ENRICHED FUNCTIONAL FOODS

What are enriched foods?

They are foods to which

one or several
ingredients have been
added, whose chemical
structure or
bioavailability of
nutrients has been
modified or a
combination that is to
say they are modified
foods.
FOOD ENRICHED WITH OMEGA 3

They are foods rich in Omega 3, EPA and DHA (long chain
omega-3 fatty acids), blue fish such as salmon,
mackerel, sardine, trout and rich Omega 3 alpha-linoleic
(short chain omega 3 fatty acid) nuts, rapeseed,
soybeans, flax seeds and their oils.

• Milk enriched with omega -3

• Soy drink enriched omega -3
• Eggs enriched in Omega-3
• Oils and fats enriched in Omega-3
FOOD ENRICHED WITH
PHYTOSTEROLES

Functional foods enriched with phytosterols are a way to help

control the level of plasma cholesterol. There is research done
on margarines with phytosterols where it is evident that
consuming 20 grs. of margarine per day with 8 - 10% of these
compounds, cholesterol and LDL are reduced by 8 - 13%. This is
equivalent to the consumption of 1.6 to 2 grams. of
phytosterols per day

• Margarine plus phytosterols

• Yogurt plus phytosterols
• Oil plus vitamin E plus phytosterols
FOOD ENRICHED WITH
ANTIOXIDANTS

The habitual intake of substances with antioxidant activity has been

shown scientifically related to the reduction of cardiovascular
diseases. It is the oxidation of one of the proteins that carry
cholesterol through the blood. Among the antioxidants, we highlight
the
• Vitamin E
• Nuts
• Wheat germ
• Vitamin C
There are many food products (fruit juices, milk drinks and juice ...)
with one or several antioxidants (added by the food industry) to slow
these oxidative organic processes as much as possible. But we must be
careful with the amount of antioxidants ingested, because although
they develop a beneficial effect when they are ingested as part of a
food, it has been proven that, for example, beta carotene
administered in high doses and pure state outside food it becomes
prooxidant; that is, it achieves the opposite effect to the desired one.

Foods without allergens

 A non-allergenic food is defined as a product or ingredient that does not

contain proteins that can potentially cause severe (occasionally fatal) reactions
in a person allergic to these foods.
 The healthy component has been able to associate "marquetinianamente"
successfully to the marches of "gluten-free" and "lactose-free", opening the
range to a population that is increasingly more obese but paradoxically more
concerned with healthy habits.
 The eight main food allergens (milk, egg, peanut, walnuts, wheat, soy, fish and
shellfish) are responsible for most serious food allergy reactions.
food products without allergens

Organic food
If a food is labeled as "organic", what does this label mean? To meet the criteria
established by the US Department of Agriculture. (USDA, for its acronym in English),
for a food to be considered organic must grow without:
 pesticides
 fertilizers made with synthetic ingredients or sewage sludge
 herbicides
 antibiotics
 biological engineering
 hormones
 ionizing radiation
Organic foods of animal origin (meat, poultry, eggs and dairy products) come from
animals fed 100% with organic food, which have not received antibiotics or hormones
and have had access to the outdoors.
Alimentos ecológicos
 Distintas variedades de vegetales: frutas, verduras, especias y
hortalizas
 Cereales
 Harina
 Pasta
 Arroz
 Chocolate
 Carne
 Pescado
 Huevo
 Leche y otros productos lácteos, como el queso o los yogures
 Vino
 Café

VEGETARIAN FOODS
Vegetarian nutrition is gaining more popularity every day, not only
because it is a diet that goes hand in hand with the fight for fair
treatment of animals, but also because of the benefits it brings to
human health. Many of the people who choose vegetarianism are
usually out of desire to recover from illnesses, such as heart
problems, high blood pressure or obesity.
Veganism and vegetarianism
Globally, the demand for vegan or vegetarian products is increasing in recent
years as more and more people avoid eating animal products. There is a
growing tendency in the offer of dishes in which the meat is replaced by
analogous ingredients made with vegetables. According to data from
Mintel18, between 2010 and 2016, the number of product launches
incorporating the term "vegan" has increased by 257% in the world.

NUTRACÉUTICO
• Term coined by Dr. Stephen DeFelice, Director of the
Foundation for Innovation in Medicine, in 1989
• It comes from Nutriment and Pharmaceutical
• "A food or part of a food that provides health benefits,
including the prevention or treatment of a disease
New trends
• Obtain from food the beneficial substances
• Isolate, concentrate and sell them separately
• Many of them have been identified, BUT ...
• Few claims have been approved
• "Nutraceuticals" are sold in the form of food
supplements
Vegetables and fruits or pills?
• Not all beneficial compounds can be purchased in pills
• Not all extracts are standardized
• Not all products are "pure"
• Supplements prevent other beneficial
phytocompounds from being consumed
• The synergistic effects of other compounds and / or
their dietary matrices are avoided
