RESEARCH PROBLEM

The main problem of this study is the risk of having a high


blood sugar / diabetic people. Many people loves eating
sweets mostly after eating meal and they called it “pang
himagas.” The researches developed a product that can help
diabetic people to eat Jackfruit Brittle without letting their
blood sugar, high.
BACKGROUND OF THE STUDY

Jackfruit is the largest fruit in the world which has a lot of health
benefits that is needed by our body. It produces thick, rubbery, and
whitish to yellowish wall with a large number of a bulbs inside the
fruit. Various Jackfruit plant parts, including the dark, mood, cares,
fruit, and seeds, may exhibit a broad spectrum of antibacterial
activity. Jackfruit has a nice smell that will boost the appetite of those
person who will smell this kind of fruit.

SCOPE AND DELIMITATION

This research focuses itself to the study of development of “Jackfruit


Brittle” in Crecencia Drusila Lopez Senior High School for the school
year 2019-2020 in terms of acceptable factors; (Taste, Odor/Aroma,
Texture,Packaging, Appearance). The 30 respondents are randomly
selected from Home Economics Strand including Cookery and Bread
and Pastry Production / Food and Beverages Services students.
SIGNIFICANCE OF THE STUDY

 This research will help those people who are suffering from diabetes
because it regulates your blood sugar when you are eating Jackfruit
Brittle.
 This research will help those people who are suffering from different skin
diseases because it contains water that help to keep your skin
moisturized and youthful and the anti-oxidant help slow the aging
process.
 This research will help those people who have a poor digestion because
Jackfruit Brittle is packed with fiber, which helps improve digestion and
prevent constipation.
DEFINITION OF TERMS

Brittle is a type of confection consisting of flat broken pieces of hard


sugar candy embedded with nuts.
Grinding helps to reduce to powder or small fragments by friction.
Lignans is a class of propyl phenolic dimers including many found in
plants and note to having anti-oxidant.
REVIEW OF RELATED LITERATURE

No one knows the Jackfruit’s place of origin but, it is believed indigenous to


the rainforest of the Western Ghats. It is cultivated at low elevations
throughout India, Burma, Ceylon, Southern China, Malaya, and the East
Indies. It is common in the Philippines, both cultivated and naturalized. It is
grown to a limited extent in Queensland and Mauritius. In Africa, it is often
planted in Kenya, Uganda and former Zanzibar. Though planted in Hawaii
prior to 1888, it is still rare there and in other Pacific Islands, as it is in most
of tropical America and e West Indies. It was introduced into northern Brazil
in the mid-19th Century and is more popular there and in Suriman than
elsewhere in the New World.

LITERATURE
 According to Palipane and Rolle and Ramil , the maturity indices of
Jackfruit are as follows:
1. The fruit matures in about 12-16 weeks after flower anthesis.
2. Fruit colour changes from green to green yellowish.
3. A dull, hollow sound is produced when the fruit is tapped by the
finger.
4. Fruit spinel becomes well developed and wide spaced.

5. The last leaf of the peduncle yellows.
6. An aromatic odor develops.
7. The number of spikes on the outer skin is decreased and spikes
become flatter.

According to the study carried out by Fernando, the hot
water extract of Jackfruit leaves significantly improved
glucose tolerance in the normal subjects and the diabetic
patients when investigated at oral doses equivalent to
20g/kg.
RESEARCH DESIGN

This study will employ the descriptive – evaluate method of


research. The descriptive research method refers to the method
used to describe data and characteristics used to describe the
population. Jackson (2009) emphasized that in utilizing a
descriptive – survey method research, the participants answer
questions administered through interview or questionnaires.
RESEARCH DESIGN

The purpose of using the descriptive research method is to


acquire accurate, factual, systematic data that can provide an
actual picture of the data set for review.
Hale (2015) defined quantitative method treat the value of the
results through giving verbal interpretations. In this study, the
quantitative part will treat the value of the quantitative results
gathered through the survey questionnaires.
RESEARCH INSTRUMENT

 The research method that was used in the study is the survey or
the questionnaire method.
 The questionnaire was designed to measure the agreement and
disagreement of the students to the given scenarios a well as their
personal assessment.
 The questionnaire is simple and only requests the respondents to
rate the given statement.
 The questionnaire was used to strengthen the outcomes of the
inventory.

Simple sample sampling – the simplest or the easiest form


of probability sampling. The researchers decided to use it
because biased is reduce every body get equal chance to
be selected.

The data gathered from the questionnaires were tallied, tabulated
and subjected to statistical treatment to build analysis and
understanding of the data gathered.

tendency of the data in question. It is determined by adding all
