CLASSIFICATION OF
COOKIES
Drop cookies
- are made from
butter dropped onto
the baking sheet from
a teaspoon, hence the
name.
Rolled Cookies
- have little or no
liquid. Only a small
amount of a liquid
is desired on rolled
cookies.
Molded Cookies
- are those which are
formed into the
desired shapes with
the hands and also
made from a stiffer
dough that is molded
Bar Cookies
- are made by
spreading the dough
on a pan, then
baking and cutting it
into pieces.
Refrigerator cookies
- are so named
because the dough
must be chilled in
there refrigerator
before baking.
Pressed cookies
- are formed with a
cookie press. A
cookie press is a
device for making
pressed cookies
