Obtinerea acestei bauturi este destul de laborioasa, insa se poate face si casnic, dupa cum
vom vedea in continuare:
• intr-un vas cu un litru de apa clocotita se pun 2 lingurite de ceai negru, se acopera si se lasa
sa infuzeze vreme de 30 de minute, dupa care se strecoara si se amesteca bine cu 100 g zahar.
• ceaiul astfel obtinut se lasa sa se raceasca complet, pana ajunge la temperatura camerei,
dupa care se pune intr-un borcan cu gura larga.
• ceaiul cu zahar va fermenta imediat, dar se lasa sa stea 8-12 zile, dupa care se filtreaza.
Acest timp este necesar pentru ca microorganismele prietenoase din aceasta colonie sa aiba
timp sa consume zaharul si sa-l transforme in substante cu efecte vindecatoare.
• dupa trecerea celor 12 zile, se face filtrarea prin tifon, iar lichidul obtinut se trage in sticlute,
care se tin la rece (termenul de valabilitate este de 15 zile), in timp ce masa gelatinoasa
ramasa se foloseste pentru noi culturi.
Atunci cand preparam Kombucha, trebuie sa avem in vedere cateva lucruri esentiale: in
primul rand, toate vasele in care se face prepararea trebuie sa fie foarte curate, fara urma de
hrana, care ar putea strica aceasta cultura. De asemenea, macerarea nu trebuie facuta in locuri
neigienice, cu mirosuri grele (cum ar fi cel de prajeala) sau cu mult abur, intrucat altereaza
calitatea preparatului. Trebuie folosit numai ceaiul negru (Thea sinensis), intrucat aceasta
ciuperca nu creste in infuzia altor plante.
