Ciocolata reprezinta o grupa speciala de produse zaharoase care se prepara din boabe
de cacao (unt de cacao), zahar , lapte , alune, nuci, etc, avnd are o valoare alimentara mai
mare ( 500-600 calorii/100gr) decat celelalte produse zaharoase. Pe langa substantele grase ,
hidrati de carbon si proteinele, care constituie baza alimentatiei, ciocolata mai contine si
mici cantitati de cofeina, acizi organici, printre care cel oxalic. Ciocolata neagra (amruie)
este cea mai sanatoasa, avand efecte benefice asupra presiunii arteriale. S-a ajuns la acest
rezultat dupa ce participantilor la experiment le-au fost oferite diferite tipuri de ciocolata:
ciocolata neagra, ciocolata cu lapte, si ciocolata alba, fiind mai apoi evaluati
Ciocolata amaruie se obtine prin prelucrarea untului de cacao, (produs obtinut din
boabele de cacao), a zaharului si masei de cacao.
n vederea realizrii analizei comparative a calitii produselor de tip ciocolat amruie,
se vor aborda apte produse, valorile caracteristicilor fiind extrase din cataloagele firmelor de
profil, aflate pe piata romaneasca, cat si pe piata externa intr-o perioada recenta. n vederea
realizrii analizei, se vor folosi urmatoarele metode de analiza:
1. metoda clasica de ordonare pe caracteristici;
2. metoda punctajului general;
3. metoda comparativ.
Cele apte modele de produse analizate sunt: ciocolata amruie Milka, ciocolata amruie
Wawel, ciocolata amruie Poiana, ciocolata amruie Heidi, ciocolata amruie Belgian, ciocolata
amruie Monteoro i ciocolata amruie Carrefour Bio.
