TYPICAL DISH? WHY?
My love for sushi is so strong that I felt it needed to be
documented and shared.
The Origin of Sushi
Sushi traces its origins back for millennia, to the rice fields of
Asia – China, to be specific. This may be shocking to you, as
most people assume that sushi was first created in Japan.
However, this is not the case. While Japan is certainly the sushi
capital of the world – and responsible for introducing the dish
to travelers – sushi traces its origins back to a Chinese dish
called narezushi.
This dish consisted of fermented rice and salted fish. And,
despite what you may think, it wasn’t fermented and salted
for flavor. The dish’s earliest known origin was in the 2nd
century BC – so it predates refrigerators by nearly 2,000 years.
Because of this, narezushi was actually a very practical dish.
The rice was fermented to preserve it, and the fish was also
salted heavily to prevent the growth of bacteria and
microorganisms – keeping it fresh longer, even when stored
without any kind of refrigeration. And, interestingly, the rice
was typically thrown out when eating the fish. It was used only
to wrap and preserve the fish.
The dish spread from China to Japan in the 8th century. The
first reference to “sushi” appeared in the Yoro Code, written in
the year 718.

pescado también fue salado en gran medida para evitar el
crecimiento de bacterias y microorganismos, manteniéndolo
fresco por más tiempo, incluso cuando se almacena sin ningún
tipo de refrigeración. Y, curiosamente, el arroz generalmente
se tira al comer el pescado. Solo se usaba para envolver y
preservar el pescado.

is celebrated on 1 and 2 of November

• Chiako is active and healthy. She gets up at 7:00 a.m. every day and goes for brisk walk.
Three times a week, she plays gate-ball - a popular national sport- with her friends. There
is nothing unusual about this, except that Chiako is 102 years old. She is not alone- there
are hundreds of centenarians who lead healthy lives like this in Okinawa. Okinawa is a
group of Japanese islands between Japan and Taiwan. Near a beach, there is a large stone
with the following proverb engraved on it: “At 70 you are still a child; at 80 you are just a
youth; and at 90, if the ancestors invite you into heaven, ask them to wait until you are
100, and then you might considered it.”
• Okinawans manage to stay slim in old age by eating a low-calorie diet which consists of
three quarters plant food and one quarter animal food. They eat seven servings of fruit
and vegetables every day and they stop eating when they are 80% full. They also keep
physically active the natural way by dancing, doing martial arts, walking, and gardening.
• In other words, they do the things they enjoy. Okinawans have developed a stress-
resistant personality. Nobody is in a hurry, timetables are non-existent, and there is
always tomorrow. Hundreds of people, both young and old, go to the beach every day to
watch the spectacular sunsets. In Okinawa there is always time to watch the sun set.
• As well as large extended families, Okinawans have strong networks of friends. When
someone is sick and does not come to work, a neighbor will always knock on their door to
find out how they are.
• There`s no magic pill. If you stay in shape, if you have good friends, a healthy diet, and a
stress-free lifestyle, you will live longer. It's as simple as that!
