PREFAŢĂ

Lucrarea de faţă reuneşte într-un cadru unitar rezultatele cercetărilor


personale vizând carotenoidele din specii ale genului Cucurbita, conţinutul tematic
al cărţii înscriindu-se în preocupările actuale, de valorificare superioară a resurselor
vegetale. Lucrarea totalizează 184 pagini, conţinând 26 tabele în care sunt
centralizate datele obţinute ȋn urma determinărilor efectuate şi 62 figuri
reprezentănd cromatograme, scheme, histograme şi proceduri de lucru. care
facilitează înţelegerea materialului expus.
Ȋn capitolele 1 – 3 se realizează un studiu de literatură cuprinzȃnd detalii
botanice despre matricile investigate, date referitoare la compoziţia chimică a
acestora şi numeroase informaţii despre utilizările lor curente, fiind selectate cele
cu referire directă la clasa de substanţe vizată aici: carotenoidele. Ȋn capitolul 4 sunt
detalite metodele utilizate, cu referire atât la tehnicile de extracţie a carotenoidelor
cât şi la modul de analiză a acestora. Capitolul 5 include rezultatele unor studii care
pornesc de la elucidarea structurii carotenoidelor majore, finalizându-se cu date
referitoare la conţinutul de carotenoide din specii de Cucurbita cultivate în mod
tradiţional în Transilvania. Urmare a acestor studii a fost identificată o matrice
adecvată pentru obţinerea unui extract utilizabil în vederea colorării produselor

alimentare; este descris un procedeu de extracţie a carotenoidelor din sursa


identificată în vederea obţinerii unui extract utilizabil ca şi colorant alimentar.
În capitolul 6 sunt furnizate detalii referitoare la câteva sisteme
experimentale de colorare a unor produse alimentare, detalii puse într-un context
mai larg, în care este discutată stabilitatea carotenoidelor în diferite condiţii de
procesare; în acest capitol sunt discutate şi unele transformări biochimice ale
carotenoidelor, remarcate de în urma monitorizării procedurilor efectuate cu
ajutorul cromatografiei de lichide de înaltă performanţă. Capitolul 7 completează
gama de aplicaţii dezvoltate cu detalii referitoare la obţinerea unor produse extrem
de deficitare şi scumpe pe piaţa reactivilor: standardele de carotenoide. Concret,
sunt prezentate alternative de obţinere a luteinei, cucurbitaxantinei şi -
criptoxantinei. Lucrarea se încheie cu un set de concluzii şi cu o bibliografie care
evidenţiază o documentarea amplă, cuprinzând 250 referinţe bibliografice; ȋn
„Anexe” au fost incluse spectrele în vizibil ale carotenoidelor identificate.
