuring they are consistently applied .
This fits in well with our behavioural based
safety programme and especially the Move
at Work programme .
5S provides means of ensuring practices are
consistent between shifts , etc .
Hygienic design provides standards for this
initiative .
Process control aimed to eliminate waste .
Also help to drive this element of 5S .

NGMP helps with the following :

Process control ( part of Advanced Level )

aimed at standardising the process and
eliminating waste .
Hygienic design provides information on how
to design the work place to maximise the
effectiveness of cleaning, eg., coving of
walls , no hollow bodies , removal of possible
sources of pest infestation , non use of
porous materials .

S5 - SUSTAIN
Refers to strategies to ensure first four
elements are properly maintained and
improved .

The NGMP check lists measure the state of

the area against the NGMP standards .
The 5S check sheets measure progress of
the 5S programme . This programme is
aimed at achieving the NGMP standards ,
etc .

Review contents of 5S checksheets and how

NGMP standards are required .
Use of NGMP to help determine priorities for
5S :

First food safety .

Food contact surfaces or machinery .
Then major quality parameters .
