Zahărul este un produs alimentar important, destinat
consumului uman şi în dependenţă de materia primă
utilizată la fabricarea lui, se clasifică în: a) zahăr din
sfeclă de zahăr; b) zahăr din trestie de zahăr.

În funcţie de metoda de fabricare, zahărul destinat
consumului uman, se clasifică după cum urmează: a) zahăr
cristal (tos); b) zahăr presat (rafinat);

indicatorii de calitate, se clasifică în patru categorii: a)
întîi – zahăr alb rafinat cu destinaţie alimentară; b) doi
– zahăr alb de calitate standard cu destinaţie
alimentară; c) trei – zahăr cu destinaţie alimentară sau
de materie primă pentru industria alimentară; d) patru –
zahăr cu destinaţie de materie primă pentru industria
alimentară. Zahărul cristal se fabrică cu dimensiunea

de la 0,2 pînă la 3,0 mm. Se acceptă abateri de la
dimensiunea specificată în mărime ce nu depăşeşte
5% din dimensiunile cristalelor. Zahărul presat, în
funcţie de indicatorii de calitate, se clasifică în trei
categorii: a) întîi; b) doi; c) trei.
Ambalarea zahărului
Zahărul cristal (tos), produs de industria alimentară, ca regulă, se
ambalează în saci noi confecţionaţi din in-jută-cînepă sau fire de
viscoză, ce corespund cerinţelor actelor normative în vigoare, cu
greutatea netă 50 kg, Zahărul cristal (tos) destinat păstrării de lungă
durată se ambalează în saci cu greutatea netă 50 kg, produşi din
pînză sau fire de viscoză, cu căptuşeală din polietilenă, grosimea
polietilenei fiind de cel puţin de 0,1 mm, dimensiunea de 109X59 cm
sau căptușeală din saci de hîrtie cu trei straturi. Gura căptuşelii din
polietilenă se sudează, iar căptuşeala din hîrtie se coase la maşina
de cusut. Sacii pentru ambalarea zahărului nu trebuie să aibă
mirosuri străine, pînza şi cusuturile să fie dense şi să nu permită
risipirea zăhărului. Zahărul presat (rafinat) se ambalează în pachete
cu greutatea 0,5 kg şi 1,0 kg. Pachetele cu zahăr rafinat se
ambalează în lăzi de lemn sau lăzi de carton gofrat cu greutatea de la
20 kg pînă la 25 kg.
 Indicatori de calitate
Producătorul sau importatorul de zahăr, în baza documentaţiei
tehnice, întocmeşte o declaraţie de conformitate, conform cerinţelor
stipulate în anexa nr. 3 al prezentei instrucţiuni, elaborată în corelaţie
cu Reglementările tehnice ”Zahăr. Producerea şi comercializarea” şi
aplică marca naţională de conformitate pe fiecare ambalaj de zahăr.
Modul de întocmire şi emitere a declaraţiei de conformitate se
efectuează, conform regulilor stabilite în cadrul Sistemului Naţional
de Asigurare a Conformităţii Produselor. Zahărul se plasează pe
piaţă însoţit de declaraţia de conformitate. Producătorul sau
importatorul de zahăr trebuie să aplice, sub marca naţională de
conformitate SM, numărul de identitate al organismului de certificare
desemnat, care a efectuat evaluarea respectivă. Verificarea
indicatorilor de calitate, siguranţei alimentare, marcării şi etichetării
se efectuează de către producător la fiecare lot în conformitate cu
prevederile stabilite de actele legislative şi normative în vigoare: a)
indicatorii organoleptici, fizico-chimici, masa netă şi corectitudinea
marcării; b) fracţia masică de umiditate, fracţia masică de substanţe
reducătoare; c) fracţia masică de zaharoză; d) coloraţia în soluţie; e)
valoarea nutritivă; f) conţinutul de elemente toxice şi microbiologice
se determină în conformitate cu periodicitatea stabilită de legislaţia în
vigoare..
