REZUMATUL PROIECTULUI DE DIPLOM
The thesis contains data concerning the composition, the mineral addition and the
benefits of consuming fruits, of the obtaining technology of apple juices, and the distribution
of mineral elements in different gamuts of fruits: apples, pears and quinces, emanated from an
aboriginal area with old traditions in cultivation of this type of vegetables food products the
area of town Vrciorova, from county Cara-Severin. Data of the literature presented in the
documentation part disclose the fact, that the food importance of the fruits due to the content
in bioactive compounds, in wich the richness of the mineral elements, under the guise of
macro and microbioelements.
The experimental results obtained from the analisys of some macro and microelements
from the fruits assortments taken in the experiment such as: Renet of winter apples, Ionatan
apples, Citrone apples, gipsy apples, vasere pears, autumn pears and quinces; provides the fact
that these products have incresing contents of macroelements: K, Ca, Mg, Na and sizable
quantities of esential microelements: Fe, Mn, Zn, Cu and Ni. The average values of the
bioelements concentrations analised folow, in general, the next trend: K > Mg @ Ca > Na > Fe
> Zn > Mn > Cu. The cobalt, the chromium and the nickel ware signalized in extremely little
concentrations. The slug and the cadmium heavy metals with a high level of toxicity, hasnt
been identified, in the experimented conditions presented in the thesis.
Concerning the estimation of the mineral contribution of the fruits, in the
experimented conditions, the average values of the contribution with: Na, K, Ca, Mg, Fe, Zn,
Mn and Cu, provides the fact that the assorments of fruits could be taken by consideration like
an alternative source of suplimentation with mineral bioelements. For the macroelements, a
consume of 400 g fresh fruit (the equivalent of two apples or pears of medium size), brings a
grade of covering of the daily necessary recommended of 13,11% K- for men and women,
8,44% Mg women and 6,43% Mg mans, 2,51%Ca man and women, and 0,17%Na man
and women. The contribution of microelements, in the same conditions is easily more higher,
this is 13,00 % Fe - mans and 5,78% - women, 10% Mn women and 7,83% Mn mans,
6,67 % Cu for mans and women ( 3,63 % Cu- women, 2,64% -mans).
The covering grade with mineral bioelements of the mineral necessary from the daily
diet, in the experimentals conditions presented, follow the next offspring trends: K @ Fe > Mn
> Cu @ Mg > Zn @ Ca > Na for mans , and : K > Mn > Mg > Cu > Fe > Zn > Ca > Na for
women.
